1 tablespoon ground cumin
1 tablespoon dried oregano

Steps:

  • In a bowl, whisk together the ancho, coriander, mustard, paprika, pepper, salt, chile de arbol, cumin and oregano until blended. Store in a cool, dark place, tightly covered, for up to 6 months.

  • In a small bowl, stir together garlic, ginger, five-spice powder and oil. Sprinkle salt over pork. Rub pork evenly with spice rub; refrigerate at least 30 minutes or up to 2 hours.
  • Preheat oven to 450°F Place pork on a rack in roasting pan; bake 10 minutes. Reduce oven temperature to 250°F Bake an additional 1 hour 15 minutes to 1 hour 30 minutes or until internal temperature reaches 145 F to 150°F.
  • Remove pork from oven, cover loosely with foil. Let stand 15 minutes.

1 tablespoon whole coriander
4 1/2 tablespoons ground cinnamon
2 teaspoons ground nutmeg

4 tablespoons sea salt, preferably gray
2 (2-pound) boneless pork tenderloins
2 tablespoons extra-virgin olive oil

Steps:

  • Preheat oven to 400 degrees.
  • In a medium saucepan over medium heat, toast white peppercorns and coriander seeds until they begin to pop. Remove from heat and grind to fine powder in a spice mill or coffee grinder. Mix the ground pepper and coriander with remaining spices, cocoa and salt.
  • Trim the pork tenderloins of fat and silver skin. Rub with a generous amount of the cocoa spice rub. Heat the olive oil in a large saute pan over medium high heat until hot but not smoking. Sear each tenderloin on all sides until a rich brown color, about 2 minutes on each side. Remove tenderloins from heat and finish in the oven for about 10 minutes or until cooked through.
  • Let the tenderloins rest out of the oven for at least 10 minutes before carving.
  • Extra cocoa spice rub will keep in an airtight container for up to 3 months.

4 (12-ounce) center-cut pork chops
Gray salt
2 tablespoons Toasted Spice Rub, recipe follows
2 tablespoons extra-virgin olive oil
1/3 cup dry white wine
1/2 cup Honey Roasted Apple Sauce, recipe follows

Steps:

  • Preheat the oven to 350 degrees F.
  • Season both sides of the pork chops with salt and toasted spice rub.
  • Heat the oil in an ovenproof skillet over medium heat and sear the pork chops until golden brown, about 4 minutes on 1side and 1 minute on the other side. Place pork chops on baking sheet. Remove excess oil from skillet.
  • Bake the chops until just cooked through, about 8 to 10 minutes. Remove to a serving platter.
  • Over medium heat, add the wine to the skillet, stir, and reduce to 1 to 2 tablespoons; add the apple sauce and bring to a simmer. Spoon over each chop.
  • Toasted Spice Rub
  • 1/4 cup fennel seeds
  • 1 tablespoon coriander seeds
  • 1 tablespoon peppercorns
  • 1 teaspoon crushed red pepper flakes
  • 1/4 cup pure California chili powder
  • 2 tablespoons kosher salt
  • 2 tablespoons ground cinnamon
  • Toast the fennel seeds, coriander seeds, and peppercorns in a small, heavy pan over medium heat. When the fennel begins to turn light brown, add the red pepper flakes, and toss several times. Immediately turn the spice mixture out onto a plate to cool.
  • Put in a blender with the chili powder, salt, and cinnamon and blend until the spices are evenly ground. If you have a small spice mill or a coffee grinder dedicated to grinding spices, grind only the fennel, coriander, pepper, and chili flakes. Pour into a bowl and toss with the remaining ingredients.
  • Keep the spice mix in a glass jar in a cool, dry place, or freeze.
  • Note: If you have an exhaust fan over your stove, turn it on before you start toasting the spices. Be careful not to inhale the fumes once you add the red pepper flakes.
  • Yield: 1 cup
  • 12 apples, Gravenstein or McIntosh
  • 2 tablespoons butter
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon finely ground sea salt, preferably gray salt
  • 1/3 cup honey
  • Preheat oven to 425 degrees F.
  • Peel the apples with a vegetable peeler, remove the core and cut into 1-inch chunks, place in a large bowl. Heat a large skillet or roasting pan over medium-high heat. Add the butter. When the butter begins to brown, add lemon juice, then add the apples and salt. Cook until the apples just begin to color, about 4 minutes. Stir in the honey. Roast the apples in the oven until soft and lightly caramelized, about 12 minutes. Fork mash for a chunky version or puree in food processor for a smoother sauce.
  • Serve warm, room temperature or cold.

BUT, after I rubbed it into the pork tenderloin and started searing it, this incredible smell filled my kitchen. I got this recipe from Easy Entertaining with Michael Chiarello. My husband, the meat-eater, loved it!

3 quarts water
3/4 cup kosher salt
6 tablespoons sugar
4 bone in pork loin chops or 4 bone in center-cut pork chops (about 3 lbs total)
1 tablespoon fennel seed
1 tablespoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground cardamom
1 teaspoon dry mustard
1/3 teaspoon ground cinnamon
1/4 teaspoon ground cloves
2 teaspoons brown sugar

Steps:

  • Grind fennel in a spice grinder.
  • Mix all ingredients in a bowl except sugar.
  • Place in a cold sauté pan.
  • Turn heat to medium and heat/toast spices just until fragrant.
  • DO NOT BURN.
  • Remove from pan allow to cool to room temperature and add the sugar.
  • Set aside.
  • (can be made in advance and stored, tightly covered) Dissolve salt and sugar in COLD water.
  • Pour into a two gallon zip lock type bag and add the chops.
  • (Or divide evenly between smaller bags) Squeeze out as much air as possible before sealing.
  • Refrigerate for about an hour, turning occasionally.
  • Remove chops from brine and pat dry with paper towels.
  • Coat with spice mixture and massage into the meat.
  • Allow to sit with rub while preparing the grill.
  • Prepare Grill to very hot.
  • (Gas grill pre-heat 10-15 minutes) if using a gas grill turn off one burner, if using charcoal, move coals to one side of the grill.
  • Place chops on the very hot side of the grill, cover and cook until browned on each side (approx 3-4 min per side) then move over to the cooler side of the grill to continue cooking.
  • Turning once until internal temperature reaches 135 degrees (approx 7-9 minutes longer) remove from heat and allow to rest at least 5 minutes.
  • (Internal temp will rise to about 145 degrees) Serve.

2 pork tenderloin, trimmed of fat and the membrane removed (About 12 oz each)
4 oranges, peeled and sliced crossways
4 cloves garlic, pressed
1 tablespoon fresh orange juice
1 tablespoon white wine vinegar
1 teaspoon dry oregano
3/4 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon ground cloves
1/2 teaspoon cumin

Steps:

  • Make the Escabeche Sauce by mixing the all the ingredients.
  • Spread evenly over the pork Tenderloins.
  • (at this point you make cover and refrigerate until the next day this will enhance the flavor but is not necessary to do).
  • Place Tenderloins on a rack in a 9x 13 pan (or BBQ them).
  • Roast in a 450F degrees oven.
  • Internal temperature should read 155f, Check after 15 minutes and then every 5 minutes.
  • Do not over cook or it will be dry.
  • Slice thinly across the grain, arrange on a platter and place orange sliced all around the meat.

1/2 c salt, kosher variety
1/2 c coconut sugar
3 Tbsp white pepper, freshly ground, or to taste
2 Tbsp mustard powder, i prefer coleman's
2 Tbsp dried thyme
1 Tbsp ground sage
1 Tbsp ground cumin
1 Tbsp cayenne pepper, or to taste

Steps:

  • 1. PREP/PREPARE
  • 2. Just to let you know, this is a spicy rub; however, you can control the heat by varying the cayenne pepper, and the ground white pepper. Varying these two ingredients will not change the overall flavor of the finished results, it will just make it more, or less spicy.
  • 3. You can cut the recipe down; however, if properly stored, it should easily last six months, or more.
  • 4. Gather your ingredients (mise en place).
  • 5. Add all the ingredients together, and store in a tightly-sealed jar, in a cool place, away from sunlight.
  • 6. PLATE/PRESENT
  • 7. Rub a generous amount of the spice into whatever you are smoking, and then place it in the fridge for an hour or so. This will give the spices a chance to meld with the juices from the meat/poultry. Then, smoke according to your recipe's directions. Enjoy.

1 3/4 kg pork belly, bones left in and scored
3 garlic cloves
1 teaspoon black peppercorns
1 tablespoon sea salt
2 teaspoons five-spice powder
3 cups bok choy or 3 cups other fresh greens
1 tablespoon peanut oil
2 tablespoons oyster sauce

Steps:

  • Wipe the meat with kitchen towel to remove any moisture.
  • Peel the garlic and pound it with the peppercorns, salt and five-spice powder using a pestle and mortar.
  • Lay the pork, skin-side down, in a baking dish and rub the spice mix into the flesh.
  • Cover the dish and leave in a cool place for at least 4 hours.
  • Set the oven at 220°C.
  • Put the pork in, skin-side up, and bake for 30 minutes, then turn the heat down to 180 C and roast for another 50-60 minutes.
  • Check the juices run clear and if not roast a little longer.
  • If you need to crisp up the fat, move the meat to the top shelf for the last 15 minutes.
  • Take the pork out of the dish and let rest on a chopping board for at least 10 minutes.
  • Cook the greens in boiling water for 3-4 minutes until tender but still crisp.
  • Drain and put 1 tbsp water in the pan along with the oil and oyster sauce.
  • Bring to a boil and tip in the greens, turn off the heat and over.
  • Carve the pork along the bones.
  • Serve with greens and rice.

1 teaspoon fennel seed

3 lbs red potatoes, small, halved
2 cups vegetable stock
1 cup dry white vermouth (or dry white wine or fat-free chicken broth)

  • With a sharp paring knife, cut into roast at 1-inch intervals. Insert garlic into each slit.
  • Combine the fennel seeds, thyme, paprika, salt and dry mustard; rub onto all surfaces of pork.

  • Place shallots and potatoes in a shallow roasting pan.

Sear each tenderloin on all sides until a rich brown color, about 2 minutes on each side. Remove tenderloins from heat and finish in the oven for about 10 minutes or until cooked through. Let the tenderloins rest out of the oven for at least 10 minutes before carving. Extra cocoa spice rub will keep in an airtight container for up to 3 months.

Spice Essentials: Spicy Pork Rub image

This is a great pork rub with a bit of a spicy kick. I designed it for pork; however, I can see it being used on chicken, and I might add some dill, and try it out on fish. I have included a recipe that I use it with on boneless pork tenderloins. So, you ready... Let's get into the kitchen.

4 tablespoon(s) hungarian paprika
2 tablespoon(s) coconut sugar
1 tablespoon(s) white pepper, freshly ground
1 tablespoon(s) salt, kosher variety
2 teaspoon(s) dried thyme
2 teaspoon(s) mustard powder
1 teaspoon(s) ground cumin
1 teaspoon(s) dried sage
1/4 teaspoon(s) cayenne pepper, or to taste

Steps:

  • PREP/PREPARE
  • The amount of time it takes to bake these chops will be determined by their thickness. My chops were 1-inch (2.5cm). If they are thicker or thinner, will need to adjust the baking time accordingly.
  • Gather your Ingredients (mise en place).
  • Add all the spice ingredients to a bowl, and whisk together.
  • Place into a glass jar with a tight-fitting lid, and store in a cool, dry place until needed.
  • BAKED PORK CHOPS
  • Brush the pork chops with a generous amount of honey.
  • Sprinkle the spice mix on both sides of the chops, and place in the fridge for about an hour.
  • Meanwhile, place a rack in the middle position, and preheat the oven to 400f (205c).
  • Add a wire rack to a parchment-lined baking sheet, and place the chops on top, and sprinkle a bit more spice mixture on top.
  • Chef's Tip: Rub a bit of oil on the rack, so the chops do not stick.
  • Place into the oven, and bake, until they are cooked through, and golden in color, about 20 minutes.
  • PLATE/PRESENT
  • I usually serve this on a bed of white rice; however, when I am feeling nostalgic, I serve it with mash taters, and corn. Enjoy.

ROASTED PORK WITH FENNEL SPICE RUB



Roasted Pork with Fennel Spice Rub image

Number Of Ingredients 12

2 Tbs. extra-virgin olive oil
2 cups thinly-sliced onions
Gray salt
freshly-ground pepper
1-1/2 tsp. finely-chopped fresh sage
1/2-cup water
4 lbs. pork leg or shoulder, at room temperature
About 1/4-cup Fennel Spice (recipe follows)
1 cup fennel seeds
3 Tbs. coriander
2 Tbs. white peppercorns
3 Tbs. kosher salt

Steps:

  • PORK: Heat the olive oil in a large saute pan over medium heat until hot. Add the onions and a pinch of salt and pepper. Reduce the heat to medium-low and cook for about 1 minute. Add the sage and cook until the onions stop releasing water (about 3 minutes). Add the water, cover and cook until the onions are very tender (about 10 minutes). Uncover and saute until the onions are very soft and the pan is dry again (about 2 minutes). Season well with salt and pepper.
  • Preheat the oven to 275 degrees F. Peel back the pork skin and spread the onions directly on the fat layer. Fold the skin back over the onions and tie closed with kitchen string. Season well all over with the Fennel spice. Arrange the meat on a rack in a roasting pan and cook until the meat is very tender (approx. 6-8 hours). The meat is ready when it pulls away easily if picked at with a pair of tongs. It is often easiest to cook the meat overnight or put it in the oven in the morning and let it cook all day - it doesn't need to be attended.
  • FENNEL SPICE RUB: Put the fennel seeds, coriander seeds and peppercorns in a heavy pan over medium heat. Watch carefully, tossing frequently so the seeds toast evenly. When light-brown and fragrant, pour the seeds onto a plate to cool. They must be cool before grinding or they will gum up the blades. Pour the seeds into a blender or spice grinder and add the salt. Blend to a fine powder, shaking the blender or grinder occasionally to redistribute the seeds. Store in a tightly-sealed glass jar in a cool, dry place, or freeze.
