CLASSIC LYONNAISE POTATOES
Steps:
- Preheat the oven to 400 degrees F.
- Place the potatoes in a pot of salted water. Bring the potatoes up to a boil and blanch for 2 minutes. Remove the pan from the heat, drain, and cool. In a large ovenproof saute pan, heat the olive oil. When the oil is hot, add the onions and garlic. Season with salt and pepper. Saute the onions until caramelized, about 8 to 10 minutes. Turn the onions into a bowl. Place the pan back on the stove and melt the stick of butter. When the butter has melted, cover the bottom of the pan with 1/3 of the potatoes.
- Season with salt and pepper. Cover the first layer of potatoes with 1/2 of the onions. Cover the onions with 1/3 of the potatoes. Season with salt and pepper. Repeat the layering until all of the potatoes and onions are used. Place the pan in the oven and cook for 10 to 12 minutes or until the potatoes are golden brown. Remove the pan from the oven.
- Using a spatula, gently lift the potatoes out of the pan and place on a platter. Garnish with parsley.
CLASSIC LYONNAISE POTATOES
If you like buttery potatoes with lots of caramelized onions, then this is your dish. This dish goes well with anything.

Steps:
- Preheat the oven to 400°F.
- Place the potatoes in a pot of salted water.
- Bring to boil and blanch for 2 minutes, until tender, but not to where they fall apart when putting them in baking dish.
- Remove from heat, drain and cool.
- In large sauté pan, heat the olive oil.
- When the oil in hot, add the onions.
- Season with salt and pepper.
- Sauté until caramelized, adding in garlic just before onions are done and sauté a few minutes more until garlic is cooked.
- Remove onions from pan.
- Melt butter in pan then pour butter into baking dish.
- Layer potatoes then onions and repeat until onions and potatoes are gone seasoning with salt and pepper between layers.
- Place into 400°F oven and bake for 10-12 minutes or until golden brown.
- This will make about 4-6 servings, depending on the size of the onions and potatoes.
- This is a wonderful buttery and oniony potatoes dish and goes well with anything and takes very little time.

- Heat the butter in a large pan. When foaming, add 2 tbsp olive oil and the onions. Cook over a medium-low heat until softened and golden, about 30 mins. When the onions have softened, stir in the garlic and thyme. Season and set aside.
- Heat oven to 200C/180C fan/gas 6. Bring a large pan of salted water to the boil, add the potatoes and boil for 5 mins before draining well.
- Mix the drained potatoes with the remaining oil and some seasoning in a large roasting tin. Roast for 30 mins, turning halfway, until golden. Stir in the onion mixture and roast for 10 mins more until hot.

GOAT CHEESE OMELET WITH MIXED HERBS, LYONNAISE POTATOES, GLAZED HAM AND TEXAS TOAST
Steps:
- In a 4-cup liquid measuring cup or large bowl with a spout, gently whisk the eggs with the heavy cream until blended. Whisk in the herbs.
- Heat an 8-inch nonstick skillet over medium-low heat. Add the butter to the pan and swirl to coat the bottom and sides. Stir the egg mixture again, then pour into the pan. Immediately start stirring with a rubber spatula and scraping around the edges of the pan without stopping. Add the salt. As soon as the eggs are just scrambled but still quite wet, spread the eggs in an even layer on the bottom of the pan. Add the cheese in a line down the eggs, perpendicular to the pan handle. Tilt the pan at a 45-degree angle to your serving plate and start nudging the edge of the egg closest to you to roll the top third of the egg over the filling in the center. Keep nudging to roll again into a three-fold omelet. The final roll should flip the omelet out of the pan and onto your plate.
- Mix the paprika, cayenne and 1 teaspoon salt together in a small bowl. Heat the oil in a large skillet over medium heat. Add the potatoes and a pinch of salt; cook, tossing about every 5 minutes, until evenly golden brown, about 15 minutes total. Add the onions and cook, stirring occasionally, until the onions are golden brown and tender, 5 to 7 minutes. Stir in the paprika mixture and season with salt and pepper to taste.
- Combine the maple syrup and apple cider vinegar in a small bowl. Preheat a flat top grill or cast-iron pan over medium-high heat and brush with oil. Sear the ham until golden, flipping halfway through, 2 minutes per side. Glaze the ham with the maple syrup mixture with a heatproof brush and cook 1 minute longer.

Steps:
- Peel and slice the potatoes very thinly (a mandolin works best to get them very thin).
- Peel and slice the onions medium-fine (again the madolin, if you have one).
- Heat the oven to 350 degrees.
- Melt the butter and pork fat, (you can replace the pork fat with butter, but the taste will be different), in a large iron frying pan over a medium low heat and add the onions, cooking them for 4 to 5 minutes until transparent before adding the potatoes.
- Season well with salt and pepper.
- Turn them over occasionally with a wooden spatula and when they have coloured to the blond stage, mix in the parsley.
- Empty the contents of the pan into a large oval gratin dish and cook very slowly in the oven for at least 1 hour or until browned and crusted on the surface and melting underneath.
PAN-FRIED POTATO CAKE WITH ONIONS AND BACON: POTATOES LYONNAISE
Steps:
- Preheat the oven to 450 degrees F.
- Meanwhile, put 1 tablespoon of clarified butter in a saute pan over medium heat. Add the sliced onion and saute until golden brown, about 10 minutes. Stir in the crumbled bacon. Set aside.
- With the julienne blade of a mandoline or the large holes of a shredder/grater, shred the potatoes. By handfuls, squeeze any excess liquid from the shreds and transfer them to a mixing bowl. Add the remaining butter and the salt and pepper and mix well.
- Heat a 10-inch nonstick ovenproof skillet over medium heat. Add the olive oil. Squeezing away any liquid that has accumulated in the bowl, arrange half of the potatoes in an even layer. Spread the sauteed onion over the potatoes, and then top with the remaining potatoes in an even layer. Saute over medium heat until the underside of the potatoes are golden brown, 10 to 15 minutes.
- To flip the cake, slide it out of the skillet browned side down onto a large plate, then invert the skillet over the plate and flip both together to return the cake to the skillet browned side up.
- Put the skillet in the oven and bake until the cake is cooked through, about 10 minutes more. The potatoes should feel tender when the cake is pierced with a skewer or a sharp knife tip. With a spatula, lift 1 side of the cake slightly to check if the underside is well browned. If not, put the skillet on top of the stove over medium-high heat and cook briefly to brown the underside.
- Slide the potato cake onto a serving platter. Garnish with parsley and, with a sharp knife, cut it into 6 wedges. Serve immediately.

JULIENNED POTATOES LYONNAISE
Steps:
- Peel potatoes and drop into cold water to prevent discoloration. Using shredding disk of food processor or hand grater, grate potatoes as finely as possible. There should be about six cups. Drop grated potatoes into basin of cold water and set aside.
- Cut the onion in half lengthwise. Cut each half crosswise into very thin slices. There should be about one cup.
- Heat oil in nonstick 10-inch or 11-inch skillet. When oil is hot, drain potatoes, pat dry and add them to skillet. Add salt and pepper. Cook over high heat, shaking skillet and stirring, so potatoes cook evenly, about 10 minutes. Add butter. Toss and stir. Continue cooking about 2 minutes. Add onions. Toss and stir to blend thoroughly. Continue cooking, tossing and stirring occasionally, about 2 minutes.
- Using back of wooden spoon, press potato mixture to flatten well. Cook over moderately high heat about 2 minutes or until browned on bottom.
- Invert a round plate slightly larger than circumference of the skillet on top of skillet. Quickly turn skillet over so potatoes fall into the plate. Slip potatoes browned side up, back into skillet. Press down with back of wooden spoon.
- Cook on second side until nicely browned, about 2 minutes. Serve immediately.

CONNIE'S LYONNAISE POTATOES
Crispy, butterie and yummy, these simple skillet potatoes are a staple in my home. I remember mom making them when I was a child. Don't know where the recipe orginated. Great recipe for when the oven is holding a roast and you need to make the potatoes on the stove. A great alternative to mashed potatoes.

LYONNAISE POTATOES
There are a few recipes posted on Zaar with the same title; however, this recipe has several different ingredients and it is prepared on the grill. - Preheat grill.
- **Note: to carmelize garlic: Slice 1/4 inch from the bottom of whole heads of garlic, rub with olive oil, and place on the grill, cut side down, over low heat. After about 20 minutes, cover loosely with foil and cook until carmelized, about 25 to 35 minutes**.
- Peel and slice the cooked potatoes 1/4 inch thick. Melt the butter in a heatproof casserole and add the garlic. Alternate Layers of the potao and onion slices in the casserole dish, seasoning each laer with thyme, sage, Tabasco, nutmeg and pepper.
- Pour in the hot stock and sprinkle evenly with the grated cheese.

POTATOES À LA LYONNAISE

- Put the potatoes in a large pot, add enough salted cold water to cover, bring to a boil, and cook until parboiled, 10 to 15 minutes. Drain in a colander and rinse under cool running water. Let cool for a few minutes, then slice the potatoes into ⅛-inch/3- to 4-mm-thick slices. In a large sauté pan, melt 2 tablespoons of the butter. Add about one-quarter of the potatoes and fry, seasoning them with salt and pepper, until golden, about 6 minutes. Transfer to a plate. Continue frying the potatoes, adding more butter each time (you should use about 8 tablespoons/120 g in total), until all of them are cooked. Meanwhile, in another sauté pan, heat the remaining 2 tablespoons/30 g butter over medium heat. Cook the onions until golden, about 5 minutes. Return all of the potatoes to the pan, add the onions, and mix gently. Cook for 5 more minutes for the flavors to combine. Transfer the potatoes and onions to a large baking dish. Bake until gently sizzling, about 10 minutes. Sprinkle the parsley over the potatoes and serve.

POTATOES LYONNAISE
Steps:
- 1. Heat 1 tablespoon butter in 12-inch heavy nonstick skillet over medium-high heat. When foaming subsides, add onion and 1/4 teaspoon salt and stir to coat; cook, stirring occasionally, until onions begin to soften, about 3 minutes. Reduce heat to medium and cook, covered, stirring occasionally, until onions are light brown and soft, about 12 minutes longer, deglazing with water when pan gets dry, about halfway through cooking time. Transfer to bowl and cover. Do not wash skillet. 2. While onions cook, microwave 1 tablespoon butter on high power in large microwave-safe bowl until melted, about 45 seconds. Add potatoes to bowl and toss to coat with melted butter. Microwave on high power until potatoes just start to turn tender (see photos, below), about 6 minutes, tossing halfway through cooking time. Toss potatoes again and set aside. 3. Melt remaining tablespoon butter in now-empty skillet over medium-high heat. When foaming subsides, add potatoes and shake skillet to distribute evenly. Cook, without stirring, until browned on bottom, about 3 minutes. Using spatula, stir potatoes carefully and continue to cook, stirring every 2 to 3 minutes, until potatoes are well browned and tender when pierced with tip of paring knife, 8 to 10 minutes more. Sprinkle with remaining salt and pepper. 4. Add onions back to skillet and stir to combine; cook until onions are heated through and flavors have melded, 1 to 2 minutes. Transfer to large plate, sprinkle with parsley, and serve.
LYONNAISE POTATOES
Steps:
- Place potatoes in a large pot and add water to cover by 3 inches. Add 1 tablespoon of the salt. Bring to a boil, cover, reduce heat to medium low and cook until fork tender (about 30-35 minutes. Drain, place under cold running water until cool and drain again. Let cool completely. Cut into slices 1/2 inch thick. In a large fry pan over medium-high heat, melt 2 tbsp of butter with 3 tbs of olive oil. Add sliced potatoes in a single layers, sprinkle with 1 1/2 tsp salt and cook until golden 7-8 minutes. Turn, season with 1 1/2 tsp remaining salt, cook till golden another 5 minutes. In another pan, melt the remaining 3 tbsp butter with the remaining 2 tbsp olive oil. Add the onions and cook stirring until soft and brown about 15 minutes. Add the onions to the potatoes and serve.
