This sensational salsa is a colorful combination of lots of fresh-tasting flavors. My husband, son and I think it's great as a dip or with main-dish burritos or chimichangas. We love taste-testing my creations together.

Number Of Ingredients 14

2 cans (15 ounces each) black beans, rinsed and drained
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (10 ounces) diced tomatoes and green chilies, undrained
1 jar (7 ounces) roasted sweet red peppers, drained and diced
2 plum tomatoes, chopped
1 medium red onion, finely chopped
4 green onions, finely chopped
1/3 cup minced fresh cilantro
2 garlic cloves, minced
1/3 cup orange juice
1 teaspoon ground cumin
1 teaspoon grated orange zest
1/8 teaspoon coarsely ground pepper
Tortilla chips

Steps:

  • In a large bowl, combine the first 13 ingredients. Cover and refrigerate for at least 2 hours. Serve with tortilla chips.

1 (15 ounce) can black beans, rinsed and drained
1 (11 ounce) can shoepeg corn, drained
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
1 (4 ounce) can diced green chiles
2 teaspoons dried cilantro
2 teaspoons lemon-pepper seasoning
1 teaspoon ground cumin
1 teaspoon olive oil, or to taste

Steps:

  • Stir black beans, corn, tomatoes with green chile peppers, diced green chiles, cilantro, lemon-pepper seasoning, cumin, and olive oil together in a large bowl. Refrigerate until cold, about 30 minutes.

This is yummy with tortilla chips. It's very light for the diet. I usually make at Christmas gatherings too, with colored Tortilla chips.

1 can diced tomato
1 can ro-tel tomatoes and green chilies
1 can white corn or 1 can corn (not creamed)
1 can black beans, rinsed
onion
garlic
cilantro
parsley
1 (16 ounce) bottle fat-free Italian salad dressing or 1 (16 ounce) bottle zesty Italian dressing

Steps:

  • Drain tomatoes, Ro-Tel, corn and black beans.
  • Add any or all of the onion, garlic, cilantro and parsley.
  • Be creative; use your own favorites.
  • Mix together.
  • Add dressing, using less than the whole bottle until the amount suits you.

2 teaspoons olive oil
1 medium red onion, finely chopped
3 garlic cloves, minced
3 cups cooked or 2 (15.5-ounce) cans black beans, drained and rinsed
1 (14.5-ounce) can diced tomatoes with chiles, undrained
1 teaspoon ground cumin
1/2 teaspoon ground coriander
3 cups vegetable broth
Salt and black pepper
1 fresh ripe mango, peeled, pitted and chopped
3 tablespoons minced fresh cilantro
1 tablespoon fresh lime juice

Steps:

  • -Heat the oil in a large pot over medium heat. Add all but 2 tablespoons of the onion and cook until softened, about 5 minutes. Add the garlic and cook 1 minute longer. Stir in the beans, tomatoes, cumin, coriander, vegetable broth, and salt and pepper to taste. Bring to a boil, then reduce heat to medium and simmer until the flavors are blended, about 15 minutes. -While the soup is simmering combine the reserved 2 tablespoons onion in a bowl with the mango, cilantro, and lime juice. Mix well and set aside. -When ready to serve, ladle the soup into bowls and top with a spoonful of the salsa.
