CROCKPOT GREEN BEANS AND POTATOES WITH HAM
This Crockpot green beans and potatoes with ham is very quick to put together and is so hearty and delicious.

Steps:
- Add the ham hock (or ham chunks) to the bottom of the crock pot, then pour in the green beans, water, and potato chunks. Don't cut the potatoes too large, or they will have a hard time getting done when everything else is ready. I like to go for 1 inch or smaller.
- Next, you will add the thyme, garlic powder, onion powder, black pepper, salt, cloves, and cinnamon. Mix together thoroughly, and then drizzle with a bit of oil (1-2 tablespoons) before covering.
- Cook on high for 4 hours or on low for 6-7 hours. This all depends on whether you'll be home or not and how quickly you need it to be done. Don't overcook, as the green beans will turn to mush. You do want the potatoes to get done, though.
- Once the green beans and potatoes are cooked, you will remove the ham hock and let it cool a bit before dicing up the ham. Turn the crockpot on the warm setting while cooling and cutting up the ham pieces. Add the ham pieces back in and serve.

- Melt butter and whisk in flour, salt, pepper, onion powder and garlic powder.
- Add milk, stirring constantly, until thickened.
- Remove from heat, add cheese and stir until melted.
- Put potatoes in greased 9×13 baking dish, top with green beans and then ham.
- Pour cheese sauce over all.
- Combine bread crumbs and butter; Sprinkle over top of casserole.
- Bake at 350° for 30 minutes.

- Put ham into a Dutch oven. Arrange potato halves, green beans, and onion slices around the ham. Pour enough water into the pot to cover the vegetables completely.
- Place a cover on the pot and bring the water to a boil, reduce heat to medium-low, and simmer mixture until potatoes are completely soft, about 55 minutes.
- Remove ham to a cutting board to slice to desired thickness; serve with vegetables.

SLOW COOKER GREEN BEANS, HAM AND POTATOES
I make this dish often; I have never really measured the ingredients, but can give you a reasonable approximation. Note: Freeze leftover cooking liquid, and then add to bean soup, ham or cabbage dishes, or use to cook dumplings in. It's delicious!

- Halve beans if they are large, place in a slow cooker with water to barely cover, and add onion and ham hocks. Cover, and cook on High until simmering. Reduce heat to Low, and cook for 2 to 3 hours, or until beans are crisp but not done.
- Add potatoes, and cook for another 45 minutes. While potatoes are cooking, remove ham hocks from slow cooker, and remove meat from bones. Chop or shred meat, and return to slow cooker. Season with garlic powder, onion powder, seasoning salt, bouillon, and pepper. Cook until potatoes are done, then adjust seasoning to taste.
- To serve, use a slotted spoon to put beans, potatoes, and ham into a serving dish with a little broth.

- In a large pot, fill with enough water to just cover ham hocks and bring to a boil. Cover and simmer 45 minutes. Add beans and sugar and continue cooking another 25 minutes. Add potatoes and salt and cook until potatoes are tender, about 20 minutes more. Remove hocks from pot and remove meat from the bone. Add meat back to the pot, add salt and pepper, to taste, and serve.
GREEN BEANS WITH POTATOES AND HAM
You can make the ham broth and shred the ham hocks a day ahead. The next day, reheat to simmering, and cook the potatoes and green beans.

- Combine ham hocks, onion, garlic, celery, thyme, bay leaf, chile, 3/4 teaspoon salt, and the water in a large pot. Bring to a boil over high heat. Reduce heat, and simmer, uncovered, 1 hour 30 minutes.
- Transfer ham hocks to a plate. Discard chile, and add potatoes to pot; simmer until just tender, 10 to 12 minutes.
- When ham hocks are cool enough to handle, pull meat off bones (discard bones), shred into bite-size pieces, and return to pot. Add green beans, and return to a simmer. Cover, and cook until beans are just tender, about 8 minutes. Season with pepper. Serve vegetables and meat with a slotted spoon; reserve broth for another use. If storing leftovers, store in broth.
QUICK & ECONOMICAL GREEN BEANS, HAM, POTATOES
I have made this many times the original way, with fresh green beans and potatoes. I came up with this method for a quick and delicious meal. It's as good as the original recipe.

- 1. In skillet melt a tablespoon of butter and brown the hamsteak on both sides. Cut in cubes.
- 2. In a large pot, put undrained cans of green beans, canned potatoes (drained), onion, and ham cubes. Add chicken bouillion cubes and pepper. Cover pot and simmer at least 30 minutes.
- 3. Note: Don't add salt until you taste, since the bouillion cubes are salty. I also add a tablespoon of butter to the pot while it simmers. Let simmer as long as possible, so that the beans get more tender and consume the flavor of the ham.
