SWEDISH MEATBALLS

These Classic Swedish Meatballs are made with tender homemade meatballs in a rich and creamy brown gravy.

2 slices white sandwich bread (crusts removed and cut into 1/4" pieces (or chopped in a food processor))
2 Tbsp heavy cream or whole milk
1 medium yellow onion (grated, saving any juices)
8 oz ground beef
8 oz ground pork
1 large egg
1 tsp dried parsley
1/2 tsp kosher salt
1/4 tsp black pepper
1/4 tsp ground nutmeg (freshly grated is best)
1/4 tsp ground allspice
1 Tbsp vegetable oil
1 Tbsp unsalted butter
3 Tbsp unsalted butter
1/4 cup all purpose flour
3 cups reduced sodium beef broth
1 tsp Worcestershire sauce
1/3 cup heavy whipping cream
minced fresh parsley (for garnish)

Steps:

  • Add bread cubes to large mixing bowl and top with heavy cream and grated onion (plus juices from grating the onion). Stir and let sit a minute or two. Mash with a fork.
  • Add beef, pork, egg, parsley, salt, pepper, nutmeg, and allspice. Mix well.
  • Use small cookie scoop to scoop out and roll into roughly 1 inch wide meatballs.
  • Add oil and butter to large skillet and heat over MED/MED-HIGH heat. Add meatballs, working in batches (about half at a time), and cook on all sides, until browned and mostly cooked through, about 5-7 minutes. Remove to a plate and repeat with remaining meatballs.
  • Drain off any excess oil but don't wipe out the skillet.
  • Add butter to skillet and heat over MED heat. Once melted, whisk in flour and cook, stirring occasionally for 2 minutes.
  • Slowly add beef broth, whisking as you add it, until all broth is added. Whisk in Worcestershire sauce and bring to a simmer.
  • Once gravy is simmering, add all meatballs and simmer 5-7 minutes, until meatballs are cooked through and gravy has started to thicken.
  • Stir in heavy cream and simmer another 2-3 minutes, until gravy is a smooth and silky sauce that coats the back of a wooden spoon.
  • Serve over buttered cooked egg noodles or mashed potatoes and garnished with minced fresh parsley.

Meatballs:
2 tablespoons butter
½ yellow onion, finely chopped
1 ½ teaspoons fine salt
¼ cup milk
2 large eggs
⅓ cup plain bread crumbs
¾ teaspoon freshly ground black pepper
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
1 pinch cayenne pepper, or to taste
1 pound ground beef chuck
1 pound ground pork
Gravy:
2 tablespoons butter
3 tablespoons all-purpose flour
3 ¼ cups beef broth
½ cup heavy cream
½ teaspoon white sugar
¼ teaspoon Worcestershire sauce
salt and freshly ground black pepper to taste

Steps:

  • Melt 2 tablespoons butter in a large skillet over medium heat. Cook and stir onion and 1 1/2 teaspoons salt in butter until onion begins to turn translucent, about 6 minutes.
  • Transfer onion mixture to a large bowl. Add milk, eggs, bread crumbs, black pepper, nutmeg, allspice, and cayenne pepper to the breadcrumb mixture; stir to combine.
  • Mix beef and pork into the bread crumb mixture. Cover with plastic wrap and refrigerate for 1 hour.
  • Melt 2 tablespoons butter in a large skillet over medium heat; whisk flour into butter and cook until golden brown, 4 to 5 minutes. Slowly whisk beef broth into butter mixture.
  • Increase heat to medium-high, whisk cream into mixture and bring to a simmer. Stir sugar and Worcestershire sauce into gravy. Simmer until slightly thickened, 6 to 7 minutes. Season with salt and black pepper. Remove from heat and set aside.
  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and lightly coat foil with cooking spray.
  • Roll 2 to 3 tablespoons meatball mixture into a ball using wet hands; repeat with remaining meatball mixture. Place meatballs on the prepared baking sheet.
  • Bake in the preheated oven until browned, about 20 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Transfer meatballs to the gravy and cook over medium-low heat until warmed through, about 5 minutes.

A very old Swedish recipe. We always have this on Christmas. The recipe says to serve this with a separate gravy-we just make a simple gravy from the pan drippings. I have substituted venison for the beef.

1/2 lb ground lean pork
2 medium potatoes, raw, peeled and grated
1 slice bread, crumbled
2 whole eggs, beaten
1 teaspoon salt

¾ cup rolled oats
8 teaspoons potato flour
1 teaspoon salt, or to taste

2 teaspoons ground allspice
2 tablespoons vegetable oil

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Mix cream, oats, potato flour, salt, and pepper together in a bowl. Let sit for 10 minutes at room temperature to allow oats to absorb the liquid; paste should have the consistency of mashed potatoes.

1/2 cup crushed saltines (about 10 crackers)
