A terrific tasting and simple crock pot recipe that can also be prepared in the oven. There's something about the onions that brings this recipe to life. Be sure to well grease the crock pot to avoid sticky clean up.

1 cup Minute Rice (uncooked)
1 lb boneless pork chop (4 or 5)
2 (10 1/2 ounce) cans cream of mushroom soup
1 (14 ounce) can chicken broth
1 (4 ounce) can mushrooms
1 small onion, sliced
1 teaspoon garlic powder
salt and pepper

Steps:

  • Layer in a well greased crock pot on low for 8 hours, or on high for 4 hours.
  • Also works well in the oven on 375°F for 1-2 hours, covered.

4 pork chops
1 teaspoon ground sage
1/3 cup onion, minced
2 cups apple cider
1 cup white rice
1 apple, peeled and chopped into pieces

Steps:

  • Put rice, cider, sage, and onion in crock pot and stir to blend in sage.
  • Place pork chops on top of the rice mixture.
  • Place chopped apples on top of pork chops.
  • Cook for 4 hours on high.
  • Serve with a green vegtable.

1/2 cup brown rice
2/3 cup converted white rice
1/4 cup butter or 1/4 cup margarine
1/2 cup onion, chopped
1 (4 ounce) can canned mushroom slices (drained)
1/2 teaspoon rubbed sage
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon dried thyme, divided
4 -6 boneless pork chops, 3/4 to 1-inch thick
1 (10 1/2 ounce) can beef consomme
2 tablespoons Worcestershire sauce
3/4 teaspoon paprika
1/4 teaspoon ground nutmeg

Steps:

  • Spray crock pot with non-stick spray.
  • In a skillet, combine rices with butter.
  • Sauté over medium-high heat, stirring occasionally, until rice is golden brown.
  • Remove from heat and stir in onion, mushrooms, sage, salt, pepper, and 1/2 teaspoon thyme. Pour rice mixture into slow cooker.
  • Arrange chops over rice.
  • Combine consommé and Worcestershire sauce and pour over chops.
  • Cover and cook on low 7-9 hours or on high 4-5 hours.
  • Combine remaining thyme with paprika and nutmeg; sprinkle over chops before serving.

Using up the last of my bargain pork chops, I decided something fruity - maybe sweet & sour - would be nice. A trip through the pantry and refrigerator yielded plenty of tasty options. So I chose some complementary ingredients and here is the result - a sweet and sour concoction sure to tickle your taste buds!

1 large onion, diced
2 Tbsp olive oil, drizzled over onion
4 thin-cut, boneless pork chops
2 tsp cornstarch, sprinkled over chops
2 tsp garlic, minced
1/2 tsp ginger powder
1 tsp cinnamon, ground
1/2 tsp paprika
1 tsp rosemary, dried
3 Tbsp soy sauce
1/4 c goldschlager (or other cinnamon liqueur)
1/4 c crown royal whiskey (or similar quality)
1 c beef broth
1 c orange marmalade
3/4 c vinegar
2 Tbsp brown sugar (i used splenda brown sugar)
1 1/2 c white rice, uncooked
salt and pepper, to taste
cooking spray

Steps:

  • 1. Spray crock pot with cooking spray.
  • 2. Place first 13 ingredients in crock pot in order listed. In a small bowl, combine orange marmalade, vinegar and brown sugar until well-blended. Pour over ingredients in crock pot. Cook on high for 3.5 - 4 hours, until pork chops are fork tender and juices run clear. If using a thicker cut chop, increase cooking time by one hour.
  • 3. One half hour before the end of the cooking time, carefully remove the chops from the crock pot. Stir all ingredients to blend and stir in white rice, ensuring it is covered by liquid. Add beef broth or water, if necessary, to cover. Replace chops in crock pot and continue to cook on high for 30 minutes or until rice is tender. Plate chops on top of rice and enjoy!
  • 4. NOTE: For those of you who do not cook with spirits, replace the whiskey and cinnamon liqueur with 1/2 cup beef broth, 2 Tbsp of lemon juice and 1/4 tsp additional ground cinnamon.

I've done this recipe using Pork Steak, Chicken legs and thighs, ground Beef, Italian Sausage, Kielbasa, Bratwurst and I'm sure several other meats I have forgotten. It's good no matter how you make it.

3 tablespoons olive oil
6 pork chops, trimmed of fat
2 white onions, finely chopped
2 stalks celery, finely chopped
1 -2 jalapeno chile, seeded, veined, finely chopped
2 garlic cloves, minced
2 cups basmati rice, uncooked
1 (10 3/4 ounce) can cream of mushroom soup
1 (10 3/4 ounce) can cream of celery soup
5 cups chicken stock

Steps:

  • Brown pork chops in olive oil, remove and set aside.
  • Add rice, onion, celery, and chilies to the pan; sauté (stir-fry) for 2 minutes.
  • Add garlic sauté another 2 minutes.
  • Add 1 cup stock to pan, scrape to deglaze.
  • Pour onion/rice mixture into the crock pot.
  • Add the 2 cans of soup add remaining 4 cups of stock to the crock pot; mix well.
  • Place the pork chops on the onion/rice.
  • Cook on high for 1 hour, then on low for 3 hours.
