12 ounces frozen grilled chicken breast strips (about 3 cups)
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (6 ounces) tomato paste
2 tablespoons dry red wine or chicken broth
1 tablespoon olive oil
1-1/2 teaspoons Italian seasoning
1 garlic clove, minced
1/2 teaspoon sugar
1/3 cup shredded Parmesan cheese
1/3 cup shredded part-skim mozzarella cheese
Hot cooked pasta

Steps:

  • Heat a large skillet over medium heat. Add chicken strips; cook and stir 5-8 minutes or until heated through. Remove from pan., In same skillet, combine tomatoes, tomato paste, wine, oil, Italian seasoning, garlic and sugar; bring to a boil, stirring occasionally. Reduce heat; simmer, uncovered, 10-15 minutes to allow flavors to blend, stirring occasionally., Stir in chicken. Sprinkle with cheeses; cook, covered, 1-2 minutes longer or until cheese is melted. Serve with pasta.

1 pound frozen breaded boneless skinless chicken breast
2 cans diced fire-roasted tomatoes
1 tablespoon olive oil
6 garlic cloves (minced)
1 teaspoon minced fresh oregano (or 1/4 teaspoon dried)
1/8-1/4 teaspoon red pepper flakes
salt and pepper
2 cups water
1 1/2 cups low-sodium chicken broth
12 ounces penne
4 ounces shredded Italian cheese blend (1 cup)
1/4 cup chopped fresh basil

Steps:

  • Bake the chicken according to package instructions. Let cool slightly and slice crosswise into 1/2-inch-wide strips. Adjust oven rack to middle position and heat oven to 375/190°C.
  • Meanwhile, pulse the tomatoes in a food processor until coarsely ground and no large pieces remain, about 12 pulses. Cook oil, garlic, oregano, pepper flakes, and 1/4 teaspoon salt in 12-inch ovensafe skillet over medium-high heat until fragrant, about 1 minute. Stir in processed tomatoes, water, 1 cup broth, and pasta. Cover and cook at vigorous simmer, stirring often, until pasta is tender, about 15 minutes.
  • Stir in remaining 1/2 cup broth. Season with salt and pepper to taste. Scatter sliced chicken evenly over top and sprinkle with cheese. Transfer skillet to oven and bake until cheese has melted and chicken is crisp, 5-10 minutes. Sprinkle with basil and serve.

In this lighter version of chicken Parmesan I skip the pan-frying in oil and instead bake lightly-breaded chicken breasts in the oven, then top with sauce and cheese. My family's not big on lots of sauce and cheese, so I just use a little to flavor the dish. Feel free to add more if you like, but it's excellent as-is. Serve chicken over pasta with additional sauce.

½ cup water
1 egg, beaten
1 ½ cups bread crumbs
6 tablespoons grated Parmesan cheese, divided
1 tablespoon dried oregano
1 teaspoon dried basil
½ teaspoon dried thyme
½ teaspoon garlic powder
6 skinless, boneless chicken breast halves
2 cups spaghetti sauce
1 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Whisk water and egg together in a bowl until smooth. Combine bread crumbs, 2 tablespoons Parmesan cheese, oregano, basil, thyme, and garlic powder in a separate bowl.
  • Dip each chicken breast in egg mixture, allowing excess egg to drip back into bowl. Coat each chicken breast in bread crumb mixture, shaking off excess. Kid friendly, no fuss dinner using breaded chicken patties. Not a 5 star restaurant recipe, but quick and easy! Serve over spaghetti.

4 -6 frozen breaded chicken patties
spaghetti sauce
mozzarella cheese (or preferred cheese, can be shredded or slices work great!)
oil (I use extra virgin olive oil)

Steps:

  • Pan fry Chicken Patties on both sides until slightly golden/browned in oil. Cover a bit to cook through.
  • Spray baking dish with cooking spray, and add a drizzle of oil, add patties in single layer.
  • Spread with spaghetti sauce and then cheese.
  • Bake at 400, until cheese is melted. Can broil when almost melted to get slightly golden.
  • Serve over spaghetti!
