1 (32 ounce) can tomato sauce
1 (15 ounce) can chopped tomatoes
1 large onion, chopped
3 cloves garlic, mashed
1 red pepper, chopped
1/2 green pepper, chopped
1 lb ground beef or 1 lb chicken
1/4 cup chopped parsley
1 tablespoon dried basil
1 1/2 tablespoons oregano
3/4 teaspoon thyme
1 beef double bouillon cubes (Knorr)
salt and pepper
1 teaspoon sugar
1 tablespoon olive oil
1/2 cup red wine (optional)
1 lb spaghetti noodles, cooked according to package directions

Steps:

  • Heat olive oil in a shallow soup pot.
  • SauteĆ© garlic until golden, then add onions and peppers.
  • SauteĆ© until onions are starting to become translucent, then add beef, and season with salt and pepper.
  • Brown until cooked through (about 10-15 minutes).
  • Drain grease.
  • Add wine (if using) and allow to cook for a couple of minutes.
  • Add tomato sauce, tomatoes, boullion cube, parsley, oregano, thyme and basil, salt and pepper and sugar.
  • Stir to combine and bring to a boil.
  • Boil for about 1 minute then reduce heat to med-low and simmer 20 minutes.
  • Serve over spaghetti, top with parmesan cheese and serve with crusty french bread.

1 tablespoon olive oil
3 pounds ground chuck (80 percent lean)
1 medium yellow onion, diced small
3 carrots, shredded
2 cloves garlic, roughly chopped
Salt and pepper
2 cans (28 ounces each) whole peeled tomatoes, pureed in a blender
1 pound fresh or frozen gnocchi, cooked according to package instructions
1/4 cup grated Parmesan (1 ounce)
Fresh basil leaves (optional)

Steps:

  • In a large heavy pot, heat oil over high. Add meat and cook, breaking it up with a wooden spoon, until it begins to brown, about 5 minutes. Add onion, carrots, and garlic and cook until meat is browned and onion is soft, about 5 minutes. Season with salt and pepper, add tomato puree, and bring to a rapid simmer.
  • Cook, stirring occasionally, until liquid is slightly reduced, about 15 minutes. Season with salt and pepper; transfer 5 cups meat sauce to an airtight container, let cool, then refrigerate for Summer Beef-and-Rice Casserole. Serve remaining sauce over gnocchi, topped with Parmesan and basil, if desired.

1 tablespoon olive oil
1 medium onion, chopped
1 garlic clove, minced
1/2 pound ground pork
1/2 pound ground beef chuck
1 cup dry white wine
1 can (28 ounces) whole peeled tomatoes in juice, chopped
1/2 teaspoon dried oregano
1/4 teaspoon red-pepper flakes
18 ounces fresh fettuccine
Grated Parmesan, for serving (optional)

Steps:

  • Set a large pot of salted water to boil. In a large skillet, heat oil over medium-high. Add onion and garlic; season with salt and pepper. Cook, stirring occasionally, until onion softens, 3 to 4 minutes. Add pork and beef; cook, breaking meat up with a spoon, until no longer pink, 2 to 3 minutes. Add wine; cook until evaporated, about 7 minutes. Add tomatoes, oregano, and red-pepper flakes; cook until sauce is slightly thickened, 2 to 3 minutes.
  • Cook pasta in boiling water until al dente, according to package instructions. Drain, and return to pot; add meat sauce, and toss to coat. Serve immediately, topped with Parmesan, if desired.

3 tablespoons olive oil
2 carrots, peeled and finely chopped
1 stalk celery, finely chopped
1 large onion, peeled and finely chopped
1 1/2 pounds ground veal
1/2 pound ground pork
2 pinches Aleppo pepper or 1 pinch red pepper flakes (see note)
3 cloves garlic
1 bay leaf
Kosher salt and freshly ground black pepper to taste
1 cup dry white wine
1 cup peeled, seeded and diced plum tomatoes (about 5)
1 tablespoon tomato paste
3 tablespoons veal demi-glace
1/3 cup heavy cream
1 1/2 teaspoons sage
2 tablespoons chopped parsley

Steps:

  • In a large deep saute pan, heat the oil and add the carrots, celery and onion. Cook, stirring often, until the vegetables are soft, about 5 minutes. Add the veal, pork, Aleppo pepper, garlic and bay leaf and season lightly with salt and pepper. Cook, breaking the chunks of meat with a spatula, until the meat is no longer pink, about 10 minutes.
  • Add the wine, tomatoes and tomato paste and cook until most of the liquid has evaporated, about 20 minutes. Discard the bay leaf. Stir in the demi-glace, cream and sage and cook for 3 more minutes. Remove from the heat, season with salt and pepper and stir in the parsley. Serve over pasta with freshly grated Parmesan cheese.
