1 pound tomatoes (3 to 4 medium), cut into wedges
1 large onion, cut into wedges, leaving root ends intact
1/2 cup drained brine-cured black olives, pitted if desired
4 large garlic cloves, sliced, plus 1 teaspoon minced
3 tablespoons olive oil, divided
2 teaspoons herbes de Provence, divided
1/2 teaspoon fennel seeds
1 whole chicken (about 3 1/2 pounds)

Steps:

  • Preheat convection oven to 400°F or regular oven to 425°F with rack in middle.
  • Toss together tomatoes, onion, olives, sliced garlic, 2 tablespoons oil, 1 teaspoon herbes de Provence, fennel seeds, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a 13- by 9-inch or other 3-quart shallow baking dish. Push vegetables to sides of dish to make room for chicken.
  • Stir together minced garlic, 1 teaspoon salt, 1/2 teaspoon pepper, remaining teaspoon herbes de Provence, and remaining tablespoon olive oil.
  • Remove excess fat from chicken and pat dry, then rub inside and out with seasoning mixture. Tie legs together with string, then put chicken in baking dish.
  • Roast until an instant-read thermometer inserted into thickest part of a thigh (do not touch bone) registers 170°F, about 1 hour in convection oven; 1 to 1 1/4 hours in regular oven.
  • Let chicken stand 10 minutes before carving. Serve with vegetables and pan juices.

1/4 cup Niçoise olives (about 2 ounces)
4 small skinless boneless chicken breast halves (about 1 1/2 pounds total)
2 tablespoons olive oil
1/2 stick (1/4 cup) unsalted butter
1/4 cup dry white wine
1 tablespoon fresh lemon juice
2 tablespoons minced fresh flat-leafed parsley leaves

Steps:

  • In a large sieve rinse olives and drain well. Pit olives and cut into slivers. With a sharp knife butterfly each chicken breast half by horizontally cutting through meat, keeping 1 long side intact, and opening like a book. With a rolling pin lightly pound chicken between sheets of plastic wrap to about 1/8 inch thick. Pat chicken dry and season with salt and pepper.
  • In a 12-inch heavy skillet heat oil and 2 tablespoons butter over moderately high heat until foam subsides and sauté chicken, 1 piece at a time, until golden and just cooked through, about 30 seconds on each side. Transfer chicken as sautéed with tongs to a platter and keep warm, loosely covered with foil.
  • Pour off any fat in skillet. Add wine and deglaze skillet over moderately high heat, scraping up brown bits. Stir in lemon juice and remaining 2 tablespoons butter and heat sauce, swirling skillet, until butter is just incorporated. Remove skillet from heat and stir in olives, parsley, and salt and pepper to taste.
  • Spoon sauce over chicken.

1 Chicken @ 3lbs, cut into serving pieces
Salt and freshly ground pepper, to taste
1/4 Cup of Olive Oil
1 Yellow Onion, diced
2 Garlic Cloves, minced
3 Yellow Squash, about 1-1/2lb total, quartered and sliced 1/4" thick
1/4 Cup of Dry White Wine
3 Tblsp choped fresh flat leaf parsley
3 Tsp chopped fresh tarragon
5 Plum tomatoes, seeded adn quartered
1/4 Cup of dry cured black loives, pitted
1/1 /4 Cups of Chicken Broth

Steps:

  • Season chicken with salt and pepper. In 5-1/2qt Dutch oven over medium high heat, warm oil. Add chicken, brown on all sides, about 7 minute total. transfer to plate. Reduce heat to medium. Add onion, cook until softened, about 3 minutes. Add garlic; cook 2 minutes more. Add squash, wine, 2 Tblsp parsley and 2 Tsp of tarragon. Cook, stirring occasionally, until squash is soft but not browned, about 5 minutes. Return chicken to pan; add tomatoes, olives and stock. Bring to a gentle simmer; reduce heat to low. Cover and simmer until chicken is cooked through, 25-30 minutes. stir in 1 Tblsp of parsley and 1 Tsp Tarragon. Serve Immediately. Serves 4

CHICKEN PAILLARD WITH BLACK OLIVE TAPENADE



Chicken Paillard With Black Olive Tapenade image

Paillard is the French word for a thin slice of meat that cooks quickly. (Sometimes, a thicker piece of meat is pounded with a mallet to make it thinner.) This recipe is an easy way to make a chicken paillard without much pounding. Essentially, you butterfly a boneless, skinless chicken breast, slicing horizontally to make a flat, heart-shaped breast, then pound it lightly. Unfortunately, a chicken breast is often dry and tasteless, but it doesn't have to be. Seasoned and cooked correctly, it should be tasty and moist. A dab of tapenade, a traditional Provençal black olive paste, makes a perfect accompaniment.

1 cup pitted Niçoise olives
4 anchovy fillets
3 garlic cloves, grated
1 tablespoon capers, well rinsed
3 tablespoons roughly chopped parsley
1/2 teaspoon orange zest
1/2 teaspoon lemon zest
Pinch of red-pepper flakes
1/2 cup extra-virgin olive oil
4 boneless, skinless chicken breasts, about 8 ounces each
Salt and pepper
Extra-virgin olive oil
1 tablespoon roughly chopped thyme, plus a few sprigs
8 wide strips of lemon zest, from 1 medium lemon
5 ounces wild arugula (about 4 handfuls)
A piece of Parmigiano-Reggiano or pecorino Romano, for shaving

Steps:

  • Make the tapenade: In the bowl of a food processor, place olives, anchovy, garlic, capers, parsley, orange zest, lemon zest, red-pepper flakes and olive oil. Pulse several times to make a rough paste, then scrape down sides of the bowl and purée for about 30 seconds more. Alternatively, use a knife to finely chop ingredients, transfer them to a bowl and stir in the olive oil. You should have about 1 cup of tapenade, more than you need for this recipe. (Refrigerate the remainder for up to 2 weeks.)
  • Prepare the chicken: Working one at a time, lay chicken breast on a sturdy cutting board. With a sharp, thin-bladed knife, cut breast horizontally in half, almost, but not completely. Open the breast like a book; it will be a heart-shaped piece of meat. Lay the breast between two resealable plastic bags and lightly pound the breast to 3/8- to 1/2-inch thickness. Don't pound too hard, or the meat may tear. When all breasts are ready, transfer them to a rimmed baking sheet in one layer.
  • Season each breast on both sides with salt and pepper and drizzle with 1 teaspoon olive oil. Sprinkle with chopped thyme, and rub seasoning into meat, coating evenly with oil. Scatter thyme sprigs and lemon zest strips over. Leave to marinate for 30 minutes.
  • Set oven to 400 degrees. Put a large skillet over medium-high heat, and lightly coat bottom with olive oil. When oil is hot, lay two chicken breasts top-side down in skillet. Cook for 2 minutes, until lightly browned. Turn over and cook 1 minute more. Transfer breasts to a clean baking sheet, browned-side up. Repeat with the other breasts.
  • Bake, uncovered, for 5 minutes, until firm to the touch. Remove from oven, keep warm and let rest 5 minutes. Remove and discard thyme sprigs and lemon zest strips.
  • Put arugula in a bowl, and dress very lightly with olive oil and a pinch of salt. Place a handful of dressed greens on each of four plates. Place cooked paillards alongside. Smear 1 tablespoon tapenade across the surface of each breast. With a vegetable peeler, shave some cheese over arugula. Garnish with lemon wedges and serve.
