ROAST PORK BASTING SAUCE

This sauce was created for a cross rib end roast that we made on the BBQ rotisserie. Poured sauce in drip pan under roast, and basted while cooking. It was sooo delicious.

1 cup applesauce
1/2 cup maple syrup
1 bottle beer (I used Labatt's Blue which is a Pilsener)

Steps:

  • Mix all ingredients.
  • Baste any roast pork or chops with this sauce it's delicious.
  • Heat remaining, add salt and pepper and serve on top of cooked meat.

PORK TENDERLOIN MARINADE/BASTING SAUCE

This is my absolute favorite marinade/sauce for pork tenderloins but it could also be used for pork chops or chicken.

1 cup apricot preserves
1/2 cup Dijon mustard
1/4 cup brown sugar
1/4 cup honey
1/4 cup apple cider vinegar
salt and pepper

Steps:

  • Combine all ingredients in small saucepan over medium low heat.
  • Reserve half of sauce to serve with pork at the table.
  • If using as a marinade, cool remaining half of sauce completely and marinade pork for at least an hour or overnight.
  • If using as basting sauce, bake or grill pork and baste frequently with sauce.

PORK TENDERLOIN IN BOURBON-DIJON GLAZE

This marinade is good! Sweet with a mustardy bite. I use lite ingredients because we're watching calories, but feel free to go whole hog. HA! Can be made in crockpot but my favorite way is to throw on the grill to sear the outside and give a bit of a smoky flavor and then finish it more slowly in the oven. I'd do it all on the grill but my grill only does hot and super hot!

3 lbs pork loin roast (whatever size you have, really)
1/4 cup splenda brown sugar substitute or 1/2 cup brown sugar
1/2 cup Dijon mustard
1/4 cup Bourbon
1/4 cup light soy sauce
1 tablespoon Worcestershire sauce
2 tablespoons Splenda sugar substitute
2 garlic cloves, sliced
1 -2 green onion, chopped
1 tablespoon dried rosemary
2 tablespoons olive oil

Steps:

  • Mix all marinade ingredients in gallon size Ziploc bag.
  • Reserve small amount (in the refrigerator)for basting.
  • Add pork to bag and refrigerate overnight.
  • Preheat oven to 325.
  • Heat oil in large nonstick skillet over high heat until hot.
  • Add meat and sear on all sides.
  • Discard used marinade.
  • Transfer meat to foil-lined, oven-safe dish that has been sprayed with cooking spray.
  • Add enough water to cover bottom of dish with about 1/4 inch of water.
  • Cover with foil and bake until internal temperature reaches 150 degrees(50 min or so depending on size of roast), basting frequently with reserved marinade.
  • Finish cooking uncovered until temperature reaches 160 degrees.
  • Pour any remaining marinade over pork and let rest 10-15 minutes before slicing.

1/4 cup Dijon mustard
2 Tbs. Apple Cider Vinegar

Steps:

  • Combine first 4 ingredients and baste over tenderloins Chill 8 hours. Use vegetable spray and grill to keep from sticking. I cook them in a baking bag in the oven at 350 for 1 hour.

⅓ cup honey
2 tablespoons soy sauce
1 tablespoon brown sugar
2 tablespoons sesame oil
2 tablespoons balsamic vinegar
2 (3/4 pound) pork tenderloins

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • In a bowl, mix the honey, soy sauce, brown sugar, sesame oil, and balsamic vinegar.
  • Place the pork tenderloins in a roasting pan, and roast 15 minutes in the preheated oven.
  • Remove pork from oven, and baste with the honey sauce. Reduce oven temperature to 350 degrees F (175 degrees C), and continue roasting pork 45 minutes, basting occasionally with the honey sauce, to an internal temperature of 145 degrees F (63 degrees C).

EASY GRILLED PORK TENDERLOIN W/DRY RUB & MOP SAUCE



Easy Grilled Pork Tenderloin w/Dry Rub & Mop Sauce image

I was really nervous to grill pork tenderloins for the first time! But found out that they are actually very easy! I was so afraid I'd overcook them and they'd turn out dry, but they were tender, VERY juicy and succulent! We will be having this often throughout the summer! *Remember, pork is DONE when slightly pink in the middle....

FOR DRY RUB:
1/4 c smoked sweet paprika
2 Tbsp dried thyme
2 Tbsp dried crushed rosemary
2 Tbsp garlic powder (not garlic salt)
1/2 tsp coarse ground black pepper
1/2 tsp nutmeg
1/4 tsp cayenne
FOR THE MOP SAUCE:
1 c Heinz ketchup
1/3 c honey
1/4 c apple juice
2 Tbsp cider vinegar
1/2 tsp soy sauce (i use regular for this, not low-sodium)
REST OF INGREDIENTS:
2 pork tenderloins, about 3 lbs. total, 2 1/2 lbs. ok
1/2 c of the dry rub (above)
1 c of the mop sauce (above)

Steps:

  • 1. In small bowl, mix dry rub ingredients and set aside. Cut off any excess fat from the pork and remove any sinew (the tough fibrous tissue). Cover the pork tenderloins on all sides with dry rub and refrigerate overnight or for at least 8 hours. (*I coated them each on 2 separate sheets of plastic wrap and wrapped them tightly, placed them in a 9x11 baking dish and marinated them overnight.) In small bowl, mix mop sauce ingredients. Heat in microwave until hot to melt honey. Stir well, set outside by grill. Pre heat gas grill 5 minutes before cooking. Place pork tenderloins on hot grill (medium-high) with tongs. Close lid and grill the pork for 5 minutes, turn over and grill 5 minutes longer. Turn again and heavily baste with mop sauce, close lid and grill 5 minutes. Turn over, baste again and close lid for 5 more minutes. (*Total cooking time is 20 minutes.) Remove to a baking dish, cover, and let rest 5 minutes. Remove to cutting board and slice to serve.
  • 2. *Leftover rub and mop sauce is also good on chicken, wings, and fish!
