3 medium potatoes (about 1-1/2 pounds)
1 cup fat-free cottage cheese
1/2 cup reduced-fat sour cream
1 tablespoon fat-free milk
1 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon garlic powder
2 tablespoons sliced green onion
1/2 cup shredded reduced-fat cheddar cheese

Steps:

  • Place the potatoes in a large saucepan and cover with water. Cover and bring to a boil. Reduce heat; cook for 10-15 minutes or until tender. Drain. Peel potatoes and cut into cubes. , In a blender or food processor, combine the cottage cheese, sour cream, milk, sugar, salt and garlic powder; cover and process until smooth. Transfer to a large bowl; stir in the potatoes and onion. , Pour into a 1-qt. baking dish coated with cooking spray. Bake, uncovered, at 350° for 30 minutes. Sprinkle with cheese. Bake 15 minutes longer or until the cheese is melted.

This is a great potato recipe. I have served it at family and company dinners and there's never any left over. Also great for potlucks.

6 large potatoes
2 cups sharp cheddar cheese, grated
1/2 teaspoon garlic powder
1/2 teaspoon onion salt
1 can mushroom soup or 1 can chicken soup (Campbells)
1/3 cup milk
1 cup sour cream
bacon bits
breadcrumbs

Steps:

  • Boil potatoes until they can be grated easily (not quite done).
  • Combine sour cream, soup, milk, cheese, garlic powder and onion salt.
  • Add to potatoes and mix well.
  • Put in a 9x13 baking dish.
  • Top with bacon bits and sprinkle lightly with breadcrumbs.
  • Bake at 350 degrees for 30 minutes.

1 can (16 oz.) yams/sweet potatoes in heavy syrup*
1 stick butter
2 eggs
1 1/2 cups sugar
3 Tbsp flour
1 can (5 oz.) evaporated milk
1 tsp lemon extract
1 tsp vanilla extract
1 tsp almond extract
1 pack large KRAFT Marshmallows (small if you would like)-optional
1 tub (8 oz.) COOL WHIP Whipped Topping

Steps:

  • Cover and simmer potatoes, in syrup, for at least 1 hour. Drain.
  • Whip potatoes and butter until fluffy. Add remaining ingredients and continue whipping until fluffy again. Pour into greased 1 quart casserole dish. Bake for 1 hour at 375°F. To assure the casserole is done insert a toothpick in the middle, and if it comes out clean it is ready.
  • When the toothpick starts to come out clean, place the KRAFT marshmallows around the top of the casserole, and continue to bake-make sure not to let them burn, but it they are nice when crisp and light brown top. (If you do not want to use marshmallows, COOL WHIP whipped topping is also an option.) Remove, let cool, and serve warm--leftovers, when cold, are also delicious.
