Steps:

  • Pop the banana chunks on a flat tray and cover well. Freeze for at least 1 hr, or until frozen through. When ready to eat throw the banana into a food processor and whizz until smooth with enough of the milk to achieve a creamy texture. Scoop into 4 bowls or glasses, then top with the sauce and nuts.

1/2 gallon ice cream (I like cookies 'n cream the best)
squeezable chocolate syrup
squeezable caramel ice cream topping (smuckers makes good ones)
crushed Heath candy bars (for topping) or crushed Skor candy bar (for topping)

Steps:

  • let ice cream soften slightly .
  • spread evenly in pie crust.
  • squeeze chocolate syrup over pie in a criss-cross motion .
  • do the same with the caramel syrup in oppostie direction .
  • sprinkle top of pie with the crushed candy topping .
  • freeze until ready to serve .
  • any combination of ice cream and toppings works wonderfully, this just happens to be my favorite combination !

  • In a Dutch oven, heat milk to 175°. Stir in sugar until dissolved; cool. Transfer to a 3-qt. freezer container. Stir in the coffee, cream and vanilla. Cover and freeze for 4-5 hours or until mixture is slushy. Beat with an electric mixer until smooth. Freeze until firm. Remove from the freezer 30 minutes before serving.

200g peanut butter (crunchy or smooth is fine)
175g golden caster sugar
75g dark chocolate , chopped into chunks
1 large egg
3 bananas , peeled, chopped and frozen in advance
2 tbsp double cream
1 tsp vanilla essence

Steps:

  • Heat oven to 180C/fan 160C/gas 4 and line two large baking sheets with baking parchment. Put the peanut butter, sugar, ¼ tsp fine table salt and chocolate chunks in a bowl and mix well with a wooden spoon. Crack in the egg and mix again until the mixture clumps together and forms a dough.
  • Break off chunks of dough (about the size of a cherry tomato) and arrange them, spaced apart, on the sheets. Press the cookies down with the back of a fork to squash them a little. (The cookies can be frozen for up to two months - to cook from frozen, add an extra 1-2 mins to the cooking time.) Bake for about 12 mins until golden around the edges and paler in the centre. Leave to cool on the trays for 5 mins.
  • Meanwhile, put the bananas, cream and vanilla in a food processor and blend until they make a thick ice cream. Scoop into balls with an ice cream scoop, and sandwich between the cookies. Serve immediately.

  • Preheat oven to 425°F. Roll out 1 pastry sheet on floured work surface to 1/8-inch thickness. Using 6-inch plate as aid, cut out 2 rounds. Steps:

  • Tip the frozen banana chunks into the food processor.

  • Crush corn flakes and peanuts with food processor, or whack at them with a spoon, or smash them with your bare hands like my husband does! :).

  • In a medium saucepan, off heat, whisk together egg yolks, sugar, and salt until blended. Gradually whisk in milk.
  • Cook over medium, stirring constantly with a wooden spoon, until custard thickens slightly and evenly coats back of spoon (it should hold a line drawn by your finger), 10 to 12 minutes.
  • Stir 1 vanilla bean (split and scraped) or 2 teaspoons pure vanilla extract into custard. If using bean, cover custard and let stand 30 minutes.

SUPER QUICK EXOTIC ROSE ICE CREAM

This ice cream is a real treat for all the senses. I wanted to make a special treat for dessert but didn't have a great deal of time so ended up creating this little beauty! Using store bought strawberry ice cream cuts your work & time in the kitchen in half & the strawberry really brings out the delicate rose flavours. If you're serving the ice cream straight away, you can add the meringue nuggets but if it's to stay in the freezer for a while, you may want to leave them out & make meringue nests to serve the ice cream in instead. Prep time includes freezing time. Please note that the recipes does state 10 tablespoons of rose water - this is because the rose water I used here is a very weak one from East End Foods. If you have a nice strong rose water, from an Arab manufacturer, please only use 4-5 tablespoons...or to taste.

3 cups strawberry ice cream
10 of tablespoons rose water (add 2 at a time, tasting each time)
1 egg white
1 ounce caster sugar
1 pinch cream of tartar
3 green cardamom pods, seeds only
2 tablespoons of chopped pistachios
rose petal (optional)

Steps:

  • Place the strawberry ice cream in a large freezable, airtight container & gently mix in the rose water. Take your cardamom seeds & roughly grind then add to the ice cream. Place in the freezer to chill whilst you make the meringues.
  • Preheat the oven to 150-160c. Whip the egg white until soft peak stage then whisk in the sugar & cream of tartar.
  • Spoon the meringue mix onto a baking sheet lined with aluminium foil. Use the back of the spoon to smooth the meringue into flat circles approx 1cm high & 8 cm wide. Place in the oven & cook for 25 minutes.
  • Turn the oven off but leave the meringues in the oven to dry out for approx 1 hour.
  • When the meringues have dried out & have been allowed to cool, chop them up & very gently fold them into the ice cream. Return the ice cream to the freezer for at least 20 minutes or until ready to serve.
  • To serve the ice cream, spoon into individual serving bowls, top with chopped pistachios & rose petals if using - enjoy!

2 cup non-fat milk **
1 cup fat free evaporated milk **
1 cup fat free sweetened condensed milk **
3/4 cup soft light cream cheese **
1 cardamom pod (or 1/2 tsp ground cardamom) **
1-1/2 tsp lemon juice **
crushed pistachio nuts for topping (optional)

Steps:

  • If using a cardamom pod, discard the pod husk and ground the cardamom to a powder. Add ground cardamom to milk. Bring milk and cardamom to a boil and continue to simmer for 10 minutes to infuse milk with cardamom flavor. Stir continuously. Stir in any film that develops on top of the milk. Let cool. Whip cream cheese until smooth. Gradually add in the evaporated milk and continue to stir cream cheese to combine both ingredients and keep the cream cheese smooth and not lumpy. Once the evaporated milk and cream cheese mixture is smooth and completely combined, add the condensed milk, the cardamom milk mixture, and the lemon juice. Stir well and put in the freezer until frozen. Serve like ice cream. The traditional Asian Indian dessert is also served with crushed pistachios on top.

8 peanut butter cookies (your favorite!)
1/2 cup grape jelly
2 pints vanilla ice cream

Steps:

  • Put the chopped peanuts on a small plate. Spread the flat side of each peanut butter cookie with jelly. Set the ice cream pints on their sides and use a serrated knife to slice right through the cartons, creating ice cream discs 1 to 2 inches thick. Place 1 disc (peel away the carton) on the jellied flat side of a cookie, then close the sandwich with another cookie, jelly side on the inside as well. Roll the exposed ice cream edge in the chopped peanuts. Repeat with the remaining ingredients. Serve immediately.

1/2 cup butter
3 eggs

  • In a small heavy gauge saucepan, combine brown sugar and butter.
