1 large onion, chopped
2 tablespoons minced fresh gingerroot
2 cartons (32 ounces each) chicken stock
2 cans (15 ounces each) pumpkin
1 teaspoon salt
3/4 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon pepper
2 cups light coconut milk
Optional toppings: Sour cream, pepitas and minced fresh parsley

Steps:

  • In a large saucepan, heat butter over medium-high heat; saute onion and ginger until tender. Add stock, pumpkin and seasonings; whisk until blended. Bring to a boil. Reduce heat; simmer, covered, until flavors are blended, about 15 minutes., Puree soup using an immersion blender, or cool slightly and puree soup in batches in a blender; return to pan. Stir in coconut milk; heat through. Serve with toppings as desired.

1 cup chopped onions
1 clove garlic, minced
3 cups vegetable broth
1 teaspoon curry powder

1 cup light coconut milk

Steps:

  • Heat the coconut oil in a deep pot over medium-high heat. Stir in the onions and garlic; cook until the onions are translucent, about 5 minutes. Mix in the vegetable broth, curry powder, salt, coriander, and red pepper flakes. Cook and stir until the mixture comes to a gentle boil, about 10 minutes. Cover, and boil 15 to 20 minutes more, stirring occasionally. Whisk in the pumpkin and coconut milk, and cook another 5 minutes.
  • Pour the soup into a blender, filling only half way and working in batches if necessary; process until smooth. Return to a pot, and reheat briefly over medium heat before serving.

1 teaspoon yellow curry powder
2 1/4 cups store-bought or homemade pumpkin puree
2 1/2 cups chicken stock
13 1/2 ounces canned unsweetened coconut milk
Kosher salt and freshly ground black pepper
Sour cream, for serving
Pumpkin seeds, for serving
Lime wedges, for serving (optional)

Steps:

  • Melt the butter in a medium saute pan over medium-low heat. Add the onions, garlic and curry powder and cook, stirring occasionally, until the onions are translucent, about 10 minutes.
  • Combine the onion mixture, pumpkin puree and chicken stock in a blender until smooth.
  • Transfer the soup to a large pot, whisk in the coconut milk and cook over medium heat, stirring occasionally, until it warmed through, about 10 minutes. Taste the soup and season with the salt and pepper.

1 pound calabaza pumpkin, seeded, peeled, and cut into chunks
1 small onion, minced
3 garlic cloves, minced
1 ají dulce pepper, seeded and minced
1 teaspoon dark brown sugar
½ teaspoon ground cumin
2 cups coconut milk
1 cup chicken broth or vegetable broth
Salt and freshly ground black pepper
2 tablespoons chopped fresh cilantro

Steps:

  • Heat the coconut oil in a large saucepan over medium heat. Add the pumpkin, stir well, and cook, covered, for 15 minutes.
  • Add the onion, garlic, and ají dulce and stir well. Sauté until the onion becomes translucent, 3 to 5 minutes, then add the brown sugar and cumin. Mix well. Cook until the sugar melts, 2 to 3 minutes.
  • Stir in the coconut milk and broth. Bring to a simmer and cook, uncovered, until the pumpkin is very soft, about 15 minutes.
  • Using an immersion blender, blend the soup into a smooth purée. Alternatively, remove the solids with a slotted spoon and place in a blender or food processor. Purée until smooth and return to the pan.
  • Bring back to a simmer and cook gently for 5 minutes so the flavors combine. Season with salt and black pepper to taste. Serve hot, garnished with the cilantro.

I modified another Allrecipes pumpkin soup recipe past recognition and decided to add it here to share. It has a little bit of a kick to it from the chili powder, and the orange juice and pumpkin pie spice really bring out the flavors. It was originally based on 'Daddy's Pumpkin Soup.' I think some lemon juice or orange zest would do as well for the orange juice.

Pumpkin soup is an Australian favourite, but I sometimes find it a bit bland. This recipe adds a little something extra, without overpowering the pumpkin flavour. You can garnish this with some coriander leaves (AKA cilantro). Can be served hot or cold. Note: if you like to make LOTS of soup, you'll want to double this. It really does make only about 4 serves. It looks like a lot of pumpkin, but it cooks down to nothing.

600 g diced butternut pumpkin (You'll need a 1 kg pumpkin)
1 large onion, chopped
1 tablespoon oil
2 teaspoons minced garlic

400 ml vegetable stock (good quality)
150 ml coconut milk
1 tablespoon lemon juice
1 tablespoon tomato paste
1 teaspoon sugar

Steps:

  • Saute pumpkin, garlic, ginger and onion lightly in vegetable oil.
  • Add stock (it should just cover the pumpkin). Bring to boil and cook gently for 15 minutes.
  • Let cool slightly and puree in blender or food processor, or use your stick blender straight in the pot.

Number Of Ingredients 10

¼ block of organic creamed coconut
1 cup organic red lentils
1 ½ litres of veggie stock
¼ of a pumpkin or sweet potato cut into cubes
2 red onions chopped
a large bunch of organic silver beet or baby spinach leaves
4 cloves garlic finely chopped
2 Tbsp freshly grated ginger, or more
to taste
Celtic sea salt and pepper to taste

Steps:

  • 1. In a large saucepan, dissolve the creamed coconut with some filtered water until melted. 2. Throw in the garlic, onions, pumpkin/sweet potato, and lentils with a pinch of Celtic sea salt and stir until coated. 3. Add in the vegetable stock and bring to the boil. Simmer on a medium flame for about 40 minutes until the lentils are cooked through. The soup should be quite thick and the vegetables should have broken down. You could mash further with a stick blender, but it is often not necessary. Now stir through the greens, and squeeze in the desired amount of fresh grated ginger. Cook for a further 5 minutes until the greens are just wilted and cooked.

A good way to change up pumpkin soup! Great for those who like a good bit of spice but can be adjusted to taste. Even my boyfriend who does not like pumpkin enjoyed this one! Depending on the level of heat you want, you can increase or decrease the amount of heat in the dish.

1 (2 pound) pumpkin, peeled and cubed
2 tablespoons Thai red curry paste
1 red chile pepper, seeded and minced
2 ½ cups water, or as needed
1 ½ (14 ounce) cans low-fat coconut milk
6 sprigs fresh basil

Steps:

  • Combine pumpkin, curry paste, and chile pepper in a large soup pot over medium-high heat. Cook until pumpkin begins to soften, about 5 minutes. Add enough water to cover completely. Bring to a boil and cook until soft, about 30 minutes.
  • Puree soup with an immersion blender until smooth. Pour in coconut milk and serve with fresh basil leaves.

6 cups pumpkin, peeled and cubed
2 cups vegetable stock (or water)
1/2 inch ginger, fresh, peeled
1 tablespoon lemongrass, chopped
2 scallions, white parts only, finely sliced
2 cups coconut cream
1 1/3 teaspoons salt
1/4 teaspoon white pepper
1 lime, freshly squeezed (or lemon juice)
2 kaffir lime leaves, fresh (or very finely shredded zest of 1 small fresh lime)

Steps:

  • In a saucepan, combine the pumpkin, stock or water, ginger, and lemongrass. Cover, bring to a boil, reduce the heat to medium-low, and simmer until the pumpkin is very tender, about 12 minutes. Add the scallions and cook briefly.
  • Transfer the contents of the saucepan to a blender or food processor and process until the soup is partially puréed. Pour in half of the coconut cream and process until smooth.
  • Rinse the saucepan and pour the purée into it. Add half of the remaining coconut cream. Season with salt and pepper and heat through without allowing the soup to boil. Taste and adjust the seasoning and squeeze in lime or lemon juice.
  • If using the kaffir lime leaves, fold them in half and, using a sharp knife, trim away the hard central rib. Cut the leaves into threadlike shreds. Ladle the soup into bowls, add the remaining coconut cream, forming a swirl on top of each bowl, and garnish with the lime leaf or zest.

1 pie pumpkin, halved and seeded
¾ cup coconut water, or to taste
2 tablespoons butter
1 tablespoon yellow curry powder
⅛ teaspoon ground ginger, or more to taste
⅛ teaspoon red chile powder, or to taste
1 dash ground nutmeg
salt and ground black pepper to taste
¼ cup milk, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place pumpkin halves on baking sheet.
  • Bake in preheated oven until pumpkin is soft and easily pierced with a fork, 30 to 40 minutes.
  • Scoop pumpkin flesh into a blender; add coconut water and blend until smooth, 1 to 2 minutes.
  • Pour pumpkin mixture into a saucepan and bring to a simmer over low heat; stir in butter, curry powder, ground ginger, chile powder, ground nutmeg, salt, and ground pepper. Thin soup with milk to reach desired consistency. Cook and stir soup until heated through, about 5 minutes.

If you don't have time for this, rest assured that it will still taste great (just try to save some leftovers so you can see what I mean).

2 tablespoons vegetable oil
2 medium yellow onions, peeled and chopped
2 garlic cloves, peeled and chopped
10 spring onions, white and pale green parts only, sliced
2 lbs pumpkin flesh, peeled and cut into 2-inch cubes (you can substitute any flavorful winter squash such as butternut, kabocha, hubbard, etc)
2 large carrots, peeled and thickly sliced
1 -2 dash scotch bonnet peppers (optional) or 1 -2 dash habanero sauce (optional)
5 -6 cups chicken stock or 5 -6 cups vegetable stock
1 (14 ounce) can coconut milk
salt & freshly ground black pepper
2 tablespoons sugar (optional, you might find your squash makes the soup sweet enough)
1/3 cup dark rum (to taste)
additional sliced scallions or chives, for garnish

Steps:

  • In a large, heavy-bottomed soup pot, heat the oil over medium heat. Add the onions and cook, stirring frequently, until just beginning to caramelize, about 20 minutes.
  • Stir in the garlic and scallions and cook for another minute or two until softened.
  • Add the cubed pumpkin, the carrots, scotch bonnet pepper, stock and coconut milk. Bring to a boil and turn down the heat to medium-low. Simmer, uncovered, for about 35-40 minutes, or until the vegetables are completely soft and the liquid has reduced slightly.
  • Remove from the heat and puree, either in a blender (in batches, and with the lid clamped down tight), or with an immersion (stick) blender. Return to the pot, stir in the sugar, salt and pepper to taste, and the rum. Cover and set aside for several hours or overnight (in which case, refrigerate).
  • Just before serving, reheat the soup to boiling and let boil vigorously for 2-3 minutes.
  • Serve hot with a garnish of thinly-sliced scallions or chives.

Steps:

  • Combine pumpkin, potatoes, creamed corn, 2 cans cream of coconut, soy milk, nutritional yeast, turmeric, paprika, thyme, cumin, chili powder, salt, and pepper in a large pot. Pour in enough boiling water to cover the vegetables. Bring to a boil over medium-high heat. Reduce heat and simmer until pumpkin and potatoes are soft, 15 to 20 minutes.
  • Puree soup using an immersion blender adding 1/2 cup cream of coconut if you want the soup creamier.
