1 boneless beef chuck roast (2 pounds)
1 tablespoon canola oil
5 cups water, divided
8 medium potatoes, peeled and quartered
4 medium carrots, halved widthwise
1 medium onion, quartered
1 teaspoon minced garlic
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried thyme
2 bay leaves
2 to 3 tablespoons cornstarch
1/4 cup cold water

Steps:

  • Select saute or browning setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, brown roast on all sides. Press cancel and remove roast. Place trivet insert and 4 cups water in pressure cooker. Set roast on trivet. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 40 minutes. Let pressure release naturally., Remove roast and keep warm. Remove trivet. Skim fat from cooking juices and stir in remaining 1 cup water. Add potatoes, carrots, onion, garlic, salt, pepper, thyme, bay leaves. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 8 minutes. Quick-release pressure., Remove vegetables with a slotted spoon; keep warm. Remove and discard bay leaves. In a small bowl, mix cornstarch and 1/4 cup cold water until smooth; stir into pressure cooker. Select saute setting and adjust for low heat. Simmer, stirring constantly, until thickened, 1-2 minutes. Serve with roast and vegetables.

2 tablespoons vegetable oil
½ cup all-purpose flour
1 ¼ pounds beef stew meat, cubed
salt and ground black pepper to taste
1 large onion, chopped
2 tablespoons white sugar
2 cups water
2 cubes beef bouillon
2 cloves garlic, minced
1 bay leaf
1 tablespoon dried parsley
1 tablespoon dried basil
4 potatoes, peeled and cut into 2-inch pieces
2 cups peeled baby carrots

Steps:

  • Heat vegetable oil in a skillet over medium heat. Place flour in a resealable bag; drop in half the beef cubes and shake to coat. Shake off excess flour and add meat to pan. Repeat with remaining beef. Season meat with salt and pepper to taste.
  • Stir onion into beef and cook, stirring often, until the meat is browned on all sides and onion is translucent, about 5 minutes. Sprinkle in sugar.
  • Combine water, beef bouillon, garlic, bay leaf, parsley, and basil in a pressure cooker over medium-high heat. When bouillon cubes are dissolved, fit the pressure cooker's rack in the cooker (if it has one). Layer potatoes, carrots, and meat mixture in the pressure cooker, seasoning with salt and pepper to taste. Seal the lid and bring the cooker up to full pressure.
  • Reduce heat to medium-low, maintaining full pressure, and cook for 8 minutes. Remove from heat. Let the pressure drop naturally, about 15 minutes before releasing lid. Transfer the meat and vegetables to a serving bowl and pour pan juices over meat and vegetables.

1 tablespoon canola oil
1 1/2 lbs rump roast
2 garlic cloves, chopped
1 large onion, cut up
4 carrots, peeled and cut into chunks
4 celery ribs, peeled and cut into chunks
4 potatoes, cut into chunks
salt & pepper (to taste)
1 -2 teaspoon dried parsley
1 1/2-2 cups water
1 -2 beef bouillon cube (optional)

Steps:

  • Cut the roast into chunks, about 1 inch (or larger if that is your preference). Heat oil in bottom of pressure cooker until hot and add the meat all at once (do not turn for at least 1 minute - you really want to let the meat sear - this gives the stew such yummy flavor.
  • Stir the meat, letting it brown on all sides. Add the chopped garlic, stir for 1 minute, then add the onions, carrots, celery, potatoes, salt, pepper, parsley, water and optional beef bouillon(the bouillon gives a stronger flavor - you can also wait to see how it comes out, and if you feel that it's not flavorful enough, you can add the beef bouillon and boil the stew for a minute or so).
  • Lock the pressure cooker lid in place and bring to high pressure over high heat.
  • Cook 15 minutes.
  • Cool pot immediately and serve. ENJOY!
  • Optional ingredients - you can add some chopped tomatoes if you'd like before cooking, or after bringing it to pressure, you can throw in some canned mushrooms or frozen peas and heat thoroughly.

Steps:

  • In a large bowl, combine the beef and 2 tablespoons flour. Season generously with salt and pepper and toss to coat. Set aside.

  • Let the pressure release naturally for 5 minutes, then release the remaining pressure manually. (If you find that too much liquid is spurting out with the steam, close the knob to seal again, wait a minute, and then turn the knob to release the rest of the pressure.) Open and stir in the potatoes and root vegetables. Set steam valve to sealed position and cook on high pressure for 10 minutes. Allow the pressure to release naturally for 10 minutes, then release the remaining pressure manually.
  • Open the lid. If the beef and vegetables are not tender, pressure cook on high for 3 more minutes and manually release the pressure. Add the vinegar, Worcestershire sauce and lemon juice. Taste and season with more salt, pepper and lemon juice if necessary. (If the stew tastes flat, add more lemon juice first, then more salt and pepper; acid is key to making it taste lively. It may need a surprising amount of salt, especially if you have used unsalted or low-salt stock.)
  • Discard the thyme sprigs and skim the fat from the top using a ladle or by passing a clean paper towel just over the surface of the stew. (If you would like the stew to be thicker, transfer the beef and vegetables with a slotted spoon to a bowl or plate. Using the sauté setting, let boil until it is the desired consistency. Add the beef and vegetables back into the pot.)
  • Make the horseradish cream: Stir together the sour cream, horseradish and scallions in a small bowl. Season with salt. Serve stew in bowls with a spoonful of the horseradish cream.

I adapted this from an Emeril recipe for beef stew, which is why the recipe features Emeril's Essence. However, I wanted just a classic beef stew, and not one with turnips and collard greens. I also found that Emeril's recipe cooked the stew for too long and used too much liquid--more like a soup than a stew. So here's my recipe for classic beef stew. By adding most of the vegetables during the last 10 minutes of cooking, they come out nice and firm. I recommend serving the stew on top of rice or wide egg noodles with a dollop of sour cream on top.

2 1/4 lbs chuck roast, cut into large cubes
2 small red potatoes, cut into large cubes (about 3-inch long each)
2 medium carrots, cut into chunky disks
2 stalks celery, cut into chunks
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons all-purpose flour
1 teaspoon garlic, minced
1/4 cup red wine
1 -1 1/4 cup beef stock
1 tablespoon balsamic vinegar
4 tablespoons olive oil
1/2 sweet onion, cubed
2 bay leaves
3/4 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon onion powder
1/4 teaspoon cayenne pepper
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme

Steps:

  • Have on hand the following accessories: 1 large platter, 2 dinner plates, 1 cereal bowl, 1 piece paper toweling.
  • The list of 8 spices at the end of the recipe make up the Emeril's Essence. These should be mixed together thoroughly before being added to the flour. For a larger portion of Essence that can be stored, multiply all amounts by 4 and just add 1 tablespoon of Essence to the flour.
  • Chop up carrots, celery and onion. Set aside. (This can be done the night before and all vegetables placed together in a baggie in the refrigerator.).
  • In cereal bowl, combine flour and Emeril's Essence. (Emeril's Essence can be made up anytime in advance and stored.).
  • Cube meat into approximately 1 1/2" chunks on large platter, trimming away excess fat as necessary. (Do not cube in advance or meat will be too bloody and not dry enough.).
  • Dredge each piece of meat thoroughly in flour mixture and return to platter.
  • Place pressure cooker on cooktop and apply medium heat. Add 2 tablespoons olive oil.
  • When olive oil is hot, add approximately 1/2 of the meat cubes in order to saute. (Don't crowd meat. It will take 2-2 1/2 batches to cook meat.) Cook meat until well browned on outside, but still pink on inside--about 3-4 minutes per batch.
  • When first batch of meat is cooked, transfer to dinner plate, wipe edges of pressure cooker with paper towel, add some more olive oil and place second batch of meat in pressure cooker to saute. Repeat procedure until all meat cubes are browned.
  • Reduce heat under pressure cooker to medium-low. Add balsamic vinegar and 1/4 cup stock. Deglaze pan.
  • Add carrots, celery, onion and garlic to pressure cooker. Add salt and pepper. Mix well and cook over medium-low heat for 3 minutes.
  • Remove all but 1/2 cup vegetables from pressure cooker and set aside on second dinner plate. Wipe down edges of pressure cooker.
  • Add to pressure cooker: reserved meat, bay leaves, red wine, and remaining beef stock. Mix well.
  • Place lid on pressure cooker. Heat on high until pressure cooker is up to full pressure. Reduce heat to simmer and cook at high pressure for 20 minutes.
  • While meat is cooking, take a red potato, slice in half the long way, then slice each half the long way one more time. Make three cross-cuts on each potato "submarine" and keep pieces together in submarine shape on cutting board. Repeat process for second potato. (This method prevents the potato flesh from turning brown while you're waiting to add the potatoes to the stew.).
  • When meat has been cooked 20 minutes, remove pressure cooker from cooktop and release pressure using the cold water method. Open lid and add remaining vegetables which have been set aside. Also add potato chunks. Mix well.
  • Replace lid on pressure cooker. Place pressure cooker on cooktop over high heat. Bring pressure up to high, reduce heat to simmer, and cook on high pressure for 10 minutes. At the end of 10 minutes, release pressure using the cold water method again.
  • Remove lid from pressure cooker and enjoy stew.

1 quart beef broth, divided

3 cups chopped carrots
2 tablespoons quick-mixing flour (such as Wondra®)

Steps:

  • Heat oil in a pressure cooker over medium heat; add flour and beef. Cook, turning the roast until browned on all sides, 5 to 7 minutes.
  • Pour 3 1/2 cups beef broth into pressure cooker. Add onion, celery, black pepper, salt, and bay leaves. Close cooker securely and place pressure regulator over vent according to manufacturer's instructions. Heat until steam escapes in a steady flow and makes a whistling sound, about 10 minutes. Adjust temperature until regulator is gently rocking. Cook for 20 minutes.
  • Release pressure carefully in the sink under cold water. Unlock lid and remove. Add potatoes and carrots. Replace lid and close cooker securely. This is a recipe I adapted from how I make stew in a crock pot/slow cooker. The golden mushroom soup (I use Campbell's brand) makes a great gravy and you don't have to do anything to it. When I make it in the crock pot I don't even add water, I just use 2 cans of soup. The juice from the meat is enough liquid to make a great gravy. My family loves the taste and it is so easy!

  • Stir the meat, letting it brown on all sides. Next, add the onions, carrots, mushrooms, potatoes, salt, pepper, parsley, golden mushroom soup, water and optional beef bouillon(the bouillon gives a stronger flavor)
  • Lock the pressure cooker lid in place and bring to high pressure over high heat.
  • Cook 15 minutes.
  • Cool pot immediately and serve.
  • If the gravy isn't thick enough then stir a bit of cornstarch to some cold water (only about 1 T to half a cup of water) and add to the gravy. Bring to a boil and the gravy will thicken.

1 tablespoon vegetable oil
1 small onion, diced
2 pounds cubed beef stew meat
5 carrots, peeled and diced
8 medium baking potatoes, peeled and cubed
2 cubes beef bouillon
2 cups water
2 teaspoons cornstarch
2 teaspoons salt, or to taste

Steps:

  • Heat the oil in the bottom of the pressure cooker over medium-high heat. If your cooker has an insert, remove it and cook directly in the bottom of the pot. Add the onion and beef, and cook until browned on the outside.
  • Stir in the water, bouillon cubes and carrots, close the lid, and secure the pressure regulator. Heat until you start to hear sizzling, then reduce the heat to medium, and set your timer for 20 minutes. If you have an adjustable pressure regulator, set it for 10 pounds of pressure.
  • Meanwhile, place the potatoes in a saucepan with enough water to cover. Bring to a boil, and cook until tender, about 10 minutes. Drain. This whole process should take about the same amount of time as the rest of the stew.
  • When the 20 minutes are up, release the pressure from the pot according to the manufacturer's instructions - mine needs to sit under cold running water for 5 minutes until the lid can be released.
  • Remove the lid, and place the pot over medium heat. Bring to a boil. Stir the cornstarch into a small amount of cold water to make a slurry. Stir this into the stew, and cook for a few minutes. Add the potatoes to the stew, or place them in serving dishes, and ladle the stew over them.

3 1/2-5 lbs boneless beef chuck roast
1 cup flour
3 -4 tablespoons vegetable oil
2 bay leaves
1/4 teaspoon ground ginger

1 (6 ounce) can tomato paste
2 large carrots, peeled and chopped to 2-inch pieces
3 celery ribs, cleaned and chopped to 2-inch pieces
1 medium potato, peeled and chopped to 3-inch pieces

1 medium daikon radish, peeled and chopped to 2-inch pieces (optional)

Steps:

  • Season flour with salt, pepper, and ground ginger in a seperate bowl or zip top bag.
  • Cut boneless chuck into 3" cubes and lightly dust in seasoned flour.
  • In a large skillet with vegetable oil, lightly braise all sides of the the cubed chuck on medium-high heat on the stovetop. Drain on paper towels.
  • Put braised chuck into pressure cooker with one cup of water (or enough to barely cover meat), and bay leaves.
  • Following your pressure cooker's instruction, cook chuck in pressure cooker for 20 - 22 minutes.
  • Stop pressure cooker in a sink of water, release pressure valve and toss in carrots, potatoes, and daikon. Cook for an additional 3 - 5 minutes.
  • Stop the pressure cooker again, and check if vegetables are slightly firm, then add the celery and onions. Cook and additional 2 - 3 minutes.
  • When stew is done and all vegetables have similar texture, add 3/4 can of tomato paste, stir well, and reseason with more tomato paste, salt, and pepper. Let stand for 15 minutes before serving.

1/2 pkg snack size small carrots (these are usually already peeled)
1 can(s) tomato sauce (8 oz.)

  • 1. flour and brown beef stew meat in skillet with a small amount of oil. (do not cook through-just brown the outside.)
  • 2. peel and cube potatoes.

  • Over medium high heat, add 2 tablespoons of olive oil and beef and saute until beef is well browned.
  • Add 2 additional tablespoons of olive oil and 2 tablespoons of the flour mixture and mix to make a rue.
  • Add beef broth, Worcestershire sauce, Kitchen Bouquet and mix thoroughly making sure there are no lumps.
  • Add carrots, celery, onions and potatoes to pot, sprinkle Accent over veggies evenly.
  • Close lid on pressure cooker and cook on high pressure for 14 minutes.
  • Quick release steam, remove cover and check gravy for desired thickness. If necessary stir in a little more flour mixed with hot water to thicken as desired.

1 1/2 to 2 lb stew beef
4 to 6 medium potatoes, peeled and quartered
2 large onions, peeled and quartered
3 medium carrots (optional)
salt and pepper to taste

Steps:

  • 1. In a 6-quart pressure cooker, add stew beef and salt to taste. Cover with water. Lock down lid to pressure cooker and place rocker on top. Turn heat to high until rocker begins to rock. Reduce heat to maintain a gentle rocking action and set stove timer to 35 minutes.
  • 2. While meat is cooking, peel and quarter potatoes and onion. Peel and slice carrots and set aside. When timer goes off, remove pressure cooker from heat. Carefully run a small stream of water over the side, being extremely careful not to allow the water to touch the rubber saftey release valve.
  • 3. When pressure is fully released, remove lid from pressure cooker. Add vegetables and more salt, if desired and lock down lid. Replace rocker and return to high heat until rocker begins to rock. Reduce heat to maintain a gentle rocking action and set stove timer for 12 minutes.
  • 4. When timer goes off, repeat cooling process as instructed in step #2. When pressure is fully released, remove lid and serve. You may transfer to serving platter, if desired, but you will need to remove meat and vegetables from liquid. Enjoy with rolls, biscuits or your favorite side dishes.
  • 5. SAFEFY TIPS: NEVER fill pressure cooker more than 2/3 full! Always check your valves to make sure that they are clear. NEVER try to remove lid until ALL of the pressure is released. In Presto model, the safety release valve will fall down to resting position when all pressure has been released.

Adapted for a pressure cooker. (Based on my recipe #23294). Beef stew the way my grandmother used to make it! A good hearty dinner on a cold winter night, served with lots of warm, crusty, Italian bread for dunking into the sauce, mmmmmmm....... Tastes even better the second day. NOTE: I used my Fagor dual (high/low pressure) 6 quart pressure cooker when I prepared this. Everyones pressure cooker cooks a little different, so the cooking times are based on my experience with my PC. You may need to adjust the times for your PC and/or your personal tastes. **The 24 minute cooking time is the ACTUAL TOTAL cooking time under pressure. It does not include "natural release" time or the time it takes to bring your PC up to correct pressure.

1 lb white mushrooms or 1 lb baby portabella mushrooms, cleaned and cut into quarters
3 -4 tablespoons olive oil (or oil of choice)
1 (28 ounce) can crushed italian plum tomatoes with liquid (or two 14 ounce cans of tomato sauce)
4 -6 carrots, cut into 1 inch pieces (about 1 lb)
5 large peeled potatoes, cut in half, then quarter each half
1 lb fresh green string bean, cleaned and cut into bite sized pieces (can use frozen, cut green beans)
1/2 cup dry red wine
1 bay leaf
1/4 teaspoon dried basil, crushed (optional)
1/4 teaspoon dried oregano, crushed (optional)
salt (to your taste)
pepper (to your taste)
1 1/2-2 cups boiling water

Steps:

  • I browned the meat with oil and onions in my PC, you can use a separate pan for browning if you prefer.
  • Add the mushrooms and garlic, and let cook until the mushrooms release their liquid.
  • Add the tomato sauce, wine, bay leaf and all seasonings EXCEPT salt.
  • Add a bit of water, maybe 1 1/2 to 2 cups (to bring ingredient level to just over 1/3 capacity of my PC).
  • Secure lid, bring to HIGH pressure and cook for 18-20 minutes.
  • Let pressure release NATURALLY (it took about 15-18 minutes in my PC).
  • Add potatoes and carrots, give all a good stir.
  • Secure lid again and bring to HIGH pressure, cook veggies for 4 minutes.
  • Quickly release pressure (with quick release valve) and test carrots & potatoes for doneness (they should still be a bit too firm).
  • Add the green beans and give all a good stir. Secure lid and bring the PC up to LOW pressure, and cook for 2 minutes.
  • Remove from stove, quick release pressure (with quick release valve), removed lid and give the stew a stir.
  • Carefully (very hot!) sample it, adjust seasonings to taste (I added a bit of salt).
  • If stew is too thick, add a bit of water to thin to desired consistency.
  • If stew is too thin, let stand for 5-10 minutes before serving.
