This awesome pierogi casserole is a great side dish and perfect for potlucks. You can also add sliced, smoked sausage or kielbasa for a hearty main dish meal.

2 (16 ounce) boxes frozen pierogies, thawed ((see recipe notes))
1 tablespoon butter
1 large onion, sliced
4 ounces (1/2 brick) cream cheese, softened
1/2 cup sour cream
1 1/2 cups shredded cheddar cheese, divided
1/2 cup chicken broth
1/8 teaspoon black pepper

Steps:

  • Preheat oven to 375 degrees F. Spray a 2 quart casserole dish with nonstick cooking spray.
  • Melt butter in skillet over medium heat. Add onions and saute until softened, about 5 minutes. Remove from heat and set aside.
  • In a medium bowl, combine cream cheese, sour cream, 1 cup of the cheddar cheese, chicken broth and black pepper.
  • Spread out pierogies in casserole dish and top with onions. Toss lightly to combine. Spread cheese mixture over top.
  • Cover with foil and bake for 30 minutes or until heated through. Uncover, sprinkle with remaining cheese and bake an additional 5 minutes or until cheese is melted.

1 package (16 oz) frozen potato and onion pierogies
1 tablespoon water
7 oz kielbasa sausage, sliced
4 oz cream cheese (from 8-oz package), very softened
1/2 cup sour cream
1/2 cup Progresso™ chicken broth (from 32-oz carton)
1/8 teaspoon coarse ground black pepper
1 cup shredded Cheddar cheese (4 oz)
1/2 cup thinly diagonally sliced green onions

Steps:

  • Heat oven to 375°F. Spray12x8-inch (2-quart) glass baking dish with cooking spray.
  • Place frozen pierogies and water in medium microwave-safe bowl; cover with plastic wrap. Microwave on High 2 minutes; stir. Continue microwaving on High 1 1/2 to 2 minutes until thawed. Place pierogies evenly in casserole. Top with sausage.
  • In medium bowl, mix cream cheese, sour cream, chicken broth and pepper with whisk. Stir in 1/2 cup of the Cheddar cheese and 1/3 cup of the green onions (reserve remaining onions for topping).
  • Pour cream cheese mixture evenly over pierogies. Cover with foil; bake 22 to 27 minutes or until center is heated through and temperature reaches 165°F.
  • Uncover, and top with remaining cheese; bake 3 to 5 minutes or until cheese is melted. Sprinkle with reserved green onions.

5 medium (2-1/4" to 3" dia, raw)s potatoes, peeled and cubed
½ cup milk
½ cup butter, melted
½ pound bacon, diced
1 onion, chopped
6 cloves garlic, minced
½ (16 ounce) package lasagna noodles
2 cups shredded Cheddar cheese
salt and pepper to taste
1 (8 ounce) container sour cream
3 tablespoons chopped fresh chives

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the potatoes in a large pot with water to cover over high heat. Bring to a boil and cook until the potatoes are tender. Remove from heat, drain, then combine with the milk and 6 tablespoons of butter, mash and set aside.
  • Melt the remaining 2 tablespoons of the butter in a large skillet over medium high heat. Saute the bacon, onion and garlic in the butter for 5 to 10 minutes, or until the bacon is fully cooked.
  • Cook the lasagna noodles according to package directions and cool under running water.
  • Place 1/2 of the mashed potatoes into the bottom of a 9x13 inch baking dish. Top this with 1/3 of the cheese, followed by a layer of lasagna noodles. Repeat this with the remaining potatoes, another 1/3 of the cheese and a layer of noodles. Then arrange the bacon, onion and garlic over the noodles, then another layer of noodles, and finally top all with the remaining cheese. Season with salt and pepper to taste.
  • Bake, uncovered, at 350 degrees F (175 degrees C) for 30 to 45 minutes, or until the cheese is melted and bubbly. Serve with sour cream and chopped fresh chives.

½ pound bacon, finely chopped
3 large onions, diced
2 tablespoons butter
1 pound mushrooms, sliced
4 (1 pound) packages frozen potato and cheese filled pierogies
2 (10.75 ounce) cans condensed cream of mushroom soup
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray the bottom and sides of a lasagna-size casserole dish with cooking spray.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, 5 to 10 minutes. Transfer bacon to a paper towel-lined plate to drain. Cook and stir onion in hot bacon grease until golden, 5 to 10 minutes. Transfer onion to bacon and drain bacon grease from the skillet.
  • Melt butter in the same skillet over medium-high heat. Saute mushrooms in hot butter until golden and moisture evaporates, 5 to 10 minutes.

3/4 lb noodles, cooked and drained (lasagna noodles or wide egg noodles)
3/4 cup butter
3 cups instant mashed potatoes, prepared
16 slices American cheese
2 large onions, minced

Steps:

  • Cook noodles, drain.
  • Melt butter and saute the onions until tender, meanwhile cook mashed potatoes according to package.
  • *Steps1 and 2 should be done around the same time.
  • Place half of the cooked noodles in the bottom of a 13x9 casserole dish.
  • Layer with 8 slices of cheese, all potatoes, the remaining noodles and top with remaining 8 slices of cheese.

Allow 15 minutes to let the cassserole dish get to room temperature before popping it into the oven. Add more or less veggies; vary the veggies. 1 kg potato & cheese pierogi (cheddar)
1 1/2 cups baby carrots, cleaned
1 1/2 cups onions, chopped
2 banana peppers, chopped
2 jalapeno peppers, finely chopped (optional)
1 1/4 cups mushrooms, cleaned and sliced
1 teaspoon vegetable oil
1 1/2 cups broccoli florets, raw
1 cup cauliflower floret, raw
16 cherry tomatoes
2 cups cheddar cheese, shredded
salsa
sour cream
bacon bits (optional)

Steps:

  • Pop the perogies into boiling salted water; stir so they do not stick to the bottom of the pot; bring back to a boil and when they float to the top, add the carrots to the pot. Allow to cook for 5 minutes longer Drain carrots and perogies.
  • Meanwhile heat a skillet, add 1 tsp oil and saute the onions and mushrooms until the onions are translucent. Add the peppers and saute another two minutes.
  • Mix the perogies and onion mixture together.
  • Pour into a lightly oiled large casserole dish (9"x14"x3").
  • Arrange the tomatoes, broccoli, and cauliflower artistically on top of the perogies.
  • Sprinkle evenly with the cheese.
  • Cover and bake in a 350 degree fahrenheit oven for 30 minutes.
  • Uncover and bake a further 15 minutes, allowing the cheese to slightly brown.
  • Serve with salsa, sour cream and, if you wish, bacon bits. Just let everyone add their own at the table.
