SLOW COOKER BBQ PEACH PULLED CHICKEN

This BBQ peach pulled chicken is made in the slow cooker for a simple sweet and easy meal.

2 pounds boneless chicken thighs
1/2 cup BBQ sauce
1 clove garlic, minced
2 tablespoons apple cider vinegar
1/2 teaspoon smoked paprika
1/2 teaspoon chili powder
2 peaches, chopped
cooked rice for serving
chopped cilantro for serving

Steps:

  • Place the chicken thighs in the slow cooker.
  • Combine the BBQ sauce, garlic, vinegar and spices in a small bowl and stir together.
  • Lightly smash the chopped peaches with the back of a fork or potato masher.
  • Add the peaches to the slow cooker and pour the BBQ sauce mixture on top.
  • Toss the chicken to coat in the mixture.
  • Cook on high for 3 hours.
  • Remove the chicken from the slow cooker and shred. To do this quickly, I add mine to my stand mixer with the paddle attachment and mix for 30 seconds on low speed until shredded.
  • Return the chicken to the slow cooker, toss with the leftover sauce/juice.
  • Serve over rice and garnish with cilantro.

1 tablespoon cider vinegar
1 tablespoon honey
2 teaspoons chopped fresh cilantro
3/4 cup ketchup
3/4 cup cider vinegar
1/2 cup coarsely chopped sweet onion
1/3 cup firmly packed brown sugar
1 (1 ounce) package McCormick® Grill Mates® Smokin' Sweet Tea Marinade
1 1/2 lbs boneless skinless chicken breasts
1 tablespoon vegetable oil
8 crusty rolls

Steps:

  • For the Peach Salsa, mix the first four ingredients in medium bowl until well blended. Cover. Refrigerate until ready to serve.
  • Mix ketchup, 3/4 cups cider vinegar, onion, brown sugar and Marinade Mix in medium saucepan until well blended. Bring to boil. Reduce heat to low; simmer 10 minutes or until onion is tender. Set aside. Brush chicken lightly with oil.
  • Grill chicken over medium heat 6 to 8 minutes per side or until cooked through, turning occasionally.
  • Shred chicken using 2 forks. Add to saucepan; toss to coat well. Serve shredded chicken mixture on rolls topped with Peach Salsa.

4 boneless skinless chicken breasts (1 1/4 lb)
4 whole wheat burger buns, split
1/4 cup black bean dip
1/4 cup Muir Glen™ organic garlic cilantro salsa
1/2 cup shredded lettuce

Steps:

  • Set oven control to broil. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick.
  • Place chicken on rack in broiler pan. Broil with tops 4 to 6 inches from heat 15 to 20 minutes, turning once (and adding buns, cut sides up, the last 3 to 4 minutes), until chicken is no longer pink in center and buns are lightly toasted.

1/4 cup reduced-sodium chicken broth

1 (5 ounce) skinless, boneless chicken breast half
1 teaspoon olive oil
1 teaspoon balsamic vinegar
1 tablespoon brown sugar
1 cup diced fresh peaches
1 cup diced tomato
½ cup sliced, seedless grapes
½ cup diced red onion
1 tablespoon lemon juice
1 tablespoon honey

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Rub chicken breast with olive oil and vinegar, then rub brown sugar onto the chicken until you've got a nice glaze coat.

1 large peach, peeled and chopped
1/2 cup chopped sweet onion
1/4 cup salsa
1 small jalapeno pepper, seeded and minced
2 tablespoons finely chopped fresh cilantro
2 tablespoons lime juice
1 cup chicken broth
1/2 cup uncooked long grain rice
2 boneless skinless chicken breast halves (5 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil

Steps:

  • Mix first six ingredients. In a small saucepan, bring broth and 1/4 cup peach mixture to a boil. Stir in rice; return to a boil. Reduce heat; simmer, covered, until liquid is absorbed and rice is tender, 15-18 minutes., Meanwhile, sprinkle chicken with salt and pepper. In a skillet, heat oil over medium heat; brown chicken on both sides. Add remaining peach mixture; bring to a boil. Reduce heat; simmer, covered, until a thermometer inserted in chicken reads 165°, 7-9 minutes. Serve with rice.
