For some time, I've been trying to find the ultimate brownies recipe. I was looking for something rich, chocolatey, moist and not overly sweet. I've tried out a few recipes, some from this site. Some were good, some were mediocre, but none were quite what I was looking for. Then I found this recipe in my town's local newspaper, in a section called "Mayah's corner of sweets". I figured I might as well try it, and I'm very glad that I did. Description and recipe were translated by yours truly from Hebrew into English. I would suggest using a good quality chocolate, with at least 60% cocoa solids. "Mayah's" orginal description: "The most chocolatey American baked good that I can think of. Excellent with a hot cup of tea or coffee in cold weather. Heart warming. For chocolate lovers only..."

4 eggs
1 1/2 tablespoons instant coffee granules
1 1/2 teaspoons vanilla extract
1 cup sugar
250 g bittersweet chocolate
250 g butter
1/2 teaspoon salt
1 cup flour
4 1/2 tablespoons cocoa

Steps:

  • Combine eggs, coffee, vanilla extract and sugar. Mix well.
  • Melt chocolate and butter together in microwave. stir every minute or so and continue heating until the mixture is fully melted.
  • Combine egg mixture with chocolate mixture and mix.
  • Combine flour, salt and cocoa.
  • Add egg-chocolate mixture to the flour mixture, mix well.
  • Pour batter into a 30cmX25cm (~ 10X12 in inches) buttered baking pan.
  • Put into oven, preheated to 180C (350F). Bake for 25 minutes.
  • Allow to cool completely before cutting into squares.

1 1/2 cups granulated sugar*
3/4 cup all-purpose flour
2/3 cup cocoa powder (sifted if lumpy)
1/2 cup powdered sugar (sifted if lumpy)
1/2 cup dark chocolate chips
3/4 teaspoons sea salt
2 large eggs
1/2 cup canola oil or extra-virgin olive oil**
2 tablespoons water
1/2 teaspoon vanilla

Steps:

  • Preheat the oven to 325°F. Lightly spray an 8x8 baking dish (not a 9x9 dish or your brownies will overcook) with cooking spray and line it with parchment paper. Spray the parchment paper.
  • In a medium bowl, combine the sugar, flour, cocoa powder, powdered sugar, chocolate chips, and salt.
  • In a large bowl, whisk together the eggs, olive oil, water, and vanilla.
  • Sprinkle the dry mix over the wet mix and stir until just combined.
  • Pour the batter into the prepared pan (it'll be thick - that's ok) and use a spatula to smooth the top. Bake for 40 to 48 minutes, or until a toothpick comes out with only a few crumbs attached (note: it's better to pull the brownies out early than to leave them in too long). Cool completely before slicing.*** Store in an airtight container at room temperature for up to 3 days. These also freeze well!

40 g plain flour
1 teaspoon baking powder
25 g cocoa powder
140 g chocolate
3 eggs
225 g sugar
1 teaspoon vanilla essence
100 g mayonnaise
55 g walnuts

Steps:

  • .Grease a 23cm (9in) square cake tin and line with baking paper. Sift the flour with the baking powder and cocoa into a bowl.
  • Put the chocolate into a heatproof bowl over a saucepan of hot water and leave until melted (alternatively microwave on medium pwer, stirring occasionally, until the chocolate is just melted).
  • In a large bowl, whisk the eggs with the sugar and vanilla until slightly thickened. Whisk in the chocolate mixture. Fold in the flour mixture, mayonnaise, and walnuts. Pour into the prepared tin and bake in a preheated oven at gas 4, 180C, fan 160C for 30-35 minutes or until a skewer inserted into the centre comes out clean.
  • Leave to cool in the tin before cutting into squares. Serve with ice cream.
