1 cup raw pumpkin seeds
1 tablespoon extra-virgin olive oil
Coarse salt
1/2 cup large unsweetened coconut flakes
1/2 cup whole almonds (toasted)
1/2 cup dried cranberries
1/4 cup candied ginger (cut into 1/4-inch pieces)

Steps:

  • Preheat oven to 375 degrees. Combine pumpkin seeds and olive oil on a rimmed baking sheet. Season with coarse salt. Toss to combine. Spread in a single layer. Toast, stirring halfway through, until golden, about 8 minutes
  • Place toasted pumpkin seeds, coconut flakes, almonds, dried cranberries, and candied ginger in a bowl. Mix to combine. Divide among jars, containers, or bags.

2 cups baby pumpkin seeds (pepitas)
1 cup slivered almonds
3/4 cup raw sunflower seeds
6 tablespoons pure Grade B maple syrup
Coarse salt
1 cup dried cherries or cranberries

Steps:

  • Preheat the oven to 300 degrees F. Line 2 baking sheets with parchment paper or silicone baking mats.
  • In a large bowl, toss the pumpkin seeds, almonds, and sunflower seeds and the syrup until evenly coated. Spread the nuts and seeds out, in an even single layer, on the lined baking sheets and season with salt to taste. Bake the nuts, stirring several times with spatula or wooden spoon, until just golden, about 20 minutes.
  • Cool the nuts completely on the pan, then add the cherries and toss to combine. Store cooled trail mix in an airtight container at room temperature.

1/4 cup sugar
1/4 cup brown sugar
1 egg
1 teaspoon vanilla
2/3 cup pumpkin puree
3/4 cup dried cranberries
1 3/4 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1/4 teaspoon allspice
1/4 teaspoon clove

Steps:

  • Preheat oven to 375°F.
  • Cream together the butter and the sugars.
  • Beat in the egg, pumpkin and vanilla.

1/4 cup canola oil
3/4 cup sugar
1-1/2 teaspoons vanilla extract

1 cup salted pumpkin seeds or pepitas, toasted
1/2 cup dried cranberries

Steps:

  • Preheat oven to 350°. In a large bowl, beat first five ingredients until well blended. In another bowl, whisk together flour, baking powder and salt. Add to egg mixture; mix just until moistened (dough will be sticky). Stir in pumpkin seeds and cranberries., Divide dough in half. On a baking sheet coated with cooking spray, shape each portion into a 12x2-in. rectangle using lightly floured hands. Bake until golden brown, 25-30 minutes., Carefully remove rectangles to wire racks; cool 10 minutes. Transfer to a cutting board. Using a serrated knife, cut diagonally into 3/4-in. slices.
