5 Sweet potatoes - peeled and sliced into thin rounds
3 Tbsp. of butter
2 Large onions - peeled and thinly sliced
2 cloves of garlic - chopped
1 1/2 Cups of heavy whipping cream
1 1/4 Cups of grated parmesan
1 tsp. of salt
1 tsp. of pepper
Olive oil
1 Tbsp. of dried parsley

Steps:

  • Preheat oven to 375°F. Oil a 8" x 8" baking dish. In a skillet, heat butter and add onions and garlic on low heat and cook for 15 minutes. Place 1 layer of sliced potatoes overlapping slightly, 1 layer of onions, drizzle cream and sprinkle with parsley, and 1/4 cup of parmesan. Continue to make layers until the dish is filled. Sprinkle remaining parmesan to top layer. Cover with foil and bake for 40 minutes and then uncover and continue baking for another 25 minutes until potatoes are tender and top is brown. Let it rest for 15 minutes. Additional Notes: Substitute parmesan with goat cheese.

4 lb medium boiling potatoes
1 1/2 teaspoons fine sea salt
1 cup heavy cream
1 cup whole milk
3 tablespoons unsalted butter, softened
7 oz finely grated Parmigiano-Reggiano (3 1/2 cups)

Steps:

  • Put oven rack in middle position and preheat oven to 350°F.
  • Peel potatoes and cut into 1/8-inch-thick slices with a knife or an adjustable-blade slicer, spreading slices out on a large kitchen towel. Sprinkle with sea salt (1 1/2 teaspoons).
  • Stir together cream and milk.
  • Dot bottom of a 3-quart shallow baking dish (13 by 9 inches) with half of butter and pour in 1/3 cup cream mixture. Without rinsing or drying potatoes, divide into 5 piles. Layer potatoes in baking dish, 1 pile per layer, spreading 1/3 cup cream mixture and one fourth of cheese between layers. Drizzle remaining cream mixture over potatoes and dot with remaining butter.
  • Bake, uncovered, until potatoes are very tender and top is browned, about 2 hours. Let stand at room temperature 10 minutes before serving.

2 1/2 pounds russet potatoes, peeled, cut into 1/8-inch-thick slices
1/4 cup (1/2 stick) butter, melted
2 cups (packed) freshly grated Parmesan cheese (about 10 ounces)
2 cups whole milk

Steps:

  • Preheat oven to 400°F. Butter 13 x 9 x 2-inch glass baking dish. Layer 1/3 of potatoes evenly in prepared dish. Sprinkle with salt and pepper. Drizzle with 1/3 of melted butter. Top with 1/3 of Parmesan cheese. Repeat layering twice more with remaining potatoes, butter and Parmesan cheese. Pour milk evenly over.
  • Bake potatoes 15 minutes. Reduce temperature to 350°F. Continue to bake until potatoes are tender, top is golden brown and most of milk is absorbed, about 1 hour longer. Remove from oven; let stand 10 minutes and serve.

This is a simple and delicious Potato Gratin. I usually add some fresh minced herbs such as sage, thyme or parsley. I also never peel my potatoes no matter what potato dish I am making. (Except for gnocchi lol) Prep time is approximate. This is adapted from Cooks Illustrated, Nov. 1995 issue. I hope you enjoy as much as we do!

2 large garlic cloves, peeled and smashed
2 tablespoons unsalted butter, softened
2 1/4 cups low sodium chicken broth
1/2 teaspoon table salt
1/8 teaspoon ground black pepper
1 bay leaf
1 pinch cayenne pepper (optional)
2 lbs russet potatoes, peeled and sliced 1/8-inch thick or less
1/4 cup parmigiano-reggiano cheese, grated

Steps:

  • Adjust oven rack to center position and heat oven to 350 degrees.
  • Rub bottom and sides of 5- to 6-cup gratin dish or shallow baking dish with garlic. Mince remaining garlic and set aside. Once garlic in dish has dried, about 2 minutes,spread dish with half the butter.
  • Bring broth, salt, pepper, bay leaf, cayenne (if desired), potatoes, other herbs if you are using and reserved garlic to boil in medium saucepan over medium-high heat, stirring occasionally with wooden spoon (liquid will just barely cover potatoes). Reduce heat and simmer until liquid thickens, about 2 minutes.
  • Pour potato mixture into prepared dish; shake dish or use fork to distribute potatoes evenly. Gently press down potatoes until submerged in liquid; dot with remaining butter.
  • Bake for about 1 hour 15 minutes until golden brown, basting once or twice during first 45 minutes and topping with grated parmesan cheese after 45 minutes. Let rest 5 minutes and serve.

3 pounds orange-fleshed sweet potatoes
salt and fresh-ground black pepper to taste
8-10 oz. log soft goat cheese
1 cup half and half
2 tsp. dried thyme
1 1/2 cups coarsely grated Parmesan

Steps:

  • Preheat oven to 375F/190C. Take goat cheese out of the fridge and let it soften at room temperature. Spray a 3-4 quart glass casserole with with non-stick spray or olive oil. (I used an oval 4-quart baking dish, but any 3-Quart Baking Dish would have been big enough.) Peel the sweet potatoes and cut into slices about 1/4 inch thick. (Don't make them too thick or they will take longer to cook.) Put the softened goat cheese in a small bowl, add the half and half and the thyme, and whisk together until it's smooth. (You can put the package of goat cheese in the microwave and heat in 10 second intervals until it's soft to make this easier to mix.) Layer half the sweet potatoes in the baking dish and season well with salt and fresh-ground black pepper. Spread half the goat cheese mixture over the sweet potatoes and sprinkle on half the grated Parmesan. Make another layer each of sweet potatoes seasoned with salt and pepper, goat cheese mixture, and Parmesan. Cover the dish tightly with foil and bake 1 hour (or until the sweet potatoes are quite soft when you stick a fork in them.) Remove foil and bake 20-30 minutes more, until the sweet potatoes are very soft and the top is nicely browned. Serve hot. This will stay good in the fridge for several days and may have reheated a little too well, if you know what I mean. (I haven't tried it, but I'm guessing the dish could be assembled in advance, refrigerated, then allowed to come to room temperature when it comes out of the fridge and baked later in the day, or possibly even the next day. If anyone tries that, please let us know how it works.)
