½ cup butter
1 large onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 pound linguica sausage, cut into cubes
1 teaspoon ground black pepper
1 teaspoon dried basil
½ teaspoon dried oregano
1 (15.5 ounce) can prepared shelled beans
2 ½ cups water
2 cups uncooked white rice

Steps:

  • Melt butter in a large, heavy pot over medium-high heat; add onion, green bell pepper, red bell pepper, sausage, black pepper, basil, and oregano. Saute vegetable mixture until the vegetables are very tender, 10 to 15 minutes.
  • Stir beans into the vegetable mixture; cook until softened, about 5 minutes.
  • Pour water over the vegetable mixture; add rice and stir. Place a cover on the pot, reduce heat to low, and cook until the rice is tender and the moisture completely absorbed, 20 to 25 minutes.

This was always a family staple and while searching the Portuguese recipes, I noticed it wasn't there and I just have to add it.

2 cups water
1 cup white rice
2 cups hot milk (whole works best)
1 cup sugar
1 fresh lemon rind (use a vegetable peeler for big pieces for easier removal)
cinnamon

Steps:

  • Bring water to a boil in medium saucepan.
  • Add rice and cover, simmering for 20 minutes.
  • Add milk, sugar and lemon rind, stirring constantly until thickened to oatmeal consistency, about 15-20 minutes.
  • It will also thicken some while cooling.
  • Pour into one large serving plate and remove lemon rind.
  • Spread flat and allow to cool on wire rack.
  • You can be decorative with cinnamon by pinching a bit between your fingers and place while your hand is no more than an inch away from the rice (criss cross patterns are traditional), or you can just dust the entire top with the cinnamon.
  • Serve at room temp, but refrigerate uneaten portion.

PORTUGUESE CHOURICO, BEANS, AND RICE

I grew up on chourico, and this dish is a Portuguese comfort food that my mom always made. I took it upon myself to replicate it with a bit more kick, but even with the changes, it reminds me of being a kid. It's such a warm and satisfying dish.

2 cups water
1 cup uncooked white rice
2 tablespoons olive oil
1 dried chourico sausage, halved lengthwise and cut into 1/4-inch slices
¼ Spanish onion, finely chopped
3 cloves garlic, minced
1 ½ cups tomato sauce
½ teaspoon red pepper flakes
1 teaspoon Italian seasoning
salt and pepper to taste
½ (14.5 ounce) can fava beans, rinsed and drained

Steps:

  • Bring the water to a boil in a pot; stir the rice into the boiling water, reduce heat to low, place cover on the pot, and allow the rice to cook until all the moisture is absorbed, about 30 minutes.
  • As the rice cooks, heat the oil in a skillet over medium heat. Cook the chourico in the hot oil for 2 minutes. Add the onions and garlic to the sausage and continue cooking until the vegetables are soft and the chourico has browned, 5 to 7 minutes.
  • Stir the tomato sauce into the chourico mixture. Reduce heat to low. Season with the red pepper flakes, Italian seasoning, salt, and pepper; simmer until thoroughly heated, 10 to 15 minutes. Stir the fava beans into the mixture and continue cooking just long enough for the beans to heat, 2 to 3 minutes. Serve over rice.

My mom taught me how to make this when I was a teenager and I've been making it ever since. This is great to accompany a fish dish.

2 tablespoons olive oil
1/2 onion, chopped
2 garlic cloves, minced
3 tablespoons pimento paste (optional)
1/4 cup fresh parsley, chopped
1 (5 ounce) can clams, undrained
1 1/4 cups short-grain rice
1 1/4 cups canned tomatoes, pureed

Steps:

  • In a saucepan, cook onion and garlic in oil until tender.
  • Add pimento paste and parsley. Cook for a couple of minutes.
  • Drain clams but reserving liquid.
  • Add the clams to the saucepan. Measure clam juice and add enough water to measure 1 1/4 cups of liquid.
  • Add rice and tomatoes and bring to boil. Cover and reduce heat to low for 20 minutes.
  • Add salt if necessary.

Steps:

  • Stir rice, tomatoes, red bell pepper, spring onions, salt, and parsley into the saucepan. Pour in water and add chicken bouillon cubes. Reduce heat and simmer, partially covered, until flavors are combined, about 15 minutes. Stir in sliced cabbage. PORTUGUESE SWEET RICE (ARROZ DOCE)



Portuguese Sweet Rice (Arroz Doce) image

Sweet Rice is as individual as the cooks who make them. I've tasted sweet rice by different cooks, but I've never tried one that came close to the creamyness, and sweet, lemony flavour of my grandma's rice. This is her recipe. It takes about 30-45 minutes to make, but the results are well worth it.

2 cups water
1 -2 lemon
1 teaspoon salt
1 teaspoon margarine
1 cup rice
4 cups milk (I use 2%)
1 1/2 cups sugar
3 egg yolks

Steps:

  • Turn stove to maximum. In a large pot add water. Peel most of the rind from one lemon and add the peels to the pot. Set lemon aside and turn stove down to medium.
  • Add salt and margarine.
  • When water is boiling, add rice. Stir constantly.
  • When most of the liquid boils away, add 1/2 cup of milk. Stir. Repeat this step until all the milk is added.
  • Remove rind from pot.
  • Grate the rest of the lemon zest and add it. Add sugar. Remove pot from element.
  • Slowly stir in egg yolks. (add a little bit of milk to the yolks first).
  • Return pot to the element just until the rice boils. Stir constantly to avoid burning!
  • Pour into casserole dish and allow to cool slightly before covering.
  • Just before serving, sprinkle cinnamon on top.
  • Tip: for a stronger lemon flavour, use two lemons. Peel most of the rind from one for the cooking process, and grate most of the zest from a second lemon to add at the end. For a weaker flavour, use only one lemon and make it stretch for both.

1 c white rice (i use medium grain rice. this is my preference, but feel free to use what you have on hand).
1 c water
3 c milk
2 Tbsp butter
1 pinch salt
1 c sugar
1 lemon rind
1/2 tsp vanilla
3 egg yolks
cinnamon

Steps:

  • 1. Bring water, milk, butter, and rice to a simmer. Add lemon peel, sugar, and pinch of salt.
  • 2. Cook over low heat, stirring occasionally, for about 25 minutes or until rice is tender.
  • 3. Remove from heat. Add in egg yolks one at a time, mixing after each addition. Stir in vanilla.
  • 4. Return to heat and bring to a boil. Cook over low heat for an additional 5 minutes.
  • 5. Remove lemon rind. Pour into a serving platter or individual dishes and sprinkle generously with cinnamon!

PORTUGUESE DUCK RICE

This is a version of the classic Portuguese dish of duck & rice, which uses the fragrant, fatty poaching stock from the duck to cook the rice

1 whole duck , trimmed of excess fat and jointed
small pack coriander
2 bay leaves
1 thyme sprig
1 star anise
1 leek (green top only, keep the white part for the rice)
1 onion , halved
1 carrot
1 large orange , zested and juiced
2 tbsp olive oil
reserved white part of the leek
1 onion , sliced
1 garlic clove
250g basmati rice
100g chorizo , cubed
mint or coriander leaves, to serve
salad , to serve (optional)

Steps:

  • Put the duck in your largest pan, cover with water and add the coriander, bay, thyme, star anise, leek top, onion, carrot, orange zest and a grinding of black pepper. Place over a medium heat and bring to the boil, skimming off any scum from the surface. Turn down the heat slightly, cover and simmer for 45 mins, then turn off the heat and let the duck cool in the stock for 15 mins. Drain the stock from the duck, reserving it to cook the rice. Leave the duck to rest until cool enough to handle, then shred the meat away from the bone.
  • Heat oven to 180C/160C fan/ gas 4. To make the rice, heat the oil in a large frying pan over a medium-high heat and sauté the leek, onion and garlic for 10-12 mins or until soft and aromatic. Add the rice and fry for 5 mins or until the grains are turning golden and crispy, and sticking to the pan. Add 400ml of the duck stock and cook for 15 mins, covered, without stirring, or until the rice is puffed and dry.
  • Stir the duck meat and orange juice through the rice, season, then transfer the mixture to an oiled roasting tin or casserole dish. Top with the chorizo and place on a high shelf in the oven to cook for 20-25 mins or until the rice is crisp and golden. Garnish with coriander or mint leaves, and serve with a salad, if you like.

1 tablespoon cider vinegar
1/3 cup olive oil
1 medium yellow onion, diced
2 green bell peppers, diced
1 cup tomato sauce
2 beer, bottles of
3 cups short-grain rice
3 1/2 cups water
2 tablespoons salt
1 teaspoon black pepper
1 1/2 lbs mixed frozen seafood (shrimp, squid, crab, fish)

Steps:

  • in a large pot mix seafood with enough beer to cover.
  • cook the seafood over medium heat for about 5 minutes or just enough so the seafood can warm up in the beer.
  • remove the mixture from the pot and let it sit in the beer.
  • dice the onions, garlic and green pepper.
  • heat the olive oil and saute the onion, pepper and garlic until lightly browned.
  • add the tomato sauce, 1 bottle of beer and the seafood mix and continue cooking that for about 5 minutes over medium heat.
  • stir in the remaining ingredients and bring to a boil.
  • reduce the heat to low, stir the mixture well, cover it and cook for 30 minutes. (do NOT stir) or until the liquid has evaporated.

1 yellow onion, finely chopped
3 garlic cloves, minced
3 cups long grain white rice, washed and drained
4 cups boiling water
1 bay leaf
2 medium tomatoes, chopped
1/2 teaspoon salt

Steps:

  • In a 4-quart pot, heat the oil over medium-high heat. Add the onions and garlic and stir-fry until golden. Add the rice and cook, stirring constantly, until slightly toasted and fragrant, 2 to 3 minutes. Add the water, bay leaf, tomatoes and salt and bring to a boil. Cover and reduce the heat so that the rice just simmers. Cook undisturbed until tender, about 20 minutes. Remove from the heat and let stand covered without stirring for 10 minutes.
  • Fluff with a fork, discard the bay leaf, and serve.

2 1/2 c white long rice
2 bay leaves
1 1/2 lb linguica(portuguese sausage or turkey sausage)
1 Tbsp tomato paste (with salt added preferred)
10 oz lima beans(freezer section )or can add red kidney beans 2 cans is fine.)
1 large onion (chopped)
1 Tbsp garlic (minced)or 3 fresh garlic cloves minced garlic
1/2 tsp white pepper (or good pinch of red pepper flakes
1-2 Tbsp portuguese olive oil (or italian olive oil works okay too'
you can italian sausage instad of turkey sausage mild or hot.)

Steps:

  • 1. HEAT olive oil in a 2 quart saucepan. FRY your linguica,seasoning with salt and pepper.
  • 2. ADD Onions,and garlic, sauteeing until onions are tender and translucent;be careful not to burn the garlic.
  • 3. ADD WATER, tomato paste,and bay leaves,stirring until the tomato paste is dissolved. ADD your beans,and rice,stirring to combine;bring to a boil on high temperature.
  • 4. WHEN boiling ,turn to medium low heat and cover,cooking 20-30 minutes.
  • 5. CHECK occasionally,stir to avoid sticking,lowering the heat a smidge further if needed;rice should be fairly dry when cooked completely .
  • 6. REMOVE the bay leaves, before serving.

Remembered I had this recipe in a 1983 cookbook.This is really good--not the strong taste you might think. If you like chicken livers, you'll like this. Not as complicated as it sounds!!

3/4 lb chicken liver
3 tablespoons butter or 3 tablespoons margarine
salt and pepper
4 tablespoons olive oil
2/3 cup minced onion
1 clove garlic, minced
1 1/2 cups long-grain rice
3 cups chicken broth (canned okay)
3/4 cup tomato sauce (canned okay)
1/2 teaspoon dried basil
1/2 teaspoon dried oregano

Steps:

  • Heat butter in a skillet and saute livers over medium heat about 3 minutes until brown, but still pink inside.
  • Remove and season with salt& pepper, chop coarsely and put aside.
  • Heat the oil on medium heat.
  • Add onion and garlic and saute until soft.
  • Add rice, saute until rice just starts to take on a clear color.
  • Don't scorch the rice.
  • Add broth and tomato sauce.
  • Mix well and bring to a boil.
  • Add all other ingredients, except livers.
  • Cover& cook over med.
  • heat for about 10 minutes.
  • Stir lightly with a fork, reduce heat, cover and cook for about 10 minutes more until liquid is almost absorbed.
  • Mix in the livers, stir,cover.
  • Cover and cook until the liquid is absorbed and the rice is cooked through.
  • Add more liqid if needed (a little water is okay).

MOM'S PORTUGUESE STYLE CHICKEN AND RICE



Mom's Portuguese Style Chicken and Rice image

Everyone who tries this loves this dish. This is an old family favorite...even my German husband says this is his favorite dish!

2-3 lb cut up chicken pieces
1 large onion, diced
1-1 1/2 c long grain rice (uncle ben's)
1 can(s) tomato paste (6 oz can)
1-2 tsp cinnamon
1-2 tsp paparika
dried red crushed peper - to taste
salt & pepper to taste
64 oz chicken broth (optional)
2 tsp garlic powder or 1 tbs dried minced garlic

Steps:

  • 1. Put chicken in pan and cover with water (or chicken broth if you prefer), then add all remaining ingredients except the rice. Bring to boil, then simmer until chicken is tender. Remove chicken from cooking liquid and add rice( If it looks as though you have too much liquid, remove some and set aside--add to rice if needed later). When rice is cooked, return chicken to pan and toss with cooked rice. Most of the cooking liquid should be absorbed. Serve with tossed salad.

Portuguese Beans With Rice image

As with most Portugese recipes, simple ingredients with tasty results! It calls for dried beans, so be sure to soak them overnight beforehand. I would like to try this with a short grain brown rice instead of aborio.

12 ounces dried white beans
4 ounces chorizo sausage (chopped into bite sized pieces)
8 ounces arborio rice (or other short grain rice)
3 ounces bacon
1 onion
4 tablespoons olive oil
2 ripe tomatoes
2 garlic cloves, minced
1 bay leaf
2 tablespoons fresh parsley, minced
1 pinch red pepper flakes
1/4 teaspoon salt (or to your taste)

Steps:

  • Soak the beans overnight for at least 6 hours. Drain them and put them into a pot, covering them with cold, lightly salted water. Add in the chorizo. Cover and bring to a boil then lower the heat and allow to simmer for about an hour until the beans are tender but not overcooked.
  • While the beans are cooking, prepare the rice by boiling it in lightly salted water and straining once al dente. (Or you could use your rice cooker). Set the rice aside.
  • Peel the onion and garlic and chop together with the bacon. Saute them together in a pan with the olive oil. Clean the tomatoes, removing their seeds, and dice them, then add them to the saute pan.
  • Add the bay leaf, parsley, salt and pepper to the pan, as well as the red pepper flakes if you are using. Allow to cook on medium heat until the onions are fully cooked.
  • Add the rice to the pan, keep stirring, allowing the rice to soak up all the flavours in the pan for a minute or two.
  • Put the rice mixture into a bowl and stir in the drained beans and chorizo. Enjoy!

1 1/2 c long grain rice
1/2 c long grain rice
2 small onions, chopped
1 green pepper, chopped
4 dozen littleneck clams, scrubbed
4 cloves garlic, minced
3 c whole tomatoes
1 tsp saffron (or tumeric)
1 lb linguiça, with the casing removed
salt and red pepper flakes to taste

Steps:

  • 1. Steam the clams in very little water until they open. Discard any that do not open and set the clams aside. Reserve the cooking liquid, being careful to keep any sand the clams expel at the bottom of the pot. Sauté the rice in the olive oil until golden brown. Add the onion, green pepper, garlic and linguiça. Cook for 5 minutes, stirring occasionally. Break the tomatoes up with the back of a spoon, saving the juice (to use if needed when cooking the rice), and add to the rice mixture. Cook over a low flame until the rice is soft. Add some of the reserved clam juice when necessary. Remove the clams from their shells, keeping 8 to 10 in the shells for garnish. Add the clams and saffron. Mix well and serve with Portuguese bread.

This is from "Cuisines of Portuguese Encounters", where the author put together the dishes she encountered while going through the Portugal and its former colonies. I haven't made it yet. Times don't include the 2-hour chillng time, nor the time to precook a few ingredients.

2 cups cooked rice (cold)
1 granny smith apple (peeled, cored, and julienned)
1/2 avocado (peeled and sliced)
1 tablespoon chopped pimiento
1 cup cooked peas
1 tablespoon lemon juice
1 tablespoon white vinegar
2 tablespoons olive oil
1 teaspoon mustard
1 teaspoon salt
1/4 teaspoon black pepper
1/2 head lettuce, shredded
3 eggs, hard-boiled
1/2 lb shrimp, cooked

Steps:

  • Place rice in large bowl. Add apple, avocado, pimiento and peas.
  • In a smaller bowl, mix lemon jjuice, vinegar, olive oil, mustard, salt and pepper. Add it to the rice mixture. Mix well. Pack into a mold. Chill at least 2 hours.
  • Arrange lettuce on a platter, and unmold rice on top. Decorate it with the sliced hard-boiled eggs and shrimp.

MIKE'S PORTUGUESE TUNA RICE CASSEROLE

This is a very Portuguese recipe but I don't know it's exact name. Anyone make this at any time because you have all the ingredients already.

3 cups water
1 ½ cups uncooked white rice
1 tablespoon butter
1 tablespoon olive oil
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
2 (5 ounce) cans tuna, drained
¾ cup heavy cream
3 tablespoons ketchup
1 teaspoon hot pepper sauce
salt and pepper to taste
½ cup sliced black olives
½ cup shredded Cheddar cheese

Steps:

  • Bring the rice, water, butter, and 1 tablespoon olive oil to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Heat 1 tablespoon of olive oil in a skillet over medium heat. Stir in the onion and garlic; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the tuna, cream, ketchup, hot sauce, salt, and pepper. Simmer on low until the mixture thickens, about 10 minutes.
  • Cover the bottom of an 8 inch square baking dish with half of the cooked rice. Spread the tuna mixture over the rice and cover with the remaining rice. Sprinkle the olives and cheese over the top of the rice. Bake until the cheese melts and the casserole is heated through, 15 to 20 minutes.

PORTUGUESE RICE AND SALT COD SALAD

Number Of Ingredients 15

3 tablespoons plus a drizzle Portuguese olive oil
2 cups chopped yellow onions
Salt
Freshly ground black pepper
2 tablespoons chopped garlic
1 cup chopped green onions
2 tablespoons finely chopped freshly parsley leaves
3 medium tomatoes, seeded and chopped
1 tablespoon crushed red pepper
2 pounds salt cod, soaked, rinsed, patted dry and julienned
1 pound cooked long-grain white rice
1 lemon, juiced
1/2 head iceberg lettuce
6 hard-boiled eggs
6 ounces queen stuffed green olives

Steps:

  • In a large saute pan, heat 3 tablespoons of the oil. When the oil is hot, add the onions. Season with salt and pepper. Saute until golden, about 3 to 4 minutes. Add the garlic, green onions, parsley, and tomatoes. Season with salt and pepper. Continue to cook for 2 to 3 minutes, or until the tomatoes are soft. Add the crushed red pepper and salt cod. Continue to cook for 3 minutes, stirring constantly. Remove from the heat and turn into a mixing bowl. Add the rice and lemon juice, mix thoroughly. Drizzle in enough olive oil, so the rice is not dry. Reseason, if necessary. Lay the lettuce on the bottom of a platter. Spoon the rice salad on top of the lettuce. Garnish with the eggs and green olives.
