2 eggs
1 egg yolk
1 cup milk
1 teaspoon vanilla extract
2 tablespoons flour
1 teaspoon salt
2 cups packed brown sugar
1 unbaked 9-inch pie crust
1 cup light whipping cream
2 cups heavy cream

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Whisk the eggs and the egg yolk in a bowl until frothy. Add the milk and vanilla; beat well. Slowly stir in the flour, salt, and brown sugar. Pour the mixture into the pie crust.
  • Whisk together the light whipping cream and the heavy cream in a separate bowl; chill in refrigerator.
  • Bake the pie in the preheated oven for 10 minutes. Lower the temperature setting to 350 degrees F (175 degrees C). Bake until the center is set, another 35 to 45 minutes. Allow to cool on a rack. Serve at room temperature on a plate in a pool of the chilled cream mixture.

Pastry Dough
Pie weights or raw rice for weighting shell
1 cup granulated maple sugar*
1/4 cup all-purpose flour
1 1/2 cups heavy cream
Accompaniment: whipped cream

Steps:

  • On a lightly floured surface with a floured rolling pin roll out dough into a 14-inch round (about 1/8 inch thick). Fit dough into an 11-inch tart pan with a removable fluted rim and trim flush with rim. Chill shell until firm, about 30 minutes.
  • Preheat oven to 425°F.
  • Lightly prick bottom of shell all over with a fork and line shell with foil. Fill foil with pie weights or rice and bake shell in middle of oven 15 minutes. Carefully remove weights or rice and foil and bake shell until golden, about 8 minutes more. Cool shell in pan on a rack. Shell may be made 1 day ahead and kept in pan, covered, at room temperature.
  • Reduce temperature to 350°F.
  • In a bowl whisk together maple sugar and flour. Add cream and whisk until smooth. Pour filling into shell and bake in middle of oven 45 minutes, or until fling is set. Cool pie to warm in pan on rack and remove rim.
  • Serve pie warm or at room temperature with whipped cream.

Many of the most important historic sites surround the base of the building, Atop Le Concorde is a revolving restaurant called L'Astral. It offers guests some of the more spectacular views of Quebec.

1/4 cup maple syrup
2 tablespoons butter
1/2 cup heavy cream
1/2 cup milk
1 cup maple sugar or 1 cup light brown sugar
1/2 cup all-purpose flour
pie dough, for an 8-inch pie including lattice top

Steps:

  • Preheat the oven to 375°F.
  • In a heavy saucepan, bring the syrup and butter to a boil, stirring constantly.
  • Add the cream and milk, stir, add the sugar and flour. Keep stirring and bring to a boil. Lower heat slightly so that the mixture does not boil over, but continue to simmer. Stir and cook until mixture thickens substantially, about 10 minutes.
  • On a lightly floured surface, roll out the pie dough. Line an 8-inch pie pan with dough. Pour the filling mixture into the pie shell. Cover with lattice strips. Crimp edges to seal. Bake for 30 minutes or until crust is golden brown, but do not over bake. Remove pie and cool to room temperature.

6 tbsp. all-purpose flour
1 1/2 cups of packed brown sugar
1/4 butter or hard margarine melted
pinch of salt
3 large eggs fork beaten
1 1/2 cups of maple syrup
1 1/2 tsp vanilla
1 unbaked 9 inch pie shell

Steps:

  • 1. Combine flour and sugar in a large bowl.
  • 2. Stir in next 5 ingredients, in order given. Combine well after each addition.
  • 3. Pour into pie shell.
  • 4. Bake in a 350F oven for about 1 hour until top is browned and a knife inserted in centre comes out clean.
  • 5. Let stand at room temperature to cool completely before slicing.
  • 6. Serves: 8-10
  • 7. My Note: Before baking, place pie plate on a cookie sheet to catch any spills. It makes for easier clean up later.

6 tablespoons flour
6 tablespoons butter (doesn't work well with marg.)
1 1/2 cups evaporated milk

Steps:

  • Whisk in a double boiler until smooth while bringing to a boil (should take about 20 minutes).
  • Then pour into your best/fave. 9-inch pie crust and bake at 350-400°F for 20 - 30 minute.

Store-bought pie dough or homemade pâte sucrée, fitted into a standard pie or tart pan and baked for 15 minutes at 375F
1 cup maple or light brown sugar
1/4 all-purpose flour
1/4 cup pure maple syrup
3/4 cup heavy cream

Steps:

  • Gently whisk together 1 cup maple or light brown sugar and 1/4 cup all-purpose flour until the mixture is smooth. the sugar-flour mixture is ready for the wet ingredients when it is smooth, with only a few, small sugar lumps. Once the flour sugar mixture is smooth, add the maple syrup and the heavy cream. Whisk the mixture together until it is completely smooth. The filling will be a watery consistency. When the maple-cream filling is smooth, pour it into the baked pastry shell.Bake the pie for 40 minutes at 350F (325F for dark metal pans). The sweet-as-candy result will be a delicious Canadian maple sugar pie. This recipe makes 12-14 petite servings - great for a party!

2 cups packed brown sugar
1 cup heavy whipping cream
½ cup chopped walnuts
1 recipe pastry for a 9 inch single crust pie

Steps:

  • Line a 9 inch pie plate with pastry. Trim and flute, but do not prick bottom.
  • Combine the brown sugar and cream in a small saucepan. Bring to a boil over low heat. Cook stirring slowly for 10 minutes, or until thickened. Remove from heat, and stir in 1/2 chopped nuts. Cool. Pour filling into prepared pie shell.
  • Bake at 375 degrees F (190 degrees C) for 30 to 35 minutes. Remove pie from oven, and cool. Filling will set when cold.
