I also found this recipe online. It was so delicious and was so quick and easy to make. This recipe is good for those with busy schedules who want a shortcut in time for cooking, but not a shortcut in flavor! So delicious!!!

1 pkg (3.4 oz) vanilla flavor instant pudding
1 c plus 2 tbsp. cold milk, divided
1 1/2 c thawed cool whip whipped topping
1 round yellow cake layer (8 or 9 inch)
1 square baker's unsweetened chocolate
1 Tbsp butter
3/4 c powdered sugar

Steps:

  • 1. BEAT pudding mix and 1 cup milk with whisk 2 min. Stir in COOL WHIP. Let stand 5 min. Meanwhile, cut cake horizontally into 2 layers with serrated knife.
  • 2. STACK cake layers on serving plate, spreading pudding mixture between layers.
  • 3. MICROWAVE chocolate and butter in microwaveable bowl on HIGH 1 min.; stir until chocolate is melted. Add sugar and remaining milk; mix well. Spread over cake. Refrigerate 1 hour.

How to make Quick & Easy Boston Cream Pie

1 - yellow cake mix, single layer size
1 - egg
- water
1/2 teaspoon(s) lemon extract
1 package(s) vanilla pudding
1/2 cup(s) milk
1 teaspoon(s) vanilla
1 can(s) chocolate frosting

Steps:

  • Prepare the cake mix using the egg, water and lemon extract, following label directions.
  • Pour into a greased and floured 8 inch round cake pan (9 inch is too large and causes cake to be too flat).
  • Bake at 350 degrees for time indicated on the cake package, or until the center of the cake springs back when lightly touched.
  • Cool cake in pan on rack for 10 minutes.
  • Remove from pan and cool completely.
  • Prepare pudding mix with milk and vanilla and cook according to package directions.
  • Cover with plastic wrap to prevent skin from forming on top and cool completely.
  • Split layer cake, fill with cooled vanilla pudding, put cake back together and then frost with enough chocolate frosting to cover the top.
  • Store in refrigerator.
