PUFF PASTRY BAKED BRIE WITH PROSCIUTTO DI PARMA AND CRANBERRIES



Puff Pastry Baked Brie with Prosciutto di Parma and Cranberries image

A deceptively easy and (obviously) delicious puff pastry baked brie, stuffed with Prosciutto di Parma and cranberry sauce.

1 sheet frozen puff pastry (thawed and lightly rolled out)
1/3 cup cranberry sauce or chutney
150 grams (5 oz) Prosciutto di Parma (torn in small pieces)
1 550 g (19 oz) wheel of brie
1 egg beaten with 1 tbsp water

Steps:

  • Place pastry on a parchment-lined baking sheet. Spread cranberry sauce in a circle in centre of pastry. Scatter torn Prosciutto di Parma over cranberry sauce, then position the brie on top. Fold the corners of the pastry over the brie to cover it, then use the parchment paper to help you press the pastry snugly into the round shape. Freeze for 15 minutes while you preheat the oven to 400ºF.
  • Just before baking, flip the brie over so the folded edges are underneath (it's easier to do this once chilled). Brush pastry all over with egg wash (or use a paper towel to dab it on). Bake for 25 minutes, or until crust is beautifully golden brown. Let stand 15 minutes at room temperature before cutting into it. The cheese will be melty and irresistible, but won't run out like hot lava.

One 14-ounce can jellied cranberry sauce
One 9-ounce wheel Brie
One 2.75-ounce package white mini toasts
1/4 pound sliced prosciutto, cut into 1/2-inch strips

Steps:

  • Unmold the cranberry sauce from the can, and slice into 1/4-inch-thick rounds. Trim the rounds into 1-inch squares.
  • Remove the outer rind from the wheel of Brie, leaving the top and bottom rind intact. Cut across into 3/4-inch-thick slices, then cut the slices into 1-inch pieces.
  • Put Brie squares on mini toasts and top with pieces of cranberry sauce, then wrap in prosciutto and secure with decorative toothpicks. Serve at room temperature.

Top slices of baguette with Brie and broil. Then add honey and prosciutto for a creamy, sweet and savory toast.

1 baguette, sliced diagonally into 1/4-inch slices (about 40 slices)
8 ounces Brie cheese
2 tablespoons honey
4 ounces thinly sliced prosciutto, cut crosswise into 1/3-inch-wide ribbons (about 6 slices),
Finely chopped fresh thyme leaves, for serving (optional)

Steps:

  • Preheat the broiler. Line a baking sheet with foil.
  • Arrange the baguette slices on the prepared baking sheet. Cut the Brie into 1/4-inch-thick slices and put 1 slice on each piece of baguette. Broil until the cheese is melted, 1 to 2 minutes.
  • Drizzle the toasts with the honey and then top with some prosciutto and a sprinkle of thyme leaves if using.

2 tubes crescent dough
1 cup cranberry sauce
1 wheel brie cheese, cut into 12 wedges
1 large egg, beaten
1 teaspoon flaky sea salt
1 teaspoon fresh thyme leaf

Steps:

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Arrange the crescent roll triangles on the prepared baking sheet with the points sticking out, overlapping the bases to form an 8-inch (20 cm) circle.
  • Spoon the cranberry sauce onto the bases of the crescent dough triangles and top with the brie wedges. Fold the pointed ends of the dough over the cranberry sauce and brie and tuck underneath to seal.
  • Brush the ring with the beaten egg and sprinkle with the flaky salt and thyme.
  • Bake for 30 minutes, turning halfway through, or until dark golden brown. Transfer to a platter and serve.
