2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 large egg, lightly beaten
1/2 cup seasoned bread crumbs
3 tablespoons panko bread crumbs
1/2 pound pork tenderloin
2 tablespoons canola oil
4 hamburger buns or kaiser rolls, split
Optional toppings: Lettuce leaves, tomato and pickle slices, and mayonnaise

Steps:

  • In a shallow bowl, mix flour, salt and pepper. Place egg in another shallow bowl. Combine bread crumbs and place in a third shallow bowl., Cut tenderloin crosswise into 4 slices; pound each with a meat mallet to 1/4-in. thickness. Dip in flour mixture to coat both sides; shake off excess. Dip in egg, then in crumb mixture, patting to help adhere., In a large skillet, heat oil over medium heat. Cook pork 2-3 minutes on each side or until golden brown. Remove from pan; drain on paper towels. Serve in buns, with toppings as desired.

2 tablespoons reduced-sodium soy sauce
2 tablespoons steak sauce
2 garlic cloves, minced
1-1/2 teaspoons brown sugar
1/2 teaspoon ground mustard
1/2 teaspoon minced fresh gingerroot
2 pork tenderloins (1 pound each)
MUSTARD HORSERADISH SAUCE:
1/4 cup fat-free mayonnaise
1/4 cup reduced-fat sour cream
1-1/2 teaspoons lemon juice
1 teaspoon sugar
1/2 teaspoon ground mustard
1/2 teaspoon Dijon mustard
1/2 teaspoon prepared horseradish
6 kaiser rolls, split
6 lettuce leaves

Steps:

  • In a large resealable plastic bag, combine the first seven ingredients. Add pork; seal bag and turn to coat. Refrigerate 8 hours or overnight., Drain pork, discarding marinade. Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. Grill pork, covered, over indirect medium heat for 25-40 minutes or until a thermometer reads 145°. Let stand for 5 minutes before slicing., In a small bowl, combine the mayonnaise, sour cream, lemon juice, sugar, ground mustard, Dijon mustard and horseradish. Serve pork on rolls with lettuce and mustard horseradish sauce.

This is very tasty, however I must admit that when cooking the pork the stated amount of time was not enough for my family. After resting the pork was still VERY pink so I put it back in the oven for another 5 minutes. This cooked the pork through entirely. I know that this probably wasn't Ming's intention for the dish but for those of you who like thoroughly cooked pork please know you need to cook the meat longer.

1 cup hoisin sauce
2 tablespoons finely chopped garlic
2 tablespoons finely chopped ginger
1/2 cup dry red wine
1/4 cup chopped scallion, white part only
2 (8 ounce) pork tenderloin
fresh ground pepper
2 tablespoons canola oil
4 large hamburger buns with sesame seeds
1/2 cup rice wine vinegar
1/4 cup fish sauce
8 large basil leaves, cut into ribbons
1 1/2 teaspoons sugar
1/4-1/2 teaspoon crushed red pepper flakes
3 cups napa cabbage, cut into 1/8 inch ribbons
1 cup bean sprouts
1 cup carrot, shredded
salt and pepper

Steps:

  • In a baking dish large enough to cook pork mix hoisin sauce, garlic, ginger, wine, and scallions. Add pork and turn to coat.
  • Cover and refrigerate for 3 hours; preferably overnight.
  • Heat oven to 350 degrees. Season pork with salt and pepper.
  • Heat a skillet over high heat. Add oil; swirl to coat pan. Add pork turning only once and cooking for 5 minutes total until browned. Transfer to oven.
  • Roast 12 to 15 minutes until done. Let pork rest 5 minutes then cut into 1/4 inch slices.
  • For slaw: in a large bowl wisk together vinegar, fish sauce, basil, sugar, and crushed pepper to blend.
  • Add remaining ingredients and toss to mix and coat.
  • Halve buns and toast lightly if you wish. Top bottom of bun with slaw. Add 6-8 slices of pork and top with more slaw. Serve with additional slaw if desired.

1 2/3 to 2 pounds pork tenderloin, 2 pieces, the average weight of 1 package, trimmed
Extra virgin olive oil or vegetable oil, for drizzling
1 small onion, minced
4 cloves garlic, finely chopped
2 limes, zested
1 large orange, zested
1 teaspoon coarse salt
1 teaspoon coarse black pepper
1 teaspoon dried oregano
8 crusty rolls, such as Portuguese rolls, torpedo loaves or muffuletta style round rolls
4 teaspoons sugar
1/4 cup corn oil, 4 turns of the pan
4 black (ripe) plantains
1 teaspoon fine salt
6 dill pickles, chopped
1/2 cup sweet red pepper relish
2 scallions, chopped
1 pound shaved ham, from the deli counter
1 pound shaved Swiss cheese, from the deli counter
4 tablespoons butter, for toasting sandwiches
Frozen Mojito Slushes, recipe follows
1 pint lime sorbet or 1 can lime ade from frozen juice sectio
8 shots light rum
1/2 cup mint leaves
1 tray ice cubes

Steps:

  • Preheat oven to 425 degrees F.
  • Coat tenderloins with oil. Combine onion, garlic, citrus zest, salt, pepper and dried oregano in a pile on your cutting board. Pack this coating equally and evenly onto the tenderloins. Heat a large skillet. Add a drizzle of oil and sear tenderloin on all sides. Then place in hot oven to roast 20 to 25 minutes. Wash hands.
  • Brush rolls with a little warm water and sprinkle the tops of the rolls with 1/2 teaspoon sugar each. Pile rolls on a baking sheet and place in oven with meat for 5 minutes to crust rolls and set sugar. Authentic Cuban rolls used for this sandwich are sweet. This sugar wash process gives a similar effect to store bought rolls. When rolls come out of oven, split and pile on serving plate.
  • Preheat a stovetop griddle over medium high heat.
  • Heat 1/4 cup corn oil in a heavy skillet over medium high heat. Peel plantains and cut in 1/2 lengthwise, then slice each 1/2 into thirds on an angle. Arrange plantains in pan in a single layer and cook until crisp, continuously flipping for even browning. Remove from skillet to paper towel lined plate and season with fine salt.
  • To assemble sandwiches: Thinly slice meat on an angle. Place ham and Swiss cheese on a serving plate, separating and fluffing up the shaved meat and cheese. Assemble sandwiches with desired fillings and place on a hot, buttered griddle. Use a heavy pan to press the sandwiches together. Toast until golden brown, then flip and toast the other side.
  • Combine chopped pickles, sweet red pepper relish and scallions in a small bowl.
  • Spread the relish on the tops of the rolls and pork slices, ham, and swiss cheese on the bottoms. Press the sandwiches together. Put about 1 tablespoon of butter on the hot griddle and spread to coat. Put 2 sandwiches at a time on the griddle, and top with a heavy cast-iron skillet. Toast sandwiches on the griddle, turning once, until golden, hot, and cheese is melted, 2 or 3 minutes per side.
  • Serve with a few slices of plantains per person as a side dish. Frozen Mojitos Slushes make a great drink or dessert.
  • In a blender, combine 1/2 pint sorbet or 1/2 can of lime aid with 4 shots of rum, 1/4 cup mint leaves and 1/2 tray of ice. Pulse, then blend on high until lime-mint slush is smooth. Pour drinks into 2 large cocktail glasses using a long handled spoon and repeat with remaining ingredients.

2 teaspoons vegetable oil
1 1/2 teaspoons coarse salt
1 teaspoon dried oregano, crumbled
3/4 teaspoon ground coriander
1/2 teaspoon freshly ground pepper
2 pork tenderloins (3/4 pound each)
2/3 cup balsamic vinegar
2 tablespoons packed light-brown sugar
8 rolls (3-inches in diameter)
4 teaspoons Dijon mustard
1 medium red onion, cut into thin rounds

Steps:

  • Preheat oven to 450 degrees. Lightly oil a 9-by-13-inch roasting pan. On a sheet of parchment paper, combine salt, oregano, coriander, and pepper. Working with one tenderloin at a time, roll to coat with spices. Transfer to prepared pan.
  • In a small saucepan, bring vinegar and sugar to a boil. Cook, stirring occasionally, until mixture is syrupy and reduced to 1/2 cup, about 3 minutes. Remove from heat.
  • Roast the pork for 5 minutes. Brush all over with 1/3 of the balsamic reduction. Roast 5 minutes more, and brush with remaining balsamic mixture. Roast until the temperature registers 155 degrees on an instant-read thermometer, about 10 minutes more. Remove from pan. Let rest 10 minutes before slicing.
  • Split the rolls, and brush 1/2 teaspoon of the mustard over each side. Place meat on rolls and top with onion. Replace the tops, and serve immediately.

1/2 red onion, thinly sliced, separated into rings
1/2 cup mayonnaise
2 cloves garlic, finely grated
Juice of 1 lemon
Kosher salt
8 ounces shishito peppers
1 teaspoon extra-virgin olive oil, plus more for the grill
1 pork tenderloin (1 1/4 to 1 1/2 pounds)
Freshly ground pepper
1 tablespoon smoked Spanish paprika
1 teaspoon ground cumin
2 cups baby arugula
1 baguette, cut into 4 pieces and split

Steps:

  • Preheat a grill to medium high. Soak the red onion in a bowl of ice water. Mix the mayonnaise, garlic, lemon juice and a pinch of salt in a small bowl; refrigerate until ready to use. Toss the peppers with the olive oil and a pinch of salt in a large bowl and set aside.
  • Season the pork with salt, pepper, the paprika and cumin and rub all over. Brush the grill grates with olive oil. Arrange the peppers and pork on the grill and cover. Grill the peppers, turning once or twice, until charred in spots and crisp-tender, 1 to 2 minutes. Remove to a plate. Grill the pork, turning occasionally, until well marked and just cooked through, 12 to 15 minutes; remove to a cutting board to rest, 5 minutes.
  • Drain the red onion and blot dry. Thinly slice the pork and arrange on the baguette bottoms. Top with some of the garlic mayonnaise, then the red onion, arugula and bread tops. Serve with the shishito peppers; season with salt.

These tasty finger sandwiches scored a "touchdown" with everyone who tried them! If you don't want to miss a play, you can prepare this appetizer ahead and heat it up at halftime.

1/4 cup packed brown sugar
2 tablespoons canola oil
1 teaspoon ground ginger

This recipe makes a wonderfully tasty pork sandwich, and is a favorite with the men in my family. You can adjust the "heat" to your liking.

2 (3/4 lb) pork tenderloin, trimmed of visible fat
vegetable oil cooking spray
1 cup apple cider or 1 cup apple juice
1 large onion, sliced
1 tablespoon barbecue sauce
1 teaspoon minced garlic (1 medium clove)
1/8 teaspoon ground cinnamon
1/8 teaspoon crushed red pepper flakes (use cayenne pepper for extra heat)
1/8 teaspoon ground cloves
1/4 teaspoon grated fresh ginger
1/4 teaspoon ground thyme
sourdough French baguettes or roll

Steps:

  • Coat a Dutch oven with cooking spray; place oven on medium-high heat until hot.
  • Add tenderloins and cook about 10 minutes or until browned.
  • Turn occasionally.
  • Combine the apple cider or juice with the remaining ingredients in a bowl.
  • Pour over the tenderloins.
  • Insert a meat thermometer into the thickest portion of the tenderloin.
  • Bring to a boil.
  • Reduce heat and simmer covered, for about 40 minutes or until thermometer reads 160°F.
  • Occasionally, baste with the pan juices.
  • When done, remove tenderloins to a cutting board and allow to stand for at least 10 minutes before slicing.
  • While the tenderloins are resting, heat the juices to boiling and cook until they are reduced to a thick syrupy sauce (about 10 minutes).
  • Slice the tenderloins diagonally across the grain into thin slices.
  • Serve on a baguette or roll sliced in half lengthwise.
  • Top the sliced pork with the"sauce".

BREADED PORK TENDERLOIN SANDWICHES

the amount of ingredients listed below is just enough breading for 2-3 tenderloin sandwiches
2-3 pork tenderloin chunks, see *note below
1 1/2 c Corn Flake crumbs, can make your own or can be bought
1 egg, beaten
splash of milk
oil for frying
salt to taste (I leave out)
large bbq buns or hoagie buns
your favorite condiments

Steps:

  • 1. You can have your butcher cut and tenderize the tenderloin for you if you like. Here is how I do it. Cut across tenderloin strip at 3-inch intervals.
  • 2. Place 1 chunk into gallon Ziploc bag and pound with flat side of meat mallet until about 3/8 inch thick.
  • 3. You want it thin, when put in frying pan meat will draw up a bit and become thicker. Repeat for each chunk. 1 chunk = 1 sandwich
  • 4. Place Corn Flake crumbs in a shallow bowl or on a large plate. Add salt if using and mix well; set aside. Beat egg in another shallow bowl and add a splash of milk, mix well. Set aside.
  • 5. Place oil in a skillet about 1/2 inch deep and heat while breading tenderloin.
  • 6. Dip the flat pieces of tenderloin, one at a time into the egg mixture, making sure both sides are coated.
  • 7. Then into the Corn Flake crumbs pressing the crumbs into the meat with your hands, coating both sides.
  • 8. Hold with both hands and place carefully into the hot oil. Fry on the first side until golden brown, turn and fry the second side until golden brown and meat is thoroughly cooked. Watch carefully as crumbs will burn easily.
  • 9. Drain on paper towel.
  • 10. Serve deluxe on extra large buns, mayo, lettuce, sliced tomato, sliced onion, and pickle. My Fave: mustard and dill pickle. Also, good with cole slaw on top.
  • 11. *NOTE: My pork tenderloin was about 2 1/3 lbs. There were 2 strips of tenderloin. I cut across each strip in 3 inch intervals and got 6 chunks out of the 2 strips. I pounded out all the chunks with the flat side of a meat mallet to about 3/8 inch thick. Wrapped each in plastic wrap, then in foil and placed in a Ziploc bag for the freezer. I saved 2 for dinner. I did not bread the tenderloin I wrapped for the freezer.

Two 1-pound pork tenderloins
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons grapeseed oil
2 tablespoons grapeseed oil
2 large shallots, chopped
1/2 teaspoons kosher salt, plus extra for seasoning
1/4 teaspoon freshly ground black pepper, plus extra for seasoning
3 cloves garlic, minced
1/2 cup white wine, such as pinot grigio
1/2 cup honey
1/2 cup Dijon mustard
2 tablespoons red wine vinegar
1 tablespoon chopped fresh thyme
2 tablespoons unsalted butter, cut into 1/2-inch pieces, at room temperature
6 sourdough demi-baguettes or rolls, halved lengthwise

Steps:

  • For the pork tenderloin: Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Spray a heavy baking sheet with vegetable oil cooking spray. Set aside.
  • Sprinkle the pork with the salt and pepper. Heat the oil in a large skillet over medium-high heat. Add the pork and brown on all sides, about 8 minutes. Transfer the pork to the prepared baking sheet and bake until a meat thermometer inserted into the thickest part of the meat registers 160 degrees F, about 30 minutes. Allow the meat to rest for 10 minutes before slicing. Slice the pork into 1/4-to-1/2-inch-thick slices.
  • For the honey mustard: Heat the oil over medium-high heat in the same skillet used for browning the pork. Add the shallots, salt and pepper. Cook until the shallots are soft, about 3 minutes. Add the garlic and cook until aromatic, 30 seconds. Add the wine and scrape up the brown bits that cling to the bottom of the pan with a wooden spoon. Cook for 1 minute. Whisk in the honey, mustard, vinegar and thyme. Simmer until thick, 2 minutes. Stir in the butter until melted and smooth. Season with salt and pepper.
  • To assemble the sandwiches: Slather the honey mustard on the cut sides of the baguettes. Arrange the pork slices in a single layer on the bottom halves of the baguettes. Spoon a little more honey mustard on top of the pork. Place the remaining baguette halves on top and serve. Serve any extra honey mustard alongside.

1 (15 ounce) can of favorite breadcrumbs (regular or seasoned)

  • Slice 1/2 of the pork tenderloin into slices of about 1 inch thick. Then pound out the meat into a thin patty about 1/8 inch thick. then take the patty and lay it in the flour.(put flour on both sides) then put it in egg(both sides) then put it in the bread crumbs until you can't see the raw meat.
  • If you have a deep fryer then preheat it to 360 degrees If you have a pan on the stove top fill half way with oil. Then put patty in oil until it floats or is gold/dark brown (will darken once out of the oil)serve with fries or onion rings.

2 (3/4 lb) pork tenderloin
3 cloves garlic, slivered
1/3 cup peanut oil
1/4 cup Bourbon
1 tablespoon Worcestershire sauce
1 tablespoon dried rosemary
1 teaspoon all purpose Greek seasoning
3 dozen yeast rolls, split (homemade or from the grocery deli)
1 cup ketchup
1/2 cup firmly packed dark brown sugar
1/2 cup Bourbon
2 tablespoons Worcestershire sauce
1 1/2 teaspoons all purpose Greek seasoning
1 teaspoon garlic salt

Steps:

  • To make bourbon sauce: In a small bowl, add the bourbon sauce ingredients; stir to combine; set aside.
  • Cut several small slits in the tenderloins; stuff garlic slivers into the slits.
  • In an oblong shallow dish, add the peanut oil, 1/4 cup bourbon, 1 tablespoon Worcestershire sauce, rosemary, and 1 teaspoon Greek seasoning; stir to combine; add the tenderloins; turn to coat.
  • Cover and chill for 2 hours; turning every now and then.
  • Bake at 325° for 55 minutes or until meat thermometer reads 160°.
  • Cut tenderloins into 1/4 inch slices.
  • Pour bourbon sauce over the tenderloins; cover and put back into the refrigerator to chill 8 hours.
  • Serve pork on yeast rolls.

I adopted this recipe. I prepared it using Recipe #107646 for the spice rub and Recipe #51983 in the finished pitas. The seasoning was perfect and the tzatziki was the perfect complement. This will become a regular in my menu rotation.

1 pork tenderloin
1/4 cup fennel mixed spice (recipe #48753) or 1/4 cup other dry rub seasonings
1 recipe tzatziki (Tzatziki)
1 white onion, sliced thinly
1 red bell pepper, sliced thinly
pita bread, warmed
olive oil
salt and pepper

Steps:

  • Preheat oven to 400 degrees.
  • Cut pork tenderloin in half across and rub each piece liberally with fennel spice.
  • Brown in a couple of tablespoons of olive oil in a saute pan.
  • Put pan in oven for 12-15 minutes until pork is medium rare.
  • Remove pork from pan and let sit on a cutting board for 10 minutes to rest.
  • Meanwhile saute onion and pepper in olive oil over medium high heat until caramelized but not completely soft.
  • Slice tenderloin very thinly.
  • To serve put tenderloin, vegetables and pita on a platter along with a bowl of tzatziki.
  • Make sandwiches by placing some onion/pepper mix, pork and tzatziki inside warm pita bread.

1 2/3 to 2 pounds pork tenderloin, 2 pieces, the average weight of 1 package, trimmed
Extra virgin olive oil or vegetable oil, for drizzling
1 small onion, minced
4 cloves garlic, finely chopped
2 limes, zested
1 large orange, zested
1 teaspoon coarse salt
1 teaspoon coarse black pepper
1 teaspoon dried oregano
8 crusty rolls, such as Portuguese rolls, torpedo loaves or muffuletta style round rolls
4 teaspoons sugar
1/4 cup corn oil, 4 turns of the pan
4 black (ripe) plantains
1 teaspoon fine salt
6 dill pickles, chopped
1/2 cup sweet red pepper relish
2 scallions, chopped
1 pound shaved ham, from the deli counter
1 pound shaved Swiss cheese, from the deli counter
4 tablespoons butter, for toasting sandwiches
Frozen Mojito Slushes, recipe follows

Steps:

  • Preheat oven to 425 degrees F.
  • Coat tenderloins with oil. Combine onion, garlic, citrus zest, salt, pepper and dried oregano in a pile on your cutting board. Pack this coating equally and evenly onto the tenderloins. Heat a large skillet. Add a drizzle of oil and sear tenderloin on all sides. Then place in hot oven to roast 20 to 25 minutes. Wash hands.
  • Brush rolls with a little warm water and sprinkle the tops of the rolls with 1/2 teaspoon sugar each. Pile rolls on a baking sheet and place in oven with meat for 5 minutes to crust rolls and set sugar. Authentic Cuban rolls used for this sandwich are sweet. This sugar wash process gives a similar effect to store bought rolls. When rolls come out of oven, split and pile on serving plate.
  • Preheat a stovetop griddle over medium high heat.
  • Heat 1/4 cup corn oil in a heavy skillet over medium high heat. Peel plantains and cut in 1/2 lengthwise, then slice each 1/2 into thirds on an angle. Arrange plantains in pan in a single layer and cook until crisp, continuously flipping for even browning. Remove from skillet to paper towel lined plate and season with fine salt.
  • To assemble sandwiches: Thinly slice meat on an angle. Place ham and Swiss cheese on a serving plate, separating and fluffing up the shaved meat and cheese. Assemble sandwiches with desired fillings and place on a hot, buttered griddle. Use a heavy pan to press the sandwiches together. Toast until golden brown, then flip and toast the other side.
  • Combine chopped pickles, sweet red pepper relish and scallions in a small bowl.
  • Spread the relish on the tops of the rolls and pork slices, ham, and swiss cheese on the bottoms. Press the sandwiches together. Put about 1 tablespoon of butter on the hot griddle and spread to coat. Put 2 sandwiches at a time on the griddle, and top with a heavy cast-iron skillet. Toast sandwiches on the griddle, turning once, until golden, hot, and cheese is melted, 2 or 3 minutes per side.
  • Serve with a few slices of plantains per person as a side dish. Frozen Mojitos Slushes make a great drink or dessert.

2/1 lb pork tenderloins
1 tsp kosher salt
1 tsp freshly ground black pepper
2 Tbsp grapeseed oil
PORK TENDERLOIN
HONEY MUSTARD
2 Tbsp grapeseed oil
2 large shallots
1/2 tsp kosher salt
1/4 tsp ground black pepper
3 clove garlic minced
1/2 c white wine such as pinot grigio
1/2 c honey
1/2 c dijon mustard
2 Tbsp red wine vinegar
1 Tbsp chopped fresh thyme
2 Tbsp butter, unsalted/cut into 1/2 inch pices at room temp
6 small sourdough demi- baguettes or rolls halved lengthwise

Steps:

  • 1. for the pork tenderloin: place an oven rack in the center of the oven Preheat the oven to 400 degrees F. Spay a heavy baking sheet with cooking spray Set aside
  • 2. Sprinkle the pork with salt and pepper. Heat the oil in large skillet over medium- high heat. add the and brown on all sides, about 8 minutes. Transfer the pork to the prepared baking sheet and bake until a meat thermometer inserted into the thickest part of the meat registers 160 degrees F. about 30 minutes Allow the meat to rest for 10 minutes before slicing. Slice the pork into 1/4 to 1/2 -inch- thick slices
  • 3. For the honey mustard: heat the oil over medium-high heat in the same skillet used to brown the pork Add the shallots, salt, and pepper. Cook until the shallots are soft, about 3 minutes. Add the garlic and cook until aromatic 30 seconds Add the wine and scrape up the brown bits that cling to the bottom of the pan with a wooden spoon Cook for 1 minute, whisk in the honey, mustard ,vinegar and thyme simmer until thick 2 minutes. Stir in the butter until melted and smooth. Season with salt and pepper
  • 4. To assemble the sandwiches slather the honey mustard on the cut side of the baguettes. Arrange the pork slices in a single layer on the bottom halves of the baguettes. Spoon a little more honey mustard on tpo of the pork place the remaning baguette halves on top and serve

Steps:

  • Heat coals or gas grill for direct heat. In small bowl, mix marmalade and 1 tablespoon of the mustard.
  • Brush oil over pork. Cover and grill pork over medium heat 15 to 20 minutes, turning occasionally, until pork has slight blush of pink in center and meat thermometer inserted in center reads 160°F. Lightly brush 1 tablespoon marmalade mixture over pork for last few minutes of grilling.
  • Spread remaining 3 tablespoons mustard on one side of bread slices. Cut pork into thin slices. Place lettuce and pork on half of bread slices. Heat remaining marmalade mixture to boiling; drizzle over pork. Top with remaining bread.

3/4 lb pork tenderloin, cut into 4 pieces
1/2 cup Original Bisquick™ mix
1/4 teaspoon ground mustard
1 egg
2 to 3 tablespoons vegetable oil
4 large hamburger buns, split
4 lettuce leaves
4 slices tomato
2 tablespoons mayonnaise or salad dressing

Steps:

  • Between pieces of plastic wrap, place 1 pork tenderloin piece, cut side down. Gently pound with meat mallet or rolling pin, beginning in center, until 1/4 inch thick. Repeat with remaining pork pieces.
  • In shallow dish or pie plate, stir Bisquick mix and mustard until mixed. In another shallow dish or pie plate, beat egg. Dip pork pieces in egg, then coat in Bisquick mixture.
  • In 12-inch nonstick skillet, heat 2 tablespoons of the oil over medium heat. Add pork. Cook 6 to 8 minutes, turning once and adding remaining 1 tablespoon oil if needed, until golden brown on outside and no longer pink in center.
  • Place pork on bottom halves of buns. Top with lettuce and tomato. Spread cut sides of bun tops with mayonnaise; add to sandwiches.

I grew up eating these huge sandwiches in Indiana. After moving to New York, I began to miss them. So I created my own recipe! We love these sandwiches! I introduced my New York native husband to these giant sandwiches after I moved here to New York. He thought it was joke I was playing on him because the breaded pork loin is so huge compared to the regular bun it sits on. On a trip back to my home state, I took him to a local truck stop diner and had him order the Giant Tenderloin Sandwich. He learned that day I wasn't playing a joke on him, because their's was bigger than mine!

4 - thick cut boneless pork loin chops about 1/2 to 3/4 inch thick, fat trimmed off
6 - sleeves saltine crackers, ground to fine crumbs
12 large eggs
1/2 cup(s) water
1 cup(s) all purpose flour
oil for frying, at least 2 inch deep, i used a 48 ounce bottle
TO MAKE SANDWICHES
4 - hamburger buns, typically served on a basic white hamburger bun
tomato slices
onion slices
pickle slices
mayonnaise
mustard

Steps:

  • Pound each pork loin chop to about 1/4 inch thickness with flat side of meat mallet. Careful not to tear the meat. You want this to be very thin. If you accidentally tear it, it will still work.
  • Beat eggs with water in a large bowl. Place cracker crumbs in another very large bowel. Place flour on a large dinner plate. Set up your breading station: flour, then egg, then cracker crumbs.
  • Dip each flattened loin in flour, gently shake off extra, then in egg, then cracker crumbs, wipe hands now with a damp towel, press crumbs into the meat. Dip again in egg, and again in cracker crumbs, wipe hands again with damp towel, press into the meat firmly. NOTE: these are going to double to triple in size after they are fully breaded.
  • Place in single layer on large baking sheets lined with parchment paper. Press the meat hard again to make sure there are no wet spots. Can use two baking sheets or can place a piece of parchment on top of first layer, then place rest of breaded meat on top. (Picture shows the size of the breaded loin compared to a standard size bottle of seasoning)
  • Place in freezer for 2 hours. Dont skip this. Or overnight. If overnight, I suggest using freezer paper instead of parchment.
  • In a very large deep skillet or stock pot, heat oil to 375°F.
  • Cook each piece, one at a time, until golden brown, turning to cook evenly. About 4 minutes each side. The breading may bubble up and separate from the pork, don't panic. This happens to me usually on the last one I breaded, because I begin to get tired, and didn't thoroughly press the cracker crumbs into the meat each time.
  • Remove to paper towels to drain. Optional you can sprinkle a little salt over the cooked meat. I don't typically because of the salt in the cracker crumbs.
  • To serve, place preferred condiments and toppings on bun, place tenderloin on bun. The pork is supposed to hang over the bun quite a lot! Serve and enjoy!
  • If you think these might be just too large for you and those you are feeding, simply cut each piece of meat in half after you pound them, but before you bread them.

Flatten to 1/4-in. thickness; cook in oil in a large skillet over medium heat for about 4 minutes per side or until no longer pink. , Meanwhile, toast bread and spread each slice with about 2 teaspoons chutney. Top with tenderloin, pears and cheese; place on an ungreased baking sheet. Bake at 300° for 2-3 minutes or until cheese is melted.
