"This salad is one of my husband's favorites," writes Diane Wilson of Charlotte, North Carolina. "Just fill the pressure cooker, put the lid on, cook for a short time and a wonderful potato salad is done."

6 bacon strips, diced
7 unpeeled medium red potatoes, cubed
2 medium onions, thinly sliced
1/3 cup cider vinegar
1/3 cup water
2 tablespoons sugar
3 tablespoons minced fresh parsley, divided
1 to 2 teaspoons salt
1 teaspoon prepared mustard
1/4 teaspoon pepper

Steps:

  • In a pressure cooker, cook bacon over medium heat until crisp; drain. Add potatoes and onions. In a bowl, combine the vinegar, water, sugar, 2 tablespoons of parsley, salt, mustard and pepper; pour over potatoes., Close cover securely; place pressure regulator on vent pipe. Bring cooker to full pressure over high heat. Reduce heat to medium and cook for 5 minutes. (Pressure regulator should maintain a slow steady rocking motion or release of steam; adjust heat if needed.) Remove from the heat. , Immediately cool according to manufacturer's directions until pressure is completely reduced. Just before serving, sprinkle with remaining parsley.

1 quart water
2 to 3 teaspoons salt
1 package (16 ounces) frozen cubed hash brown potatoes
2 hard-boiled large eggs, chopped
1/4 cup mayonnaise
1/4 cup sour cream
1/4 cup chopped celery
3 tablespoons sweet pickle relish
2 tablespoons chopped green onions
1-1/2 teaspoons prepared mustard
1 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large saucepan, bring water and salt to a boil. Add the hash browns; cook for 3-4 minutes or until tender. Drain thoroughly. Combine remaining ingredients in a bowl; add hash browns and stir gently. Cover and chill until serving. Refrigerate leftovers.

No peeling, chopping, boiling, etc. Except for the potatoes I'm just making a guess on the amounts listed. I never measure but I had to put in something to get the recipe posted.

1 (2 lb) bag frozen hash browns or 1 (2 lb) bag O'Brien potatoes
1 cup mayonnaise
2 tablespoons mustard
1/4 cup onion, chopped
2 tablespoons pickle relish
4 hard-boiled eggs, chopped

Steps:

  • Poke some holes in the hash brown package with a fork; microwave on High 6 minutes.
  • Shake bag to "stir" potatoes; microwave another 6 minutes.
  • Open bag and pour into a bowl.
  • Season with salt and pepper to taste.
  • Add mayonnaise, mustard, chopped onion, pickle relish, chopped boiled eggs. (Use whatever combination your family likes in their potato salad.).
  • Refrigerate until ready to serve.

1 pkg. (32 oz.) ORE-IDA Diced Hash Brown Potatoes, thawed
1 pkg. (8 oz.) KRAFT Shredded Swiss Cheese
8 slices cooked OSCAR MAYER Bacon, crumbled, divided
6 green onions, sliced, divided
2 cups french-fried onions

Steps:

  • Heat oven to 350ºF.
  • Mix soup, sour cream and vinegar in large bowl until blended. Add hash browns, cheese, half the bacon and 1/2 cup green onions; mix lightly.

6 slices bacon
olive oil, as needed l (see directions)
1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
1/2 medium red bell pepper, finely diced
salt, to taste
pepper, to taste
1 1/2 tablespoons all-purpose flour
4 teaspoons sugar
1 teaspoon celery seed
1/3 cup white wine vinegar
2/3 cup water
1 egg, boiled, peeled, chopped
3 green onions, white and green, sliced

Steps:

  • In a heavy skillet fry the bacon until crisp. Remove and set aside to drain reserving 1 slice to make bacon curls. To make the bacon curl: Partially cook bacon, cut into 3rds and roll each piece into a curl. Secure with a toothpick, return to pan and continue to cook until crisp, turning as needed for even cooking. Allow to cool, remove toothpick and use as garnish. The other 5 slices can be cooled and then crumbled.
  • Measure the bacon fat. A total of 4 tablespoons fat or oil will be needed. If needed, add enough olive oil to bacon fat to equal 4 tablespoons. To the same skillet add 2 tablespoons bacon fat/oil and warm over medium heat. Add in the potatoes and red bell pepper. Season with salt and pepper to taste. Cover and cook for 15 minutes or until cooked through. If the potatoes begin to stick, stir in a small amount of water.
  • When done pour the potatoes and bell pepper into a bowl. Return the remaining 2 tablespoons reserved fat to the skillet and whisk in the flour, sugar and celery seed. Cook over medium heat until flour is lightly browned.
  • Stir in white wine vinegar and 2/3 cup water. Cook until mixture is thick and bubbly. Remove from heat and fold in diced potato mixture. Crumble bacon and add to pan along with chopped egg and sliced green onions. Toss gently to coat.
  • Garnish with bacon curls. Serve warm or room temperature.

3 -5 medium potatoes (about 4-6 oz per serving)
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • The number of potatoes simply depends upon the number of people you are feeding.
  • Wash and do not peel the potatoes. Microwave on high until mostly done. If using 2-3 small red potatoes for two servings this will be about 2 1/2 minutes.
  • While microwaving the potatoes fill a bowl with iced water. When potatoes are done drop them into the ice water and cut them lengthwise in half to expedite cooling.
  • When just cool enough to handle shred each half without peeling. Keep the peel against your palm while shredding and most of the peel will remain in your hand. Discard the peel and continue with recipe.
  • Place shredded potatoes in skillet sprayed with vegetable spray and cook over medium heat until well browned. Flip and repeat.
  • (I don't use salt and pepper, I had to include something else here or the system would not let me publish this. Add it if you would like.).
  • NOTE: If you want to add other items to these then shred them onto a plate first, add the other items and them place in fry pan. You might want to add some diced onion, bacon or bacon bits, shredded cheese, chives or whatever you might imagine.

3 medium peeled russet potatoes (blemish-free)
1 tablespoon grated white onion
1 teaspoon chopped fresh parsley
1/2 teaspoon fresh lemon juice
1/4 teaspoon coarse salt
1 dash white pepper
1 pinch freshly grated nutmeg
butter, for frying

Steps:

  • PEEL 3 medium russet potatoes.
  • GRATE potatoes using a medium grate on a hand-held grater, or use a food processor with a grate attachment.
  • SQUEEZE out excess water (but not too much); TOSS potatoes with 1/2 teaspoon fresh lemon juice.
  • ADD grated potatoes, 1 tablespoon grated white onion, 1 teaspoon chopped fresh parsley, 1/2 teaspoon fresh lemon juice, 1/4 teaspoon coarse salt (Kosher salt), 1 dash ground white pepper, 1 pinch freshly nutmeg; COMBINE potatoes with ingredients until well-combined.
  • HEAT enough butter in a on-stick skillet to fry potatoes, over moderate heat.
  • ADD desired amount of potato mixture into skillet with melted butter, forming into a patty shape without pressing too hard, using a spatula.
  • FRY potatoes slowly until golden and crisped on one side; TURN hash browns carefully with spatula: CONTINUE to fry until golden and crisped.
  • PLACE cooked hash browns on a plate with absorbent paper, covering to keep warm until served.
  • SERVE hash browns as they are, or add a sprinkle of salt or other seasoning if desired, or with ketchup and/or sour cream (my German friend serves hers with sour cream -- but the closest I had for my photo was creamed horseradish!).
  • ENJOY hash browns as a breakfast or dinner side dish.
