BEEF AND RICE WITH VEGGIES

Recipe video above. Ground beef cooked with seasoned rice and plenty of veggies - kind of like a pilaf or fried rice! This dish is not spicy - the cayenne pepper just adds a touch of warmth, not spiciness.

2 tbsp olive oil
1 onion (, diced (any type))
1 red capsicum / bell pepper (, diced (large))
2 garlic cloves (, minced)
500g (1 lb) ground beef (mince) (, lean)
2 1/2 tbsp tomato paste
1 1/4 tsp salt
1/2 tsp EACH cumin, black pepper
1 tsp each onion powder, dried oregano (or other herb of choice)
1/4 tsp cayenne pepper ((optional))
1 dried bay leaf
1 1/4 cups (225g) long grain white rice (, uncooked (Note 1))
2 cups (500 ml) beef broth (, low sodium)
2 cups (300g) diced frozen veggies (, I used corn, pea, carrot mix (Note 2))
3 big handfuls baby spinach (~ 90g/3 oz) (, or other leafy greens (Note 3))

Steps:

  • Heat oil in large pot over high heat. Add onion, capsicum and garlic. Cook for 1 minute.
  • Add beef, cook until brown, breaking it up as you go.
  • Add tomato paste, salt, pepper, onion powder, oregano, cumin and cayenne pepper. Cook for 1 minute.
  • Turn heat down to medium. Add rice and beef broth, mix well. Add frozen veggies and bay leaf, then stir.
  • Place lid on, lower heat to medium low so it's simmering gently. Cook for 12 - 15 minutes (might even take longer) until all liquid is absorbed (tilt pot to check). The rice should be just cooked, but will be wet.
  • Remove from heat. Quickly toss spinach on top of the rice and put the lid back on. Leave to rest for 10 minutes.
  • Fluff rice and mix through wilted spinach with a fork. Adjust salt if desired. Serve!

Spiced rice with beef image

Enjoy this spiced rice with beef as part of a family feast. Seasoned with ginger, allspice, cloves and more, it has a lovely warming flavour without being too hot

thumb-sized piece of ginger, peeled and chopped
4 large garlic cloves, roughly chopped
800g stewing beef, cut into chunks (shin, chuck or brisket work well)
1 tbsp ground allspice
1 tsp ground cloves
2 tbsp vegetable oil
2 onions, finely chopped
8 cardamom pods
2 cinnamon sticks
8 thyme sprigs, leaves picked, or use 2 tsp dried thyme
2 tbsp all-purpose seasoning (we used Dunn's River), or use an extra beef stock cube
500ml beef stock, made with 1 beef stock cube
400g basmati rice
25g butter

Steps:

  • Blitz the ginger and garlic to a paste in a small food processor. Put the beef in a large bowl and add the ginger-garlic paste, the allspice, cloves, 2 tsp black pepper and 2 tsp salt. Mix to coat the beef, then cover and leave to marinate for 30 mins. Will keep chilled for up to a day.
  • Heat the oil in a large ovenproof pan over a medium heat and cook the onion for 8 mins until soft and translucent. Tip the beef and any leftover marinade into the pan and sizzle for 10 mins until the beef starts to caramelise in places.
  • Add the cardamom pods, cinnamon sticks, thyme, all- purpose seasoning and stock. Bring to a simmer, then cover and reduce the heat to low. Cook for 1 hr, then remove the lid and cook for another 30 mins. The beef should be tender but still holding together. Heat the oven to 180C/160C fan/gas 4. Leave to cool completely, then seal in an airtight container and freeze for up to two months.
  • Tip the rice into the beef mixture with just enough water to cover it by about 1cm. Stir, then dot the butter over the top. Cover and bake in the oven for 30 mins. Fluff the rice up with a fork and serve with Ghanaian gravy (see 'Goes well with').

1 (6 ounce) can tomato sauce

1 tablespoon canola oil
1/4 cup chopped onion
1 ounce sweet Italian sausage, crumbled
1/4 cup finely chopped carrots
1/2 cup thinly sliced brussels sprouts or 1/2 cup corn kernels
1 teaspoon minced garlic
2 cups cold cooked long grain rice (leftover rice is perfect)
1/2 teaspoon sugar
1 egg, lightly beaten
4 thin slices prosciutto
1 teaspoon fresh lemon juice
Salt
freshly ground pepper

Steps:

  • In a wok or a large heavy skillet, heat oil over medium heat. Add onion and cook, stirring occasionally, until golden. Add sausage and cook until lightly browned.
  • Increase heat to high. Add carrots and brussels sprouts or corn; stir-fry 1 minute. Add garlic, then crumble in rice; stir-fry until rice begins to crackle and brown.
  • Add sugar and beaten egg. Remove from heat and stir until egg is cooked through. Stir in lemon juice and salt and pepper to taste.
  • Spoon rice onto 4 plates and garnish each with torn prosciutto.
