Great tuna avocado salad as a side dish or meal. Serve on toasted bread (gluten-free if needed), on top of greens, or enjoy it all by itself.

1 ripe avocado
2 (5 ounce) cans flaked light tuna
½ red apple, chopped
½ cup chopped red onion
½ cup chopped celery
¼ cup chopped toasted walnuts
2 tablespoons mayonnaise
1 tablespoon pickle juice
1 teaspoon dried dill weed
½ teaspoon Dijon mustard
¼ teaspoon ground cumin
salt and pepper to taste

Steps:

  • Cut avocado in half, scoop out the flesh into a large bowl, and mash avocado with the back of a fork or potato masher. Add tuna, apple, onion, celery, toasted walnuts, mayonnaise, pickle juice, dill, Dijon mustard, cumin, salt, and pepper; mix well.

Warm potato and tuna salad gets an unexpected kick from chile powder and a cooling counterpoint from creamy avocado dressing.

Number Of Ingredients 12

12 ounces baby red potatoes
1 tablespoon extra-virgin olive oil
1 teaspoon chile powder
1 firm ripe Hass avocado, halved
3/4 cup buttermilk
1/2 cup chopped fresh leafy herbs, preferably mixed, such as parsley, chives, basil, and dill
1 tablespoon fresh lemon juice (about 1/2 lemon)
Kosher salt and freshly ground black pepper
1 head of romaine, chopped
1 1/2 cups frozen corn kernels, thawed (or kernels from 3 ears fresh corn)
2 bell peppers, preferably mixed colors, stemmed, seeded and sliced
Two 5-ounce cans solid light tuna in oil, drained

Steps:

  • Preheat the oven to 400 degrees F.
  • Toss the potatoes with the olive oil and chili powder on a rimmed baking sheet and roast until golden brown and tender, about 25 minutes.
  • Puree half of the avocado in a blender with the buttermilk, herbs, lemon juice, 1/2 teaspoon salt and a few grinds of pepper. Slice the remaining avocado half.
  • Combine the romaine with the corn, bell peppers, warm potatoes and dressing. Season with salt and pepper. Top with the chopped avocado and the tuna, broken into chunks.

⅓ cup plain full-fat greek yogurt
2 ripe avocados, pitted, and peeled, and diced
3 tablespoons lemon juice
¼ cup red onion, divided, plus 2 tablespoons
¼ cup small cucumber, diced
⅓ cup celery
1 lemon, zested
1 clove garlic, grated
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper, plus more for garnish
½ teaspoon red pepper flakes
¾ cup cherry tomato, halved, divided
4 large eggs
4 sourdough breads, cut ½-inch thick on the bias, toasted
⅓ cup radish, sliced
2 tablespoons fresh chives, minced
2 tablespoons fresh dill, chopped

Steps:

  • In a medium bowl, mash together the Greek yogurt, avocados, and lemon juice. Add ¼ cup red onion, the cucumber, celery, lemon zest, garlic, salt, black pepper, and red pepper flakes and mix until evenly combined.
  • Open the Bumble Bee® Premium Albacore Tuna pouches. Place the Bumble Bee® Premium Albacore Tuna on a plate to begin to reflect texture.
  • Fold in ½ cup of the cherry tomatoes and the Bumble Bee® Premium Albacore Tuna.
  • Fill a small pot halfway with water. Bring to a rolling boil over high heat. Add the eggs and cook for 6½-7 minutes. Meanwhile, prepare an ice bath in a medium bowl. Remove the eggs from the pot and immediately transfer to the ice bath to cool for 3-4 minutes. Once cool enough to handle, peel and halve the eggs.
  • To assemble, spread the tuna-avocado mixture over the toasted sourdough bread. Garnishing each slice with 2 halves of a jammy egg, the remaining 2 tablespoons red onion, remaining ¼ cup tomatoes, the radishes, chives, and dill. Finish with a sprinkle of black pepper.
  • Serve immediately.

This is a popular dish along the coast of Peru. Mashed potatoes are spiced with Recipe #430394, they are layered with tuna salad and avocados. For variation, try substituting crab meat, shrimp, or octopus for the tuna. Sliced tomatoes are used in the vegetarian version.

2 1/2 lbs yukon gold potatoes
4 tablespoons hot pepper paste (recipe #430394) or 4 tablespoons chili paste
1/2 cup vegetable oil (olive oil is not recommended)
1/2 tablespoon key lime juice (juice of 1 key lime) or 1 tablespoon fresh lime juice (1/2 a lime)
5 1/2 ounces tuna packed in oil
1/2 medium onion, finely chopped
1 cup mayonnaise, plus more for spreading
1 avocado, pitted and sliced
salt
2 eggs, hard boiled and sliced for garnish
black olives, for garnish

Steps:

  • Boil the potatoes in salted water until tender, about 20 to 30 minutes; peel and mash while still hot.
  • Let potatoes cool and mix with aji amarillo paste, vegetable oil, and lime juice; season with salt.
  • Drain and combine tuna with onions and mayonnaise; set aside.
  • To assemble, layer 1/3 of potato mixture on a serving dish; spread with a thin layer of mayonnaise.
  • Spread avocado slices on top; spread second 1/3 of potato mash over avocados.
  • Cover with the tuna salad, then top with the third 1/3 of potato mash.
  • Garnish with sliced hard cooked eggs around outside and chopped black olives on top.
