5 Sweet Potatoes (I'm using 5 medium sized potatoes because I'm making two sweet potato pies. )
1 stick of unsalted butter
2 large eggs
1 cup of sugar
1 cup of whole milk
1/2 teaspoon of ground cinnamon

Steps:

  • First, began by washing your potatoes.
  • Then, put them in a large pot to boil on high heat for about 30 minutes or fork tender.
  • After your sweet potatoes have boiled, and they are fork tender set them aside in a bowl.
  • Allow your potatoes to cool a bit before you begin to peel them.
  • After you've peeled your sweet potatoes, place them in a separate bowl.
  • Chop your 1 stick of unsalted butter into chunks and add them to your sweet potatoes. The unsalted butter should melt over the potatoes, because they are still warm.
  • Next, add in your 1 cup of sugar, 1/2 teaspoon of cinnamon, and a 1 tablespoon of vanilla or lemon extract.
  • Then, add in your 1 cup of whole milk, and 2 eggs.
  • Using a mixer, mix all of your ingredients together.
  • When you've finished use a large wooden spoon to ensure, you have no lumps in your pie mixture.
  • For your store bought pie crusts, cut about 4-5 slits in your pie crust, so the crust remains flat. Place the pie crusts in the oven on 325 degrees for about 10 minutes. This will ensure that the bottom of your pie crust will be done.
  • Remove the pie crusts from the oven and allow them to cool. Then, begin to pour your pie mixture into your crust.
  • Use your wooden spoon to smooth out any lumps.
  • Next, place your pie or pies in the oven on 325 degrees for about 45 minutes or until the sweet potato pies are firm to the touch.
  • After you remove your pies from the oven you can set them aside and allow them to cool.

This recipe was passed down to me from my best friend's mother who would cook the absolutely best sweet potato pies. After asking many times she finally wrote it down for me. 3 large sweet potatoes
1 cup butter (such as Land O'Lakes®), melted
5 eggs, beaten
1 (12 fluid ounce) can evaporated milk (such as PET®)
1 cup white sugar, or to taste
1 tablespoon all-purpose flour
1 teaspoon vanilla extract
½ teaspoon ground nutmeg
½ teaspoon baking powder
½ teaspoon lemon juice
3 pie shells, thawed

Steps:

  • Place sweet potatoes into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, 40 to 50 minutes. Drain water, peel sweet potatoes, and mash in a bowl.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Mix butter and eggs together in a bowl until smooth; stir into mashed sweet potatoes. Mix milk, sugar, flour, vanilla extract, nutmeg, baking powder, and lemon juice into sweet potato mixture; pour into the 3 pie shells.
  • Bake in the preheated oven for 10 minutes. Lower oven temperature to 350 degrees F (175 degrees C) and continue to bake until a toothpick inserted in the center of a pie comes out clean, about 40 minutes more. 1 (1 pound) sweet potato
½ cup butter, softened
1 cup white sugar
½ cup milk
2 eggs
½ teaspoon ground nutmeg
½ teaspoon ground cinnamon
1 teaspoon vanilla extract
1 (9 inch) unbaked pie crust

Steps:

  • Boil sweet potato whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potato, and remove the skin.
  • Break apart sweet potato in a bowl. Add butter, and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth. Pour filling into an unbaked pie crust.
  • Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until knife inserted in center comes out clean. Pie will puff up like a souffle, and then will sink down as it cools.

2 pounds sweet potatoes
1 disk Carla's Classic Pie Dough, fitted into a deep-dish pie plate and frozen, recipe follows
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
1/4 teaspoon freshly grated nutmeg
1/2 teaspoon salt
5 tablespoons unsalted butter, softened
1/2 cup packed light brown sugar, plus more if needed
1 cup evaporated milk
2 large eggs
1 tablespoon sugar
1/2 teaspoon table salt
2 1/4 cups all-purpose flour, plus more for rolling
1 cup (8 ounces) cold unsalted butter, cut into 1/2-inch cubes

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the sweet potatoes on a foil-lined half-sheet pan. Bake, turning once, until very tender, 1 1/2 to 2 hours. When cool enough to handle, take the sweet potatoes out of their jackets and scrape the flesh into a 1-quart measuring cup. You should have 2 1/2 cups packed sweet potato.
  • Raise the oven temperature to 425 degrees F.
  • Line the frozen dough with foil and fill with pie weights. Bake until dry and set, about 25 minutes. Remove the foil with the weights and bake the dough until golden brown, about 5 minutes longer. Let cool completely, then place on a half-sheet pan.
  • Transfer the sweet potato to a large bowl and add the cinnamon, ginger, allspice, nutmeg, salt, butter, brown sugar, and the evaporated milk. Beat with a heavy whisk until smooth.   • Wrap each disk tightly in plastic wrap and chill until firm, at least 30 minutes or up to 3 days. You can freeze the dough for up to 3 months. Thaw overnight in the refrigerator before rolling.

¼ cup buttermilk
1 teaspoon vanilla extract
1 teaspoon lemon extract
3 pies frozen prepared pie crust, unbaked

Steps:

  • Cook the sweet potatoes in a large pot of boiling water until fork-tender, about 25-30 minutes. Drain and let cool completely.
  • Preheat the oven to 365˚F (185˚C).
  • Peel the sweet potatoes, then transfer to a large bowl and mash thoroughly with an electric hand mixer or fork.
  • Add the melted butter, sugar, nutmeg, cinnamon, and salt. Beat to combine, then scrape down the sides of the bowl with a rubber spatula. Add the eggs, 1 at a time, beating to incorporate each addition. Add the self-rising flour, buttermilk, vanilla, and lemon extract, and beat to combine.
