½ cup butter
3 large eggs
1 ½ cups pumpkin puree
1 cup milk
½ cup cake flour
2 teaspoons baking powder
1 pinch ground cinnamon, or as desired

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Grease a 9-inch square baking dish.
  • Beat sugar, butter, and eggs together in a bowl using an electric mixer until smooth and creamy; add pumpkin and mix well. Beat milk, flour, and baking powder into pumpkin mixture until smooth; pour into the prepared baking dish and sprinkle cinnamon over the top.
  • Bake in the preheated oven until set in the middle, 45 minutes to 1 hour.

5 tablespoons unsalted butter, melted, plus more for buttering the pan
One and one-half 15-ounce cans pumpkin puree
One 14-ounce can sweetened condensed milk
1 cup milk
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
4 large eggs
1 loaf brioche bread, sliced
Two 8-ounce packages cream cheese, at room temperature
1 cup powdered sugar
1 cup chopped pecans
1/2 cup packed brown sugar
Pinch of salt
Maple syrup, for drizzling

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter a 12-by-8-inch baking pan.
  • In a large bowl, combine the pumpkin puree, condensed milk, regular milk, cinnamon, vanilla, eggs and 1 tablespoon of the melted butter and whisk until combined. Grab a slice of bread and submerge it in the pumpkin custard. Soak with enough custard to cover both sides of the bread, then transfer it to the prepared baking pan. Repeat the process until the bottom of the pan is covered.
  • In a stand mixer with the whisk attachment, mix the cream cheese and powdered sugar until combined and the cream cheese is clump free; the mixture should be soft and spreadable.
  • Spread enough of the cream cheese mixture on top of the bread in the pan to cover all the slices. Soak the remaining bread slices in the remaining custard. Layer them on top of the cream cheese mixture. Combine the pecans, brown sugar and remaining 4 tablespoons melted butter in a bowl. Add a pinch of salt. Top the casserole with the pecan mixture.
  • Bake until the top is golden, 40 to 45 minutes. Serve with a drizzle of maple syrup.

One 1-pound loaf Italian-style bread, sliced 1/2-inch-thick
4 large eggs

2 cups whole milk
1 cup heavy cream
1 cup pumpkin pie puree (not pure pumpkin puree)

Steps:

  • For the casserole: Generously grease a 3-quart casserole dish with the butter. Shingle the bread slices, in rows, over the bottom of the dish so that they are overlapping slightly (like rows of slanted books).
  • Whisk the eggs, sugar, pumpkin pie spice, vanilla and salt in large bowl until smooth and well combined. Add the milk and cream to the bowl and whisk until well combined. Pour the egg mixture evenly over the bread slices, making sure that all slices are well coated. Cover the casserole dish with plastic wrap and refrigerate for at least 8 hours or up to overnight.
  • Position an oven rack in the center of the oven, and preheat to 350 degrees F.
  • For the brown sugar crumble: Whisk together the brown sugar, flour and salt in a medium bowl. Add the butter and work it into the dry ingredients with your fingers (or a pastry cutter) until the mixture is crumbly with pea-sized bits of butter. Mix in the pecans.
  • To assemble: Give the bread slices in the casserole dish a gentle push into the custard, dollop the pumpkin pie puree over the bread slices and sprinkle the crumble evenly over the top.
  • Bake the casserole until the top is puffed and browned and a knife inserted in the center comes out clean, about 45 minutes (it will still be a little jiggly when the casserole dish is tapped but it will continue to cook a bit out of the oven). Check the casserole about halfway through the baking time and tent it with foil if the topping is browning too quickly. Let rest 10 minutes before serving.

One 4-pound boneless pork loin roast
2 tablespoons unsalted butter, plus more for the baking dish
2/3 cup packed light brown sugar

2 1/2 pounds sweet potatoes (about 5)
1 lemon, sliced and seeded

Steps:

  • For the pork: In a small bowl, mix together the brown sugar, pumpkin pie spice, garlic powder, onion powder, mustard powder, 1 tablespoon salt and 1 teaspoon black pepper. Stir in the olive oil to combine. Rub onto the pork on all sides. Put in an 8-by-12-inch rimmed baking dish and let sit at room temperature for 1 hour.
  • Position the racks in the top and bottom of a large countertop oven and preheat to 350 degrees F.
  • Transfer the baking dish to the bottom rack of the oven. Cook until the pork is caramel colored and reaches an internal temperature of 145 degrees F, about 60 minutes.
  • For the sweet potatoes: While the pork roasts, bring a large pot of water to a boil. Melt the butter in a medium saucepan and stir in the brown sugar, 1/2 cup water and a pinch of salt. Bring to a boil, then lower the heat to medium and simmer, stirring, until reduced and thickened, about 10 minutes.
  • Meanwhile, peel the potatoes and cut them lengthwise, then lengthwise again, making long quarters. Cut the quarters into 1-inch pieces. Boil the potatoes until they give a bit when poked with a fork, about 5 minutes.
  • Drain the potatoes and arrange in a single layer in a buttered 3-quart baking dish. Pour the syrup on top, making sure it covers the potatoes. Lay the lemon slices on top and bake on the top rack for 35 minutes. The potatoes are done when they are fork tender.
  • When the pork and sweet potatoes are both done, remove them from the oven and increase the temperature to 400 degrees F. Transfer the pork to a carving board and pour the sauce from the bottom of the pan over it. Let rest while finishing the sweet potatoes, 10 to 15 minutes.
  • Remove and discard the lemon slices from the sweet potato casserole and stir in the pecans. Top the casserole with the marshmallows and return to the oven on the bottom rack. Cook until the marshmallows puff and turn brown, about 10 more minutes.

As for me, even before I became enthused with eating and cooking healthfully I was never a particularly enthusiastic fan of mushroom soup dumped on top of green beans. Steps:

  • Preheat oven to 350 degrees F.

  • Wash pumpkin and cut a lid in the top.
  • Scrape out seeds and clean.
  • Combine remaining ingredients in a mixing bowl and toss gently.
  • Spoon mixture into pumpkin shell.
  • Replace lid and place pumpkin on lightly greased cookie sheet.
  • Bake for 1 hour and 15 minutes.
  • Remove from oven.
  • Top with sour cream if desired.
  • May be served hot or cold.

1 medium pumpkin
1 medium onion,chopped
2 lb ground beef
2 Tbsp soy sauce, light
2 Tbsp light brown sugar
4 oz mushroom pieces
1 can(s) cream of chicken soup or cream of celery
2 c cooked rice
8 oz celery, chopped

Steps:

  • 1. carve an opening at the top of your pumpkin and save the top. Scoop out the seeds and pulp while your doing that start to Brown hamburger and onion. Drain well.
  • 2. Mix in remaining ingredients Put pumpkin on cookie sheet. Fill pumpkin with meat mixture.
  • 3. Place in oven and bake pumpkin with lid on for 1 hour at 350 degrees F or until pumpkin is tender. Ladle out at the table directly from the pumpkin

PUMPKIN PIE BREAKFAST CASSEROLE

2 packages of Cinnamon Rolls in a tube, with frosting.
3 eggs
1/2 cup heavy whipping cream
1 cup canned pumpkin puree
1 tsp pumpkin pie spice

Steps:

  • Preheat oven to 350*F Open both packages of cinnamon rolls and lay out individual cinnamon rolls on a cutting board. Set icing containers aside for later. Quarter slice each cinnamon roll. Spray a 9x13 casserole dish with cooking spray. Place quartered cinnamon rolls into casserole dish. In a bowl beat eggs, heavy whipping cream, pumpkin puree and pumpkin pie spice. Pour mixture over cinnamon rolls. Bake for 35 minutes or until cooked through. Remove from oven and let sit for 5 minutes. Remove lids from each icing container and warm in microwave for 15 seconds. Drizzle icing over casserole and serve.

1 loaf (1 pound) cinnamon-raisin bread
1 package (8 ounces) reduced-fat cream cheese, cut into 3/4-inch cubes
8 large eggs
1 can (12 ounces) evaporated milk
1 cup canned pumpkin
2/3 cup packed brown sugar
1/2 cup fat-free milk
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup chopped pecans
Confectioners' sugar, optional
Maple syrup, warmed, optional

Steps:

  • Cut each slice of bread into quarters. Arrange half of the bread in a greased 13x9-in. baking dish; layer with cubed cream cheese and remaining bread, pressing down slightly., In a large bowl, whisk eggs, evaporated milk, pumpkin, brown sugar, fat-free milk, spices and salt. Pour over top. Refrigerate, covered, overnight., Preheat oven to 350°. Remove casserole from refrigerator while oven heats. Bake, covered, 40 minutes. Uncover; sprinkle with pecans. Bake, uncovered, 25-30 minutes or until lightly browned and a knife inserted in center comes out clean., Let stand 5-10 minutes before serving. If desired, dust with confectioners' sugar and serve with maple syrup.

2 cups Pumpkin Puree
10 ounce 2 Cans Diced Tomatoes with Green Chilis, Divided
1 tablespoon Chili Powder
2 teaspoons Ground Cumin
1 teaspoon Chipotle Powder, optional
1/2 teaspoon Kosher Salt
2-3 cups Diced Cooked Chicken
10 Corn Tortillas
2 cups Grated Monterey Jack Cheese
1 Chooped Green onions & cilantro

Steps:

  • 1. Preheat oven to 375. Position rack in center. Spray a 9x13 inch baking dish with cooking spray. In large bowl, stir together pumpkin, 1 can tomatoes, chili powder, cumin, chipotle powder and salt. Gently fold in chicken. Layer half of tortillas on bottom of dish. Top with pumpkin mixture, then remaining tortialls, then second can of tomatoes (juices drained), then cheese.
  • 2. Bake, uncovered, until cheese is browned in spots and filling bubbles, about 40-50 minutes. Top with green onions and cilantro. Cool 10 mn. before serving.

SWEET POTATO PUMPKIN CASSEROLE

I love this recipe because it is low in fat and sugar. Cinnamon lowers sugar in the recipe and in our bodies. Ginger is good for digestion or stomach ails. It's a nice Thanksgiving recipe.

1 Tbsp honey or imitation honey(ada)

dash black pepper
1/4 c low calorie cranberry juice
1/8 c freshly squeezed orange juice
1/2 tsp pumpkin pie spice
1/8 c fresh lemon juice
1/2 c pecans, chopped

Steps:

  • 1. Spray casserole dish with nonfat nonstick cooking spray. Combine benecol, brown sugar, pepper, cinnamon, ginger, pumpkin pie spice and honey in mixing bowl. Mix mashed sweet potatoes and pumpkin puree into bowl mixture. Add lemon juice, orange juice, cranberry juice and pecans. Place in casserole dish. Bake at 350 degrees for 30 minutes.
