2 tbsp oil
16 oz sauerkraut *see tips above
black pepper *optional

Steps:

  • Preheat oven to 300℉
  • Place large frying pan or indoor grill over med/high- high heat. Add oil and bring pan up to a full heat. (see tips above for testing heat of pan). Sprinkle ribs with black pepper and place fattiest aside down onto pan. Sear all sides until golden brown.
  • Place seared meat into dutch oven and top with sauerkraut. Cover dutch oven with lid and bake for 3-3 1/2 hours.

Delight the hearty eaters in your life with this, the ultimate meat and potatoes dish. Actually, we should say meats, since it contains both country-style pork ribs and kielbasa sausage, which taste mighty fine served alongside creamy Yukon Gold potatoes. Keeping all those richly-flavored ingredients in check, is the zesty Dijon marinade and tangy sauerkraut. So while this certainly is not a light meal, it is well-balanced. The only thing it might be missing is a slice of brown rye bread and a stein of your favorite Oktoberfest brew. Prost!

1 lb Yukon Gold potatoes, cut into 1 1/2-inch pieces
1 1/2 teaspoons dried thyme leaves
1 teaspoon salt
1/2 teaspoon pepper
1 3/4 lb boneless country-style pork ribs
1 tablespoon vegetable oil
1 medium onion, chopped
3/4 cup Progresso™ chicken broth (from 32-oz carton)
1 package (14 oz) kielbasa sausage, cut into 2-inch slices
2 tablespoons Dijon mustard
1 jar (16 oz) sauerkraut, drained

Steps:

  • Spray 5-quart slow cooker with cooking spray.
  • In slow cooker, place potatoes, 1/2 teaspoon of the thyme, 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper. Toss to coat.
  • Season ribs with remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. In 12-inch skillet, heat oil over medium-high heat; cook ribs in oil, turning occasionally, until browned. Transfer to large bowl.
  • Add onion to skillet with drippings, stirring 5 to 6 minutes, until lightly browned. Transfer to slow cooker. Add broth to skillet; heat to boiling, scraping up any brown bits on bottom of skillet. Add to slow cooker.
  • Add kielbasa and mustard to pork in bowl. Toss to coat.
  • Arrange pork and kielbasa on top of onions in slow cooker.
  • Spread sauerkraut over meat. Sprinkle remaining 1 teaspoon thyme over sauerkraut.
  • Cover; cook on Low heat setting 6 to 8 hours or until ribs and potatoes are tender.

3 - 4 pounds shoulder country style ribs
2 teaspoons seasoned salt
2 tablespoons vegetable oil
32 ounce jar sauerkraut (drained)
4 medium potatoes (cut into 1" cubes)
1 medium red onion (sliced thin)
1 teaspoon Koshor salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Line a large baking sheet with aluminum foil and coat with non-stick cooking spray. Preheat oven to 300°F.
  • Rub seasoning into country style ribs.
  • Add oil to a skillet; once hot sear sides of ribs until brown.
  • Set browned ribs in a row down the center of the prepared baking sheet. Cover tightly with heavy duty foil and bake for 2 hours.
  • Carefully uncover and drain any excess fat off the baking sheet. Turn oven up to 325°F.
  • Arrange drained sauerkraut in between the ribs.
  • If using potatoes toss lightly with oil and season with salt and pepper. Arrange in the space along the long sides of the baking sheet.
  • Nestle slices of red onion in between the potatoes and ribs.
  • Cover again with foil and bake for one additional hour until sauerkraut is warmed through and potatoes are tender. Serve warm and enjoy!

"I learned how to make this dish from my grandfather Pap. When I was a kid, we ate it on New Year's Day, but now I make it all the time," says Michael.

2 tablespoons unsalted butter
1 yellow onion, diced
1 head green cabbage, diced
Kosher salt
1 quart apple cider
1 12-ounce can or bottle IPA
1 tablespoon red pepper flakes
1 tablespoon coriander seeds
1 cup sauerkraut, pureed
1 ham hock
1/2 rack bone-in smoked pork loin (about 3 1/2 pounds)
2 pounds garlic sausage or kielbasa
1 bunch parsley leaves, roughly chopped or torn
1/4 cup hot mustard
Freshly cracked black pepper

Steps:

  • Melt the butter in a large Dutch oven over medium-high heat. Add the onion and cabbage, season with a large pinch of salt and cook until the vegetables begin to melt and break down, 10 to 12 minutes. Stir in the cider, beer, red pepper flakes, coriander, pureed sauerkraut and ham hock. Bring to a simmer and cook for 30 minutes to let the flavors meld.
  • Nestle the pork and sausage in the Dutch oven and continue to simmer for 45 minutes, until all of the meat is cooked through and tender. After 45 minutes, remove the ham hock, pork and sausage to a cutting board. Slice all of the meat and add it back into the pot. Mix in the parsley and mustard and additional salt and pepper, if needed.

1 (2 pound) boneless pork loin roast
2 tablespoons olive oil
2 sprigs fresh thyme leaves
salt and pepper to taste
4 pounds sauerkraut
1 pound kielbasa, cut into 3-inch pieces

Steps:

  • Preheat the oven broiler. Place the roast in a roasting pan, brush with olive oil, sprinkle with thyme leaves, and season with salt and pepper. Place under the broiler for 10 minutes, until lightly browned in several places.
  • Place 2 pounds sauerkraut in a slow cooker. Arrange kielbasa pieces around the edges of the slow cooker pot, and place the roast in the center. Cover with remaining sauerkraut.
  • Cover slow cooker, and cook roast 6 hours on High.

6 slices bacon, coarsley chopped
1 medium onion, chopped
1 (22 -27 ounce) can sauerkraut, drained
2 carrots, thinly sliced
2 teaspoons brown sugar
3/4 cup chicken broth
1/2 cup dry white wine
4 -6 peppercorns
4 -6 juniper berries
2 -3 whole cloves
1 bay leaf, broken up
1 sprig parsley
2 -3 bratwursts
4 small pork chops
4 -8 smoked link sausage
2 potatoes, peeled and cut into bite sized pieces

Steps:

  • In a large skillet or electric frying pan, cook bacon until it just begins to brown. Pour off fat, then add onion. Saute until onion is transparent.
  • Stir in sauerkraut, carrots, brown sugar, chicken broth and wine.
  • Tie up spices and herbs in a small bag of cheesecloth. Bury in the center of the sauerkraut mixture. Cover and simmer 10 minutes.
  • Diagonally score 1 side of each bratwurst. In a separate skillet brown the bratwurst and pork chops.
  • After the sauerkraut mixture has simmered 10 minutes, add potatoes, working them down into the mixture. Top with browned bratwurst and pork chops. Cover and simmer 15 minutes.
  • Add smoked sausages. Simmer, covered another 15 minutes.
  • Remove pouch of seasonings before serving.

3 jars sauerkraut - (2 lbs ea) drained, washed
2 cups water
3 pounds pork spareribs cut into pieces
Salt to taste
Freshly-ground black pepper to taste
Hungarian paprika to taste
1 onion chopped
2 green bell peppers seeded, chopped
2 celery stalks - (to 3) chopped
4 polish sausages cut 1/2" slices

Steps:

  • Place sauerkraut in large pot with water. Cover and simmer over low heat 2 hours. Meanwhile, place spareribs in large baking pan and season with salt, pepper and paprika to taste. Add onion, bell peppers and celery. Cover and bake at 350 degrees in top third of oven until tender, 2 hours. When almost done, add sausages and bake 10 to 15 minutes. Mix in sauerkraut and cook 30 minutes. Serve meat and sauerkraut together. This recipe yields 12 servings. Each serving: 492 calories; 1,590 mg sodium; 122 mg cholesterol; 37 grams fat; 9 grams carbohydrates; 29 grams protein; 1.79 grams fiber.
