PORK CHOPS WITH MUSHROOMS AND A MILD HORSERADISH SAUCE
Excellent pork dish suitable for company. Very easy to prepare and you'll love the sauce. Don't remember where the recipe came from, I've made it many times through the years.

Steps:
- Preheat oven to 375 degrees.
- Remove any extra fat from chops and season with salt and pepper.
- Dredge chops in flour, covering both sides.
- Dip floured chops first into beaten eggs and then into the breadcrumbs.
- Place oil in ovenproof skillet over medium heat. When oil is hot,add chops and cook for 2 minutes on each side. Then place skillet in preheated oven for 10 minutes. Do not cover.
- Remove chops from skllet and keep warm.
- Add butter to skillet( do not clean out skillet first) and place on medium hot burner on stovetop. Add mushrooms and saute for 2 minutes.
- Add the flour and the horseradish and mix well.
- Add the chicken stock and cook for 2-3 minutes.
- Season to taste and serve with tomato wedges for garnish.

- * Pork Chops should be about 1/2-inch thick. Prepare Radish and Cilantro Relish and set aside.
- RADISH AND CILANTRO RELISH: Mix all ingredients in a glass or plastic bowl.
- Cover and refrigerate at least 1 hour.
- Heat oil in a 10-inch skillet until hot. Cook pork chops in oil over medium heat until brown; sprinkle with salt and pepper.
- Remove pork from the skillet.
- Cook and stir relish and tomatoes in the same skillet for 5 minutes.
- Add pork chops and heat to boiling; then reduce the heat.
- Cover and simmer until pork is done, about 45 minutes.
- Garnish with the snipped fresh cilantro if desired.

CRISPY PORK CHOPS WITH BUTTERED RADISHES RECIPE

- Step 1 Season pork with salt and pepper. Place panko in a rimmed baking sheet or baking dish and season it with salt and pepper. Working one at a time, firmly press both sides of each pork chop into the seasoned panko until the chops are evenly and well coated. Step 2 Heat oil in a large skillet (10 to 12 inches) over medium-high heat; it should evenly coat the bottom of the skillet. If it doesn't, add a bit more oil. Place the pork chops in the skillet and cook until deeply golden brown, like the color of a well-baked croissant, 3 to 4 minutes. Step 3 Using tongs or a spatula, flip pork and continue to cook until well browned on the other side, too, another 2 to 3 minutes. Transfer pork to a plate, platter or cutting board lined with paper towel and season with salt. Step 4 Wipe out skillet and return to the stove over medium-high heat. Add butter, letting it sizzle, brown and foam. Add capers and half of the radishes, seasoning them with salt and pepper. Toss a few times, just to wilt the radish greens, if they're still on, and to evenly coat the radishes with the brown butter and capers. Step 5 Divide pork chops among plates and nestle butter-tossed radishes and capers alongside, plus remaining raw radishes. Sprinkle with a bit of flaky salt and serve with lemon wedges alongside for squeezing over.

- Combine maple syrup, horseradish, mustard and chile powder.
- Pour over pork chops in bowl, or resealable bag to marinate for 1 hour.
- May be refrigerated, covered, for 1 day; use at room temperature.
- Preheat a gas or charcoal grill to medium high.
- Reserve 3/4 cups of glaze.
- Brush the chops on both sides with olive oil and season with salt and pepper.
- Grill for 3 to 4 minutes, brush with remaining glaze, and turn over.
- Grill for another 3 to 4 minutes, brush, and turn again, for medium-well doneness.
- Arrange chops on a serving platter and brush with the reserved 3/4 cup of glaze.

- Pat chops dry and season with 1 teaspoon salt and 1/2 teaspoon pepper.

- Season chops well with the salt and pepper, spread on the mustard or a paste of horseradish and vinegar. Let stand for several hours in the fridge.

PORK CHOPS WITH CRANBERRY HORSERADISH SAUCE
I don't usually like to use recipes that you have to buy specific brand ingredients, but I had the Cranberry Horseradish Sauce on hand, and I created this recipe with it. If you don't want to buy the Stonewall Kitchen, I'm sure you can combine whole cranberry sauce and 2-3T of horseradish (to taste). Because RZ does not find this ingredient, it is not included in the calories - it is about an additonal 50 calories a serving (although more for the whole dish, you are probably only eating about 1 T of the sauce).

- Combine the cranberry horseradish sauce, chili sauce, sugar mustard, garlic powder and onion powder. Set aside.
- Put the flour, salt, and pepper in a bag.
- Heat a large covered skillet, add the oil.
- Shake pork cutlets in the bag with flour, one at a time, and add to the skillet.
- Brown pork on both sides, 2-3 minutes. (I barely had enough room for the 2lbs of pork cutlets - there were about 8 of them - in my 14" skillet, so you may need to do this in batches.).
- Add the sauce from step one and coat the pork with it. Cover and cook on med-low for 10 minutes.
- I served with white rice and carrots.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
