1 tsp olive oil
3 1/2 pounds beef chuck roast
1 large yellow onion (, peeled and cut into wedges)
1 bay leaf
3 large potatoes (, unpeeled and cut into 1 inch chunks)
5-6 large carrots (, unpeeled and cut into 2 inch pieces)
salt and pepper (, to taste)

Steps:

  • Take the beef roast out of refrigerator and bring to room temperature, about 30 minutes, before cooking.
  • Preheat oven to 325F/163C degrees. Heat oil in a large (5-7 quart), heavy dutch oven pot over medium high heat until hot. Place meat in pot and cook, without turning, until bottom is well browned. Using tongs, turn meat and brown on all sides.
  • Push meat to the side of pan, add the onion, and lightly brown. Stir in the bay leaf and set the meat on top of the onion mixture.Scatter the potatoes and carrots around the meat. Sprinkle with salt and pepper.
  • Cover the pot with a lid or foil and roast in oven for 30 minutes at 325F/163C degrees.
  • Reduce temperature to 300F degrees and cook another 1 1/2 hours, or until tender. Serve immediately.

1 boneless beef chuck roast (4 to 5 pounds)
1 tablespoon canola oil
1 cup water
1 cup hoisin sauce
3 medium plums or 6 pitted dried plums (prunes), halved

Steps:

  • Place onion in a 5-qt. slow cooker. Cut roast in half. In a large skillet, heat oil over medium-high heat; brown meat. Transfer meat to slow cooker. Combine water and hoisin sauce; pour over meat. Top with plums. Cook, covered, on low until meat is tender, 8-10 hours. If desired, skim fat.

1 boneless whole pork loin roast (4 pounds)
2 tablespoons canola oil
1 cup sherry
2 tablespoons dried thyme
2 tablespoons soy sauce
4 garlic cloves, minced
1 tablespoon ground mustard
1-1/2 teaspoons ground ginger
1 teaspoon garlic salt
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup plum jam
2 tablespoons cornstarch
1/4 cup cold water

Steps:

I'm not sure where I got this from but it is so delicious. I usually skip the browning step & just throw it in the slow cooker, the meat is so tender it flakes rather than slices, the sauce is to die for too.

1 1/2 kg round beef roast or 1 1/2 kg topside steak roast
3 tablespoons oil
45 g French onion soup mix
1 cup plum sauce
1/4 teaspoon chili powder
1/4 teaspoon nutmeg
1 teaspoon brown sugar
375 ml beer
2 teaspoons cornflour (optional)

Steps:

  • Brown roast in the oil.
  • Combine soup mix, sauce, seasonings, sugar & beer, blending to mix.

1/4 cup honey
3 tablespoons cider vinegar
3 garlic cloves, minced
2 teaspoons ground ginger

1 large onion, halved and sliced
2 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • Sprinkle roast with salt and pepper. In a large skillet, heat oil over medium-high heat. Brown roast on all sides. Transfer meat to a 5- or 6-qt. slow cooker. 1 boneless chuck roast, about 3 1/2 to 4 lbs
2 tablespoons olive oil, divided
3 tablespoons green onions, finely chopped
2 shallots, finely chopped
2 tablespoons gingerroot, grated
2 garlic cloves, minced
2 (15 ounce) cans sweet whole purple plums in heavy syrup, drained, pitted, and coarsely chopped
1 1/2 cups beef broth
1/2 cup plum wine
1/4 cup teriyaki sauce
2 tablespoons cider vinegar

Steps:

  • Brown the roast in 1 tbsp olive oil in a dutch oven over medium-high heat. Add green onions; cook, stirring constantly, until lightly browned. Remove roast and green onions temporarily.
  • Add the additional 1 tbsp olive oil to the dutch oven. Cook the shallot, gingerroot, and garlic in the dutch oven over medium-high heat, stirring constantly, until tender. Add the plums and the next four ingredients. (See recipe description for substitute for the plum wine). Stir well.
  • Return the roast to the dutch oven, spooning the sauce over the roast. Cover and bake at 350 degrees for 3 to 3 1/2 hours or until the meat is tender. Serve the roast with the sauce.
