2 tablespoons butter
6 slices bacon, diced
1 jalapeno, seeded and chopped
1 large onion, diced
1 large green bell pepper, diced
1 large red bell pepper, diced
1 large yellow bell pepper, diced
Four 28-ounce cans baked beans, drained
1/2 cup mustard
1/4 cup barbecue sauce
1/4 cup ketchup
Several dashes hot sauce

Steps:

  • Melt the butter in a saucepan and fry the bacon until almost cooked. Add the jalapenos, onions and bell peppers and saute for 5 minutes. Add the beans, mustard, barbecue sauce, ketchup and hot sauce, and heat through.

You can put this all together through step two a day ahead. Cover and refrigerate. The next day, just plan on baking for 50 minutes or so.

6 slices bacon, cut into 3/4 inch pieces
2 onions, peeled and chopped (1 pound)
3 (28 ounce) cans boston-style baked beans
1/2 cup catsup
2 tablespoons firmly packed brown sugar
1 tablespoon dry mustard

Steps:

  • In 6-quart pan over medium-high heat, stir bacon often until browned and crisp, 6 to 8 minutes.
  • Remove to paper towel and drain all but 1 1/2 tablespoons fat in pan.
  • Add onions to pan and stir often until they begin to brown and stick to bottom of pan, 7 to 9 minutes.
  • Add beans and their liquid, catsup, brown sugar, dry mustard,and cooked bacon; mix well.
  • Pour into a shallow 3-quart casserole.
  • Bake beans, uncovered, in a 350°F oven until they are bubbling in the center, 30 to 40 minutes.
  • Serve hot.

I converted my mum's amazing baked bean recipe for the Instant Pot®. I normally have to wait for over 40 minutes as it cooks in the oven, but I love it so much I converted the recipe to cook in the Instant Pot!

8 slices bacon, chopped
2 (15 ounce) cans baked beans with pork
½ cup ketchup
6 tablespoons brown sugar
½ teaspoon dry mustard powder

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add bacon and cook until browned and crispy but not burned, about 6 minutes. Transfer bacon to a baking sheet lined with paper towels. Allow grease to drain.
  • Pour off some liquid from the beans, clearing at least 1 inch from the top of the can, but leaving some liquid. Add beans and remaining liquid, ketchup, brown sugar, and mustard to the Instant Pot®. Mix in bacon. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 3 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.

  • In a large saucepan, cook bacon and onion until bacon is crisp and onion is tender. Drain drippings. Add all remaining ingredients; simmer 10 minutes.

From Australian Super Food Ideas May 2007. Low GI, great breakfast or brunch or light supper. They recommend to make a double batch and freeze for later use eg as jacket potato topping. 9th November 2008 UPDATE made this today and have made changes to timing and serving size, I have upped to 5 serves based on that I got 5 cups of 250ml, weighing 200gram each. I've increased the prep time but then my knife skills are slow especially on a day of pain. UPDATE June 2010 - To make vegetarian omit the bacon and if you want try other canned beans (though white light coloured ones work best) and herbs. You could use dried beans but you would need to cook these first which doesn't make the recipe quick but very cheap to make.

3 slices bacon (rashers rindless, chopped)
1 small brown onion (brown small, finely chopped)
2 garlic cloves (crushed or minced)
1 teaspoon hot paprika (hot)
400 g diced tomatoes (canned diced)
2 teaspoons brown sugar
1 tablespoon tomato paste
2 (400 g) borlotti beans (canned, drained and rinsed)
4 English muffins (wholegrain recommended)
1 tablespoon butter (softened)
2 tablespoons flat leaf parsley (flat leaf leaves)

Steps:

  • Heat oil in a deep non-stick frying pan over medium heat.
  • Add bacon and cook for 4 to 5 minutes or until crisp. Remove bacon from pan using a slotted spoon and set aside.
  • Add onion to frying pan, cook stirring for 3 minutes or until onion is tender and light golden, add garlic and paprika continue to cook stirring for 1 minute.
  • Return bacon to frying pan and add the tomatoes, sugar, tomato paste and beans. Cook stirring often for 5 minutes or until heated through.
  • Season with salt and pepper.
  • Split muffins and toast. Spread with butter.
  • Place on serving plates and spoon baked beans over the muffins and sprinkle with parsley.

  • Adjust oven rack to lower-middle position and heat oven to 325 degrees. Fry bacon in large, deep sauté pan skillet until bacon has partially cooked and released about 1/4 cup drippings. Remove bacon from pan and drain on paper towels. Add onions and peppers to drippings in pan and sauté until tender, about 5 minutes. Add beans and remaining ingredients bring to a simmer. (If skillet is not large enough, add beans and heat to a simmer then transfer to a large bowl and stir in remaining ingredients).
