INSTANT POT 15 BEAN SOUP

Steps:
- Set aside seasoning packet. Rinse beans in a colander and remove any debris.
- Select Sauté. Add the vegetable oil, onion, and celery to the pressure cooking pot. Sauté for about 3 minutes until tender.
- Add the garlic and sauté for 1 minute more.
- Add the rinsed beans, 2 quarts water, and ham bone.
- Lock the lid in place. Select High Pressure and 1 minute cook time. When the cook time ends, turn off the pressure cooker. Let the beans soak for 1 hour. *Alternatively, you can cook the beans on high pressure for 35 minutes with a 10 minute natural release.
- After 1 hour, stir in tomatoes, carrots, chili powder, and seasoning packet. Lock the lid in place. Select High Pressure and 3 minutes cook time.
- When the cook time ends, turn off the pressure cooker. Let the pressure release naturally for 10 minutes and finish with a quick pressure release.
- When the valve drops, carefully remove the lid. Remove the ham bone. Stir in the spinach, ham, and lemon juice. Season with salt and pepper to taste.

PRESSURE COOKER HAM AND BEANS WITH SPINACH
This is a variation of cooking basic beans in the pressure cooker. As I was craving beans, I just threw this together with what I had on hand and the result was very good!! The ham was leftover and I was out of fresh onions so I used onion powder. I only use a digital pressure cooker so I can't speak for how this will work for the old fashioned kind. This is a great dish - ready in under an hour, start to finish!!

Steps:
- Add washed, sorted dry beans to pressure cooker with the water.
- Cut ham into bitesize chunks and add all seasonings.
- Set to HIGH pressure for 20 - 25 minutes.
- Use quick release method to release steam.
- Stir in spinach and nutmeg. Heat through.
- (My cooker has a "Keep Warm" setting that I leave it on till serving time.).
- Great with crusty bread or cornbread!

HAM BEAN SOUP (PRESSURE COOKER)
This is a quicker version of my Recipe #145910. The only real difference between this and the long simmering version is that you don't have to remember to soak the beans overnight, and the beans retain more texture. My dad loves the original recipe, and he declared this to be just as good.

Steps:
- Put the ham bone in the bottom of the pressure cooker (I normally have to break mine into pieces so it will fit).
- Pour the dried beans on top of the bone, and cover with cold water (don't fill your cooker more than 2/3 full). Sprinkle on the dried onion, garlic powder, and pepper.
- Lock on the lid, bring to pressure, then reduce the heat and cook for 25 minutes.
- Remove from the heat, and let sit for 15 minutes, before carefully removing any remaining pressure.
- Remove the lid, pour in the can of tomatoes including their juice, and the ham pieces. Simmer for 20 minutes.

HAM AND BEAN SOUP WITH SPINACH
This is a soup that I made recently. My husband really enjoyed it and I believe I will be making this a lot this winter. He had no idea that I used spinach and was very suprised when I told him. He hates spinach but loves this soup!

Steps:
- In a medium stock pot, saute ham in oil and butter until lightly browned, about 5 minutes, add onion, celery, carrots and garlic over medium heat, until vegetables are softened, not brown.
- Add chicken broth and seasonings; simmer 15-20 minutes.
- Stir in cannellini beans, spinach and parsley.
- Cook briefly just until spinach wilts, about 2-4 minutes.
- Remove from heat.
- In a small bowl, combine eggs and Parmesan with a whisk, I like to temper the egg/cheese mixture by adding 2 Tablesppons of the hot liquid from the soup, to the egg/cheese and stir quickly after each addition, then add egg mixture into the soup and stir until smooth.
- Salt and pepper to taste.
