3 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/2 teaspoon salt
1/2 cup butter, chilled
8 tablespoons vegetable shortening
1 cup buttermilk
1 cup mincemeat
1/4 cup powdered sugar (optional)

Steps:

  • Combine flour, granulated sugar and salt in large bowl; set aside.
  • Cut butter into 1-inch chunks.
  • Add butter and shortening to flour mixture.
  • Cut in with pastry blender or 2 knives until mixture resembles coarse crumbs.
  • Drizzle buttermilk over top; toss just until mixture comes together to form ball.
  • Turn out dough onto lightly floured work surface; fold in half and flatten to about 1/2 inch thick.
  • Knead about 8 times.
  • Divide dough in half; press each half into 1/2-inch-thick disc.
  • Wrap in plastic wrap and refrigerate at least 30 minutes.
  • Preheat oven to 350°F.
  • Lightly grease cookie sheets; set aside.
  • Let dough rest at room temperature 10 minutes.
  • Roll 1 dough disc into 8X12-inch rectangle on lightly floured work surface.
  • Cut into 24 (3-inch) squares.
  • Place heaping 1/2 teaspoon mincemeat in center of each square.
  • Fold opposite corners each about 2/3 of the way over filling, overlapping dough corners.
  • Place 2 inches apart on prepared cookie sheets.
  • Repeat with remaining dough.
  • Bake 20 minutes or until lightly browned.
  • Remove cookies or wire racks; cool completely.
  • Sprinkle pastries lightly with powdered sugar, if desired.

1 (15-ounce) package frozen pie crust refrigerated rolled
1/2 cup mincemeat prepared
1 tablespoon brandy (optional)
powdered sugar

Steps:

  • * "Make a windowed gift bag: cut out a diamond or square window from a brown lunch bag or colored gift bag. Tape a piece of clear cellophane inside. Fill with turnovers. Seal top of bag with a holiday sticker." Preheat oven to 425°. On a lightly floured surface, using one pastry round at a time, roll pastry into a 12-inch circle. Using a 2 1/2-inch round cutter, cut out 16 circles. Re-roll pastry and cut out 4 additional circles. Repeat with remaining pastry round.In a small bowl, mix mincemeat and brandy. Place 1/2 teaspoon of the mincemeat in center of each circle fold in half. With tines of a fork, press edges together. Place turnovers on ungreased baking sheets.Bake 10 to 12 minutes until lightly browned. Cool on wire racks. Roll in powdered sugar. Store in an airtight container in a cool place. 1 pound ground beef (80 percent lean)
1 tablespoon minced garlic (from 2 cloves)
1 large onion, halved and thinly sliced (3 cups)
2 tablespoons Worcestershire sauce
2 teaspoons Dijon mustard
Coarse salt and freshly ground pepper
6 ounces cheddar, shredded (2 cups)
1 sheet (12 ounces) frozen puff pastry, thawed
All-purpose flour, for dusting
1 large egg, lightly beaten
Roasted broccoli rabe or other green vegetable, for serving

Steps:

  • Heat a large nonstick skillet over high. Add beef, garlic, and onion; cook, stirring occasionally, until starting to brown, about 7 minutes. Stir in Worcestershire and Dijon; season with salt and pepper. Remove from heat and let cool completely. Stir in cheese.
  • Preheat oven to 425 degrees. Roll out pastry on a lightly floured surface to a 14-inch square. Cut into four 7-inch squares; place a quarter of beef mixture on each. Brush edges with egg, then fold one corner of each pie over, forming a triangle. Press edges to seal.
  • Place pies on a parchment-lined baking sheet. Brush tops with more egg. Cut 2 vents in each top; freeze 10 minutes. Bake until golden brown, about 20 minutes. Serve with broccoli rabe.

Louisiana Sweet-Dough Mincemeat Turnovers image

Yield Makes 4 turnovers

1 cup plus 2 tablespoons all-purpose flour
1/2 teaspoon double-acting baking powder
1/4 teaspoon salt
3 tablespoons unsalted butter, softened
3 tablespoons sugar
1/4 teaspoon vanilla extract
1 tablespoon beaten egg
2 tablespoons milk
4 tablespoons bottled mincemeat

Steps:

  • Preheat the oven to 375°F. In a bowl whisk together the flour, the baking powder, and the salt. In a bowl with an electric mixer cream together the butter and the sugar until the mixture is light and fluffy, beat in the vanilla and the egg, and beat in the flour mixture in batches alternately with the milk. Chill the dough, dusted with flour and wrapped in plastic wrap, in the freezer for 10 minutes.
  • Divide the dough into fourths and roll out 1 piece of the dough 1/8 inch thick on a well-floured surface, keeping the remaining pieces covered and chilled. Cut a 4-inch round from the dough, brush off any excess flour, and brush the edges with water. Put 1 tablespoon of the mincemeat in the center of the round, fold the dough over to enclose the mincemeat, and pinch the edges together to seal them. Make 3 more turnovers in the same manner with the remaining dough and mincemeat. Bake the turnovers on a buttered baking sheet in the middle of the oven for 15 minutes, or until the edges are golden.

4 cups all-purpose flour
1 tablespoon sugar
2 teaspoons salt
1-3/4 cups shortening
1/2 cup ice water
1 egg, lightly beaten
1 tablespoon white vinegar
FILLING:
2 pounds lean ground beef (90% lean)
1 cup diced carrots
2 medium potatoes, peeled and cut into 1/4-inch cubes
1 medium onion, chopped
1 to 2 teaspoons salt
1/4 teaspoon pepper
Half-and-half cream

Steps:

  • In a large bowl, combine flour, sugar and salt; cut in shortening until mixture resembles coarse crumbs. In a small bowl, combine the water, egg and vinegar. Add to shortening mixture, 1 tablespoon at a time, tossing lightly with a fork until mixture forms a ball. Cover and chill for 30 minutes., Meanwhile, combine the first six filling ingredients. Divide pastry into 15 equal portions. On a lightly floured surface, roll out one portion into a 6-1/2-in. circle. , Mound a heaping 1/3 cup filling on half of circle. Moisten edges with water; fold dough over filling and press edges with a fork to seal. Transfer to a greased baking sheet. Repeat with remaining pastry and filling. , Cut three slits in the top of each turnover; brush with cream. Bake at 375° for 35-40 minutes or until vegetables are tender and crust is golden brown.
