CRUNCHY PORK CHOPS WITH TANGY DIPPING SAUCE



Crunchy Pork Chops with Tangy Dipping Sauce image

¼ cup ketchup
1 tablespoon Worcestershire sauce
1 teaspoon soy sauce
1 large egg
¼ cup flour
1 cup panko breadcrumbs
4 (½-inch-thick) boneless center-cut pork chops (1 pound)
Salt and pepper
Canola oil, for frying

Steps:

  • 1. In a small bowl, whisk the ketchup, Worcestershire sauce, and soy sauce and reserve.
  • 2. In a shallow dish, beat the egg. Place the flour and crumbs in two separate shallow bowls. Sprinkle the pork with salt and pepper. Working with one piece at a time, dredge the pork in the flour to coat and shake off excess. Dip in the egg and let excess drip off. Finally, dredge in the panko until well coated. Transfer to a large clean plate. Repeat with the remaining ingredients.
  • 3. Fill a large, heavy skillet with oil to a depth of ¼ inch. Heat over medium heat until hot but not smoking. Add two pork chops; do not crowd the pan. Cook until golden brown on the bottom, about 3 minutes, then carefully turn the pieces over. Cook until golden brown and cooked through, about 3 minutes, then transfer to paper towels to drain. Repeat with the remaining pork, adding and heating more oil if necessary. Serve the pork with the dipping sauce.
  • 4. Once the stovetop is cool, wipe up any oil splatters or meat juices that may have spilled on the counter with Clorox® Disinfecting Wipes*. Rinse hands once complete.
  • *Use as directed. For surfaces that may come in contact with food, a potable water rinse is required.

4 Pork Chops 1/2" thick (with or without the bone)
1 cup all-purpose flour
3 large eggs
1/4 cup Parmesan cheese
1 cup Italian breadcrumbs
1 tsp garlic powder
1/2 tsp ground black pepper
Olive oil

Steps:

  • Preheat oven to 350 degrees. Rinse pork chops, pat dry and tenderize with meat tenderizing mallet. Beat the eggs in a shallow dish and add the Parmesan cheese, black pepper and garlic powder. Place the flour in a second shallow dish and the bread crumbs in a third shallow dish. Coat the pork chops with flour, dip them in the egg, and dredge them in the bread crumbs. They can be dipped once or twice. Set them aside in a dish. Coat a pan on the stove with olive oil and fry on medium low until golden brown on both sides. Place the pork chops in a 9 x 13 pyrex dish in a single layer and bake them in the oven for 20 minutes depending on the thickness of the pork chops.

My wife, Ali, and I always stop at Mustards Grill in Napa during our trips to wine country and eat this dish ritualistically. It really is the best pork chop I've ever eaten. I needed to crack the code and figure out the recipe. Here's my version of Cindy Pawlcyn's dish and I hope you love it as much as I do.

Four 6-ounce pork chops, preferably bone-in
2 cups hoisin sauce
2 tablespoons soy sauce
2 tablespoons rice vinegar
2 tablespoons black bean sauce
2 teaspoons hot sauce
1/4 cup fresh cilantro, minced
1 tablespoon grated peeled fresh ginger
2 cloves garlic, minced
1 teaspoon sesame oil
Pinch each of kosher salt and freshly ground black pepper
Neutral oilor nonstick cooking spray, for greasing
1/2 cup sour cream
1/4 cup Dijon mustard
2 tablespoons red wine vinegar
2 tablespoons sugar

Steps:

  • For the pork and marinade: Place the pork chops in a 1- gallon resealable plastic bag. Combine the remaining marinade ingredients (except for the neutral oil) in a mini food processor and process until incorporated, or whisk together in a medium bowl. This will be your marinade and glaze.
  • Coat the pork chops liberally with the marinade and marinate for 3 hours and up to overnight in the refrigerator.
  • Prepare a grill by heating one side to high and the other to low. Alternatively, heat a large grill pan over 2 burners -- one on high heat and the other turned off. Clean and grease the grates.
  • Remove the chops from the bag and reserve the marinade for basting. Blot the chops with paper towels, then grill, undisturbed, until you have a great grill mark on each chop, 4 to 6 minutes. Baste with the reserved marinade then rotate a quarter turn and grill until you have a nice crosshatch mark, another 4 to 6 minutes. Flip over and repeat the grilling, basting and turning.
  • Start to take an internal temperature after both sides are grilled and basted. If you don't hit 165 degrees F, move the pork chop to the cooler side and cover to create a convection oven. The pork is ready when it registers 165 degrees F on an instant-read thermometer. Remove from the heat and let rest for 5 minutes.
  • Meanwhile, make the mustard sauce: Stir together all of the ingredients in a small bowl. Add 1 to 2 tablespoons water, if needed, to thin the sauce.
  • Drizzle the mustard sauce over the pork chops or serve on the side for dipping.

I raided the pantry for something to make quick and easy...and I came up with this. It has sour cream and onion soup mix which is why I call it onion dip pork chops. It was a huge hit.

1 tablespoon vegetable oil
4 boneless pork chops
1 teaspoon garlic powder
1 tablespoon onion soup
1 (10 ounce) can cream of mushroom soup
1 cup sour cream
1 lb cooked pasta (I prefer rotini or fettucini)

Steps:

  • Cook pasta to directions on box.
  • Brown Pork Chops on both sides in oil.
  • Add garlic powder, onion soup, soup, sour cream.
  • Add a little water if necessary if the sauce is too thick.
  • Cook until pork chops cooked through.
  • Place on top of pasta.
  • I serve with steamed broccoli as well.
