BOILED OATMEAL COOKIES (PREACHER COOKIES)

Simple, quick, easy, good cookies can be prepared with a minimum of fuss and bother, and ready to eat in an hour. I've seen them called Preacher cookies, because they could be made quickly if you found out the preacher was coming to call on you.

Number Of Ingredients 9

2 cups sugar (white, brown or a combination of the two)
3 cups oats, dry- sometimes takes a bit more (old fashioned, or quick cooking)
1/2 cup milk (evaporated, buttermilk, any kind but I wouldn't use sweetened, condensed. That would be too sweet)
2/3 cup cocoa, unsweetened
1/4 teaspoon salt
2 teaspoons vanilla
1/2 cup butter
1/2 cup peanut butter
1/2 cup nuts, coarsely chopped (walnuts, pecans, coconut.)

Steps:

  • Put oats in a large bowl.
  • In a small saucepan over medium heat bring to a full boil: butter, milk, sugar, and cocoa. Reduce heat and simmer for 3 minutes. Remove from heat. There is a knack to this. Boil them too long, they will be dry and crumbly, too short and they will be runny.
  • Quickly add peanut butter, salt, vanilla.
  • Mix liquid into oats. Add more oats as necessary until it has a moist doughy consistency.
  • Quickly put in buttered cake pan or quickly drop by the teaspoonful onto wax paper. Let them stand at room temperature for one hour.
  • Variations: Add 1/2 cup coarsely chopped nuts, or Coconut. Replace 1/2 the oats with coconut. Use less cocoa and more peanut butter.

½ cup butter
4 tablespoons unsweetened cocoa powder
2 cups white sugar
½ cup milk
⅛ teaspoon salt
3 cups quick cooking oats
½ cup crunchy peanut butter
1 teaspoon vanilla extract

Steps:

  • Mix butter or margarine, cocoa, sugar, milk, and salt together in saucepan. Boil for 1 minute.
  • Stir in oatmeal, peanut butter and vanilla. Drop by tablespoonfuls onto waxed paper. Allow to cool and harden.

1/2 cup margarine
2 cups sugar
1/2 cup milk
2 cups quick oatmeal, uncooked
3 tablespoons peanut butter
1 teaspoon vanilla
1/3 cup cocoa

Steps:

  • Combine margarine, sugar and milk; boil for 3 minutes.
  • Remove from heat, add vanilla and peanut butter.
  • In large bowl, combine oatmeal and cocoa.
  • Add cooled liquid mixture to oatmeal mixture. Stir well.
  • When slightly thickened, drop on waxed paper, and cool competely.

This recipe was handed down from my cousin's aunt, Linda M. Hatfield, who has now passed away. Linda's husband, Conard, is a minister and these were a hit.

1 stick margarine
1/2 c milk
2 c sugar
3/4 c peanut butter
2 c oatmeal
1 tsp vanilla
1/2 c cocoa

Steps:

  • 1. Mix together margarine, milk, sugar, and peanut butter and bring to a boil. Boil 3 minutes.
  • 2. Take from stove and add oatmeal, cocoa and vanilla. Stir until mixture gets thick.
  • 3. The drop by spoon onto waxed paper and let COOL, COOL, COOL.

4 Tbsp unsweetened cocoa powder
2 c sugar
3 c quick cooking oats
1/2 c crunchy peanut butter
1 tsp vanilla extract
1/8 tsp salt
1/2 c milk

Steps:

  • 1. Mix butter, cocoa, sugar, milk, and salt together in saucepan. Boil 1 minute.
  • 2. Stir in oatmeal, peanut butter and vanilla. Let cool, then roll into small balls and flatten out on wax paper. Refrigerate for 15 minutes then take out and leave at room temperature.
