Pizza's always a favorite--and individual pockets make it extra special! At a party, kids could even make their own.

Pizza Dough
Vegetable oil
1/2 cup pizza sauce
1 cup shredded mozzarella cheese (4 ounces)
1 cup cooked mild Italian sausage
2 tablespoons finely chopped onion or 1/2 teaspoon onion powder
1/4 to 1/ teaspoon garlic powder
1/2 package (3-ounce size) sliced pepperoni
1/4 to 1/ cup pizza sauce
1 cup shredded mozzarella cheese (4 ounces)

Steps:

  • Heat oven to 425°F. Lightly grease cookie sheets. Make Pizza Dough. Divide dough into eighths. Roll each into 6-inch circle on lightly floured surface. Fold loosely in half; place on cookie sheet and unfold.
  • Lightly brush oil over dough. Divide and layer remaining ingredients, in order listed, on half of each circle; fold dough over filling. Turn edge of lower dough over edge of top dough; pinch edge to seal. Prick top with fork. Bake 15 to 20 minutes or until golden brown.

1 1/2 cups tomato sauce with Italian seasonings
One 12-inch premade pizza crust
2 cups (8 oz) shredded part-skim mozzarella
1 cup broccoli florets
1/4 cup grated Parmesan

Steps:

  • Spread sauce evenly on crust and sprinkle on mozzarella. Arrange broccoli evenly on top and sprinkle with Parmesan. Bake 8 to 10 minutes (or according to package directions), until cheese bubbles and begins to brown. Cut into 8 wedges.

1 can (8 ounces) pizza sauce, divided
1/2 cup seasoned bread crumbs
1/2 cup finely chopped green pepper
1/4 cup finely chopped onion
2 large egg whites
1 garlic clove, minced
1 pound lean ground beef (90% lean)
6 slices Italian bread (1/2 inch thick)
2 teaspoons olive oil
1-1/2 teaspoons Italian seasoning
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • In a large bowl, combine 1/3 cup pizza sauce, bread crumbs, pepper, onion, egg whites and garlic. Add beef; mix lightly but thoroughly. Shape into 6 oval patties., In a large nonstick skillet, cook patties over medium heat 4-5 minutes on each side or until a thermometer reads 160°., Meanwhile, place bread on an ungreased baking sheet. Brush tops with oil; sprinkle with Italian seasoning. Broil 3-4 in. from heat 1-2 minutes or until golden brown., Place remaining pizza sauce in a microwave-safe bowl. Microwave, covered, on high for 10-20 seconds or until heated through. Place patties on toast; top with sauce and cheese. Freeze option: Place patties on waxed paper-lined baking sheet; wrap and freeze until firm. Remove from pan and transfer to a freezer container; return to freezer. Freeze remaining pizza sauce in an airtight container. To use, cook frozen patties and pizza sauce as directed, increasing time as necessary for a thermometer to read 160° for patties and for sauce to be heated through.

1 1/4 cups flour
1 cup whole wheat flour
1 tablespoon baking powder
1 teaspoon oregano
1/4 teaspoon salt
1 cup milk
1/4 cup butter, melted
2/3 cup pizza sauce
1 1/2 cups chopped vegetables
1/2 cup lean ham, diced
1 1/2 cups mozzarella cheese, grated

Steps:

  • Place a large baking sheet upside down in the oven and preheat to 425°F.
  • Grease 1 more large baking sheets.
  • Crust:.
  • In a large bowl, combine flours, baking powder, oregano and salt.
  • Pour in milk and butter, stir with a fork until soft dough forms.
  • Turn out onto a lightly floured surface and knead a couple times just until smooth.
  • Divide into 6 pieces.
  • Roll or pat pieces into 6in circles and place on prepared baking sheets.
  • Topping:.
  • Spread pizza sauce on each crust, leaving 1/2in boarder.
  • Sprinkle with ham and veggies as desired.
  • Sprinkle with cheese.
  • Place pizzas on baking sheet on top of the hot baking sheet in oven.
  • Bake for 12-15 minutes or until crust is golden.
  • Repeat with remaining pizzas.
