RED WINE AND PORT POACHED PEARS WITH MASCARPONE



Red Wine and Port Poached Pears with Mascarpone image

1 1/2 cups ruby port
1 1/2 cups red wine
1 1/4 cups sugar
2 star anise
2 cinnamon sticks
1 bundle thyme
1 lemon, zested, not grated, but in big strips for easy removal
1/2 vanilla bean, split and seeds scraped
3 Bosc pears, peeled, halved and cored
1 pint mascarpone cheese, at room temperature
1/4 pound block semisweet or dark chocolate, to shave with a vegetable peeler

Steps:

  • In a large saucepan combine the port, wine, 1 cup of the sugar, star anise, cinnamon, thyme, lemon zest, the vanilla bean and seeds. Bring to a boil, then reduce the heat and simmer for 15 minutes.
  • Add the pears and simmer until the pears are cooked through, about 25 to 30 minutes. Turn off the heat and let cool in the poaching liquid.
  • Before serving, remove the pears from their poaching liquid and reduce the liquid to a syrup. Strain into a small bowl.
  • Combine the mascarpone and remaining sugar in a small bowl. Dollop a small amount of the mascarpone on each plate and arrange a pear half on top to prevent it from sliding around the plate. Garnish the pears with a large dollop of the mascarpone, and drizzle with the reduced poaching liquid. Shave the chocolate over the mascarpone and serve.

Until you've tried this dessert, you may not have tasted a pear's multiple personalities.

4 firm-ripe Bosc pears
2 cups unsweetened white grape juice
2 cups ruby Port
1/4 cup sugar
6 green or white cardamom pods, smashed
1 (1-inch) piece cinnamon stick
2 whole cloves
1 1/4 cups water
3 tablespoons fresh lemon juice
2/3 cup créme fraîche, well stirred
parchment paper

Steps:

  • Peel pears, leaving stems intact. Cut a round of parchment paper to fit inside a wide 4-quart heavy pot.
  • Bring grape juice, Port, sugar, spices, and 1 cup water to a boil in pot over moderate heat, stirring until sugar is dissolved. Add pears, arranging them on their sides in 1 layer (pears will not be covered by liquid). Cover pears directly with round of parchment. Reduce heat to low and poach pears, turning occasionally, until just tender when pierced with a sharp knife, about 25 minutes. Remove from heat and let pears steep in liquid, covered with parchment, turning occasionally, at least 2 hours and up to 3.
  • Carefully transfer pears with a slotted spoon to a shallow dish, reserving poaching liquid. Let pears stand at room temperature or chill, covered with parchment.
  • Pour poaching liquid through a fine-mesh sieve into a bowl (discard spices) and return to pot. Boil, uncovered, until liquid is reduced to about 2 1/2 cups, 25 to 30 minutes. Remove from heat and stir in lemon juice and remaining 1/4 cup water. Pour liquid into an 8- to 9-inch square baking pan (not nonstick).
  • Freeze liquid 1 1/2 hours, then scrape and stir with a fork, crushing any lumps. Repeat, scraping every hour until evenly frozen, about 4 hours more.
  • Bring chilled pears to room temperature before serving, about 30 minutes.
  • Cut a thin slice from bottom of each pear, then stand pears upright on chilled plates. Scrape granita, then serve pears with granita and créme fraîche.

a 1 1/2-inch piece fresh gingerroot
2 firm-ripe Bartlett, Anjou, or Comice pears with stems intact
3 to 4 cup water
1/2 cup sugar
1/4 cup Tawny Port
2 tablespoons fresh lemon juice

Steps:

  • Peel gingerroot and slice thin. Cut slices into thin strips and in a saucepan simmer in 1 quart water 10 minutes. Drain gingerroot and discard water.
  • In a saucepan just large enough to hold pears lying on their sides bring 3 cups water to boil with gingerroot, sugar, Port, and lemon juice, stirring until sugar is dissolved.
  • Peel pears, leaving stems intact, and cut a thin slice from bottom of each if necessary to enable pears to stand upright when served. Arrange pears on their sides in poaching liquid, adding enough of remaining water as necessary to just cover. Simmer pears, turning them occasionally, until tender, 20 to 40 minutes depending on ripeness. Carefully transfer pears with a slotted spoon to a bowl and boil poaching liquid until reduced to about 3/4 cup and slightly syrupy. Pour sauce over pears. Pears may be made 1 day ahead and cooled in sauce before being chilled, covered. Serve pears warm or chilled.

STAR ANISE POACHED PEARS

Here is a delicious example of eastern spices used to complement a western dish. Recipe edited to add sugar (which was left out).

2 tablespoons water, plus
1 1/4 cups water
1/2 cup sugar
3 whole star anise
4 whole cloves
1 cinnamon stick
1/2 vanilla bean, cut cross wise in length
4 medium firm but ripe Anjou pears, peeled, quartered, cored

Steps:

  • Combine sugar 2 tablespoons water, star anise, cloves, cinnamon stick and vanilla bean in a heavy large saucepan.
  • Stir over low heat until sugar dissolves.
  • Increase heat and boil with out stirring until syrup turns a deep amber color, occasionally brushing down the sides of the pan with a wet pastry brush and swirling pan, about 9 minutes.
  • Remove from heat add 1 1/4 cups of water (the mixture will bubble vigorously).
  • Bring to a simmer, stirring until pieces of caramel dissolve.
  • Add pears, cover and simmer until tender, turning pears once about 5 minutes.
  • Using a slotted spoon, transfer pears to bowl.
  • Boil liquid in sauce pan until thick and syrupy, about 5 minutes.
  • Pour syrup over pears toss gently to coat.
  • Chill until cold.
  • Serve cold.
