1/2 cup mayonnaise
2 teaspoons Dijon mustard
6 teaspoons fresh rosemary, minced
2 teaspoons fresh thyme, minced
2 teaspoons fresh Italian parsley, minced
2 garlic cloves, minced
4 large portabella mushrooms, trimmed
2 tablespoons olive oil
4 tablespoons unsalted butter
salt and pepper
8 teaspoons balsamic vinegar
1 small eggplant, sliced 1/4 thick slices
2 tablespoons olive oil
4 whole wheat hamburger buns, toasted
4 leaves lettuce

Steps:

  • Whisk mayonnaise, mustard, 2 tsp rosemary and garlic in small bowl to blend, set aside.
  • Soak eggplant slices in lightly salted water for about 15 minutes Rinse and pat dry. Brush both sides with olive oil and lightly salt and pepper.
  • Spray grill rack and prepare at medium heat. Brush mushrooms with olive oil. Sprinkle stem side with minced fresh rosemary, thyme and parsley evenly divided between the mushroom caps, top with pat of butter salt and pepper and 2 tsp balsamic vinegar per mushroom. Grill mushrooms until tender (about 10 - 12 mins, do not turn!) Lay slices of eggplant on grill and cook about 8 - 10 mins until tender, turning a couple of times.
  • Spread Mayo mixture on toasted buns. Place lettuce, eggplant and mushroom on bun bottoms, cover with tops, serve immediately and enjoy!

This sounds sooooo good. I found it in the bon appetit magazine and can't wait to try it. If you get to it first, let me know what you think. The preparation time has not been added because I've yet to make this, and I've guesstimated the time needed to cook.

2 garlic cloves, unpeeled
olive oil (for drizzling)
1 cup mayonnaise
1/3 cup basil leaves, fresh minced
1 teaspoon balsamic vinegar
3 tablespoons balsamic vinegar
6 tablespoons butter, divided (3/4 stick)
1 lb portabella mushroom, stems trimmed and cut into 1/4-inch slices (about 5 large)
1 lb bread, halved horizontally (pain rustique, ciabatta or facaccia)
1/3 cup parmesan cheese, freshly grated
1 large tomatoes, thinly sliced

Steps:

  • Preheat oven to 400 degrees.
  • Place garlic in small ovenproof dish and drizzle with olive oil and sprinkle with salt and pepper.
  • Cover tightly with foil and roast until tender, about 30 minutes.
  • Cool, peel and mash garlic.
  • Mix mayonnaise, basil, 1 teaspoon balsamic vinegar and mashed roasted garlic in small bowl. Do ahead Can be made1 day ahead. Cover and chill.
  • Melt 4 tablespoons butter in large skillet over medium-high heat.
  • Add mushrooms and toss to coat.
  • Drizzle remaining 3 tablespoons balsamic vinegar over and cook until tender, stirring often, about 5 minutes.
  • Season with salt and pepper. This step can be made 2 hours ahead of time. Let stand at room temperature.
  • Rewarm over low heat before continuing.
  • Preheat broiler.
  • Spread remaining 2 tablespoons butter over cut sides of bread.
  • Broil bread, buttered side up, until golden brown, about 2 minutes. Watch closelyto prevent burning.
  • Spread desired amount of garlic-basil mayonnaise over toasted sides of bread.
  • Arrange mushrooms in even layer over bottom half of bread.
  • Springles Parmesan cheese over.
  • Arrange tomato slices in single layer over cheese.
  • Cover with top half of bread.
  • Cut into 6 sandwiches and serve.

1 package (8 oz) sliced fresh baby portabella mushrooms
2 tablespoons Land O Lakes® Butter with Olive Oil & Sea Salt butter, cut into small pieces
2 cloves garlic, finely chopped
1/2 teaspoon chopped fresh thyme leaves
Freshly ground pepper to taste
1 ripe avocado, pitted, peeled and quartered
4 slices sourdough bread, toasted

Steps:

  • Heat oven to 450°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.
  • In baking dish, gently mix mushrooms, butter, garlic, thyme and pepper.
  • Roast uncovered 30 minutes, stirring gently halfway through baking.
  • Spread 1 quarter of avocado over each slice of toasted bread. Top with roasted mushroom mixture. Serve immediately.

4 -6 portabella mushroom caps
4 -6 red bell peppers
4 -6 slices provolone cheese
focaccia bread
mixed sprouts
2 avocados
1/2 cup balsamic vinegar
1/2 cup olive oil
3 minced garlic cloves
Mrs. Dash seasoning mix
celery salt
fresh coarse ground black pepper

Steps:

  • pour vinegar into med bowl. Cut peppers into palm size pieces and soak in vinegar.
  • Put pieces on grill with skins facing flame.
  • Grill until skins are crispy. Cool and peel.
  • Coat each mushroom cap,top and bottom, with olive oil. sprinkle garlic, Mrs. Dash, celery salt and pepper on bottom side of mushrooms.
  • Grill each mushroom for 5 mins each side.
  • Once mushrooms are grilled place red peppers on bottom part of mushroom and cover with provolone chesse. Heat until cheese is melted.
  • Toast bread and garnish with sprouts and avacado slices. (tomatoes add a pretty splash of color.) Cut caps in half, build sandwiches and serve.

1/2 c oil
3 T fresh lemon juice
4 1/2 T soy sauce
2 1/2 T roasted sesame oil
1 scallion, thinly sliced
3 garlic cloves, pressed
1 1/2 t ground fresh ginger
basil, tomatoes, goat cheese

Steps:

  • Slice large caps. Marinate 3 minutes to 1 hour. Grill approximately 2-3 minutes per side. Serve on crusty bread spread with goat cheese, topped with basil and tomato.
