POTATOES, FETA CHEESE AND PEPPERS DELIGHT

Steps:
- Boil the potatoes in a large pot, leaving the skin on. Stick them with a fork to check if they are cooked, they have to be tender. They will probably need around 30 minutes.
- When cooked, cool the potatoes and peel the skin. Cut them in chunks. Roughly chop peppers and onions and mix with cooled potatoes.
- Get a baking tray, put some cooking paper on it and spread the vegetable mixture.
- Sprinkle with some salt and pepper, add rosemary and oil.
- Mix well.
- Bake for 30 min., or until golden at 400°F.
- Sprinkle crumbled feta cheese. Serve warm.
POTATOES DELIGHT
Steps:
- Preheat oven to 350 degrees Cut potato (either russert or red) into thin slices but not too thin Place potatoes into plastic bag along with parmesan cheese and salt/pepper and flour (2 heaping tablespoons) Shake bag so potatoes are evenly covered Then place potatoes into pie tin with melted butter on the bottom. Make sure there is plenty of butter at the bottom of the tin or they will burn. Once potatoes are on the bottom of the tin...sprinkle bread crumbs and a dash of garlic powder on top. Proceed to cook potatoes for 20 minutes..then turn them over and cook an additional 40 minutes or until lightly brown. Once they are out of pie tin, place on a plate and sprinkle the remnants from the pie tin onto the potatoes for extra flavor - add salt and pepper if desired -- ready to serve! Bon Apetit!
