QUICK SALMON PATTIES
Healthy and quick - give these salmon patties a try. Add some homemade tartar sauce (1/4 c. light mayo, 1 T. pickle relish, dash lemon juice, and optional 1 t. horseradish) and some fresh corn on the cob.

Steps:
- Combine drained and flaked salmon with crushed crackers, egg substitute, Old Bay, and parsley.
- Form into 4 patties.
- Sprinkle with pepper.
- Add a small amount of oil to non-stick pan to coat, turn burner to medium.
- Add patties, saute until browned, approximately 2-3 minutes on each side.
- Garnish with lemon wedges and tartar sauce.
QUICK N' EASY SALMON PATTIES
I have used this recipe for many years and my family loves it, especially my husband. I think I got the recipe off of a crisco can when they still used paper wrapping on the cans.

Steps:
- Drain salmon; set aside 2 TBSP of the juice.
- In a medium mixing bowl, mix salmon, egg and onion until sticky.
- Stir in flour.
- Add baking powder to salmon juice and stir into salmon mixture.
- (Don't mix baking powder and juice and add until you are ready to start cooking the patties, otherwise it will become flat).
- Form into small patties and fry until golden brown (about 5 minutes) in hot crisco.
- Serve with tartar sauce (optional).
QUICK 'N EASY SALMON PATTIES WITH CAPER SAUCE

- 1. Drain salmon, reserving liquid. Remove skin, bone and flake. Set aside.2. In medium mixing bowl, combine salmon, 1/2 cup of the KELLOGG'S CORN FLAKES cereal, 1/4 cup salmon liquid, eggs, salt, pepper, parsley and the finely chopped onion. Mix thoroughly. Shape into 12 flat patties, 2 1/2-inches in diameter. Coat with remaining crumbs.3. In large fry pan or electric fry pan, place small amount of oil or shortening. Cook patties in hot oil on medium temperature, approximately 2 minutes on each side or until golden brown, turning only once. Serve hot with Caper Sauce. 4. To prepare Caper Sauce, combine all ingredients in small bowl, mixing well. Refrigerate.

QUICK AND TASTY SALMON PATTIES
I just love these salmon patties! I love using the Ritz Crackers because they add the salty sweetness to the patties and the added flavors just make them even better! You can serve these with a tartar sauce, ketchup or plain!

- Before you begin, start heating up the oil in a skillet, get your plate lined with paper towels and take off your rings cause you are about to get messy.
- In a large bowl, dump in your drained salmon, 2 eggs, crushed crackers and seasoning. Mix well and begin to make your patties. I usually make mine about the size of a hockey puck. I also like to go ahead and make all of the patties at once before I begin cooking them.
- Once you have the patties prepared, place each one carefully into the skillet and cook each side for about 6-8 minutes or until golden brown. Remove from skillet to the towel-lined plate to drain and there it is! Salmon patties are done!

In a small mixing bowl, combine baking powder and reserved juice stir into salmon mixture and form into 6 patties.
