QUICK CAULIFLOWER CHEESE
Everyone's favourite side dish, using mature cheddar and a hint of onion for extra flavour - the perfect accompaniment to a roast

Steps:
- In a small bowl, mix the cheese with the breadcrumbs and parsley, and set aside. Put the cauliflower florets in a large saucepan, cover with water and a splash of milk (this stops the cauliflower smelling) and bring to the boil. Cook for 2-3 mins until tender, then drain.
- In a separate saucepan, pour in the milk, add the onion and some seasoning, bring to the boil, then take off the heat. In a small saucepan, make a roux by melting the butter slowly, then adding the flour, stirring to make a paste. While still over a low heat, add the boiled milk, discarding the onion. Using a whisk, beat the milk together with the roux and bring to the boil. Cook for 2 mins until the sauce is lovely and thick - make sure the heat is not too high, otherwise it will catch on the bottom and burn.
- Heat oven to 200C/180C fan/gas 6. Transfer the cooked cauliflower to a casserole dish, pour over the sauce and top with the cheese and breadcrumb mix. Bake in the oven for 20 mins until golden and bubbling.

CAULIFLOWER WITH QUICK CHEESE SAUCE
My boys aren't fond of "funny looking stuff" but they gobble this up every time I make it. Maybe they think I'm serving mashed potatoes. Anyway, this is quick and easy. Don't forget the paprika.

Steps:
- Cook cauliflower whole in salted water until tender.
- Drain and place in serving dish.
- Melt butter in top of double boiler.
- Add flour and mix well.
- Add remaining ingredients, except paprika.
- Cook and stir until thick.
- Pour sauce over cauliflower.
- Sprinkle with paprika.

Steps:
- Boil cauliflower and onion in enough salted water to cover, until they are just tender. (10 - 15 minutes) Be careful not to overcook. Drain well.
- Arrange the cauliflower and onion in a shallow ovenproof dish, and scatter over the chopped egg.
- Put the flour, curry powder and butter/margarine in a saucepan, and cook gently, stirring constantly, to a smooth paste. Add the milk gradually, stirring all the time, gradually bring to the boil, stirring well, until thickened and smooth.
- Stir in the thyme and seasoning and allow the sauce to simmer for a minute or two.
- Remove from the heat, and stir in about 3/4 of the cheese.
- Pour the sauce over the cauliflower, scatter over the croutons, and sprinkle with the remaining cheese.
- Brown under a hot grill until golden and serve. Delicious with thick crusty bread.

PEPPER JACK CHEESE CAULIFLOWER SOUP (QUICK)
I am posting this recipe so I remember it....to me, it's good and quick soup. You can adapt this recipe to many types of soup. In fact, my tomato soup that I make with V8 juice is very similar to this. I use the butter/onion/flour soup base for most of my soups. The seasonings change and, of course the other ingredients as well. This is my first posted recipe. Please let me know if there is anything wrong with it. I don't really measure, so the spices are a guess.

- Put the frozen veggies in a sauce pan with the water and cover on medium to high heat. Let them steam for as long as it takes to get them tender. Stir them around every once in awhile.
- While they are steaming, saute the onion in the butter with the spices until the onions are tender. Add the flour and saute just long enough to dissolve it. While you may be tempted to cut the butter way down, it makes a gravy that disperses flavor throughout the soup. To me, this is the key to a good soup base.
- When you think your veggies are done, pour your chicken broth into into your sauce pan with your veggies and bring to a boil.
- Add your onion/flour mixture to the sauce pan with the veggies and simmer for about 10 minutes.
- Finally add your cheese and milk. Keep over the heat just until cheese is melted. Make sure not to let your soup even get close to boiling again after the cheese is added otherwise it will break down the cheese.
