EASY WINTER FRESH FRUIT SALAD
Steps:
- Place the fruit in a serving bowl. (If using pears, because they sometimes darken faster than apples, I like to toss them with a light squeeze of lemon juice before adding to the salad.)
- Whisk together the dressing ingredients and pour over the fruit and toss to combine.
- The fruit salad can be made a couple hours ahead of time - keep in mind that depending on what type of fruit is used, the colors may seep into each other as the salad sits.

LIGHT AND LEMONY FRUIT SALAD/DESSERT
DD#2 needed a quick, light "something" to take to a picnic an hour after she got home from work. I remembered reading a salad recipe with a package of pudding added so I opened the cupboard and started draining and dumping. She came home with an empty bowl and requested I make more for home. That's a good sign I think! (Cooking time is for refrigeration)

Steps:
- In serving bowl, dump can of undrained pineapple.
- Pour pudding mix over and mix into juices.
- Set aside for 5 minutes to slightly set.
- Meanwhile drain oranges and cherries, patting dry if necessary.
- Mix into pineapple mixture along with marshmallows.
- Gently fold in cool whip.
- Refrigerate at least 30 minutes.

- In a saucepan, combine sugar and cornstarch. Add pineapple juice, orange juice and lemon juice. Cook and stir over medium heat until thickened and bubbly; cook and stir 1 minute longer. Remove from the heat; set aside.
- In a bowl, combine pineapple chunks, oranges, apples and bananas. Pour warm sauce over the fruit; stir gently to coat.

I get compliments on this fruit salad wherever I take it. It is super easy to make and a great dish to bring to a potluck or family party. Kids love it too. Everyone asks "what's in the sauce"? The secret ingredient is the vanilla pudding mix.

- Drain pineapple and oranges, reserving juices in a 2-cup measuring cup; set fruit aside. Add enough water to juices to measure 1-1/2 cups. In a saucepan, whisk the juices and pudding mix. Cook and stir over medium heat until mixture comes to a full boil. Cool to room temperature, stirring occasionally., Fold in the strawberries, cherries and reserved pineapple and oranges. Cover and refrigerate. Just before serving, fold in bananas.
