Crock Pot Loaded Potatoes are all made in the slow cooker and covered in seasonings, shredded cheese, bacon and green onion!

2 pounds baby potatoes, (cut in half (or cut in quarters if large))
2 teaspoons smoked paprika, (divided use)
2 teaspoons kosher salt, (divided use)
2 teaspoons ground black pepper, (divided use)
4 cloves garlic, minced (divided use)
3 cups shredded cheddar cheese, (divided use)
1 pound bacon, (cooked and crumbled)
1/2 cup sliced green onions (divided use)
sour cream and sliced green onions, (for serving)

Steps:

  • Spray a 6-quart oval slow cooker with neutral nonstick cooking spray or line with nonstick foil.
  • Layer half the potatoes in the bottom of the slow cooker. Season with half the smoked paprika, salt, pepper and minced garlic.
  • Top with half the shredded cheddar cheese, bacon and green onions. Repeat this process a second time. Note: bacon and green onions can be added to the top after potatoes have cooked rather than layering before cooking.
  • Cover and cook on low until potatoes are tender, 2 to 3 hours.
  • Serve with a drizzle of sour cream (or a side of ranch dressing) and more sliced green onions.

1 (2 pound) package frozen Southern-style hash brown potatoes, thawed
4 cups shredded Cheddar cheese
2 (10.75 ounce) cans condensed cream of chicken soup
1 (8 ounce) container sour cream
1 cup chopped yellow onion
1 cup milk
1 pinch seasoned salt, or to taste
1 teaspoon minced garlic
1 cup crushed cheese-flavored crackers (such as Cheez-It®), divided

Steps:

  • Mix hash brown potatoes, Cheddar cheese, cream of chicken soup, sour cream, onion, milk, seasoned salt, garlic, and 1/2 cup cheese-flavored crackers in a slow cooker.
  • Cook on Low, stirring occasionally until cooked through, about 2 hours. Stir and top with remaining 1/2 cup cheese-flavored crackers.

Number Of Ingredients 7

1 lb ground beef
6 -8 medium potatoes (made as mashed potatoes with milk & butter)
1 onion
1 (8 ounce) can cream of chicken soup
1 cup sour cream
1/4 cup butter, melted
1/2 cup cheese, grated

Steps:

  • Brown the ground beef and onions on a skillet while making the mashed potatoes as you normally would.
  • In a slow cooker mix the chicken soup and sour cream. Mix in the mashed potatoes, stir. Add the ground beef and onions, stir. Add the melted butter, stir and let sit in the slow cooker for about 15 minutes. Once hot, add the grated cheese and stir. You can add as much as you like. Let melt and put the slow cooker on low. Enjoy.
