This is a staple at our summer grill-outs. It's easy and can be prepared the day before, then baked when you need it. I use reduced fat cheddar cheese, light sour cream and 98% fat-free cream of chicken soup.

1 (32 ounce) bag frozen hash browns (shredded or cubed)
2 cups cheddar cheese (can be reduced fat)
16 ounces sour cream (can be light)
1 (10 3/4 ounce) can cream of chicken soup (can be 98% fat-free soup)
3/4 cup butter or 3/4 cup margarine
1 cup corn flakes (more if desired)

Steps:

  • Take hash browns out of freezer, keep in bag, set aside.
  • In microwave, melt 1 stick of butter in large bowl; mix in sour cream, cheese and cream of chicken soup.
  • In 9x13 pan (sprayed with Pam), spread hash browns. Spread sour cream, cheese, and soup mixture on top.
  • Melt 1/2 stick of butter on stovetop, mix in corn flakes, stir (smash them a little too) until butter is absorbed. You may need/want to add more corn flakes.
  • Sprinkle corn flakes on top of sour cream, cheese and soup mixture.
  • Bake 1 hour at 350.

2 cups crushed corn flakes cereal

Steps:

  • Preheat oven to 350 degrees F. Coat 13x9 baking dish with nonstick cooking spray.
  • In a large bowl, whisk together soup, sour cream, salt and pepper. Stir in cheese, onion and hash browns until well mixed. Spoon evenly into baking dish.
  • In a medium bowl, mix together cereal and butter. Sprinkle evenly on top of hash brown mixture.
  • Bake uncovered for 45 to 50 minutes, or until hot and bubbly. Allow to rest for 5 minutes before serving. Season with additional salt and pepper to taste if desired. Garnish with additional sliced green onion if desired.

16 ounce sour cream
1 10.75 ounce can cream of mushroom soup
2 cups cheddar cheese (grated)
5 Tablespoons butter (melted)
2 cups plain corn flake crumbles
1/4 cup butter (melted)

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • In a large bowl combine sour cream, mushroom soup and melted butter.
  • Add Potatoes O'Brien to above mixture and stir well to combine. Then add cheese to mixture. Place combined ingredients is a 2 quart casserole dish.
  • For the topping: in a small bowl combine corn flake crumbles and melted butter until well combined. Spread evenly to top of potato mixture and bake for 1 hour.

1/3 cup minced green bell pepper

1/3 to 1/2 cup olive or canola oil
4 Idaho potatoes, peeled and diced

  • In a large skillet cook the onion, green pepper and pimiento in 2 tablespoons of the oil over moderate heat, stirring occasionally, until vegetables are softened. Transfer vegetables to a bowl. 1 can cream chicken soup
1 cup sour cream
1 cup shredded cheddar cheese
3/4 stick butter
1 1/2 cups corn flakes

Steps:

  • Preheat oven to 350 degrees F. Mix potatoes, soup, and sour cream in a bowl.
  • Place mixture in casserole dish; use Pam so it doesn't stick. Pour cheese on top. (Sometimes I use more or less than 1 cup...depending on mood.) Drizzle butter over casserole. (I've cut this down to 1/2 stick and it works just as well.) Add corn flakes on top.

1 1/2 tablespoons unsalted butter
1 1/2 tablespoons olive oil
1 large yellow onion, finely chopped
1/2 small red bell pepper, seeded,deribbed and finely diced
1/2 small green bell pepper, seeded,deribbed and finely diced
2 lbs small white potatoes or 2 lbs red potatoes, peeled and cut into 1/2 inch cubes
2 tablespoons finely chopped fresh parsley

Steps:

  • In a large frying pan over medium-high heat, melt 1/2 tablespoon of the butter with 1/2 tablespoon of the olive oil.
  • Add the onion and saute, stirring occasionally, until golden brown and just beginning to caramelize, 5-7 minutes.
  • Do not allow the onion to scorch.
  • Add the red and green peppers and saute until beginning to soften, 3-5 minutes longer.
  • Transfer to a serving bowl and set aside.
  • Add 1/2 tablespoon each of the remaining butter and olive oil to the same pan.
  • Add half of the cubed potatoes and cook, turning to brown all sides, 5-7 minutes.
  • If the potatoes are too dry, add a little more butter or oil.
  • Transfer the browned potatoes to the bowl holding the pepper mixture.

  • Return the mixture to the pan.
  • Raise the heat to high so that it quickly warms through.
  • Remove from the heat and season to taste with salt and pepper.
  • Add the parsley and stir to combine.

I did not include thawing your potatoes in the prep time. You can make them without thawing them first, but they are harder to mix and take longer to cook.

I'm tired of buying this at the store, so I decided to make my own. In my opinion, this is the best way to prepare potatoes for a typical breakfast. This recipe lasts a long time in the freezer. Just pull the bag out of the freezer and toss as much as you want onto a hot pan or griddle. Add more vegetable oil when cooking if needed. Enjoy.

1 large green bell pepper, cut into 1/2-inch dice
