PORCUPINE MEATBALLS W/ RICE-A-RONI
This recipe is from my favorite aunt. It's a big hit in her family, and great comfort food. And it's so easy that her bachelor sons can make it themselves. (of course, they'd rather have mom make it!!)

Steps:
- Mix ground beef with egg and rice-a-roni, reserving seasoning packet.
- Shape into balls.
- Brown in frying pan, on all sides.
- Drain grease.
- Sprinkle seasoning packet on top.
- Mix brown gravy mix and pour on top.
- Cover and simmer for 15 minutes.
- Serve over mashed potatoes.

An easy and tasty dish that both children and adults can enjoy. This recipe came from Better Homes & Garden's "Step-by-Step Kids' Cookbook". Don't start stirring too early or meatballs will break apart.

Steps:
- In medium bowl, beat egg.
- Add 1/4 cup tomato soup, uncooked rice, parsley flakes, dried onion, salt and pepper.
- Mix well.
- Add ground beef and using your hands, mix well again.
- Shape into 1-inch meatballs.
- This should make about 20 meatballs.
- Place meatballs in a 12-inch skillet.
- Mix remaining soup with the water.
- Add Worcestershire sauce and mix.
- Pour soup mixture over the meatballs.
- Cook without stirring until mixture starts to boil.
- Turn heat to low.
- Cover and cook for 40 minutes, stirring occasionally.
- Using a wooden spoon, carefully stir the meatballs so they don't stick to the skillet.

- 1. Mix first seven ingredients and roll into 1 1/2 inch balls. should yield about 24-28 meatballs. Set aside
- 2. Mix tomato sauce, soup and water in large bowl. Add Worcestershire sauce, spices ( as desired) and brown sugar.
- 3. Spray a 9 x 13 dish with vegetable spray ad pour 2 cups minute rice in bottom. Pour half of sauce over rice. Top with meatballs and pour remaining sauce over top. Seal with foil and bake at 350 for approx 45 mins. Remove foil and allow to bake until rice is cooked and meatballs are brown. Do not worry about too much liquid! It cooks in nicely. In fact if desired you can two 14 oz cans of tomato sauce in place of the one soup and same amount of water. It is a bit more moist. Quite interchangeable. I have also used all tomato soup. My family prefers it with a combination.
BROWN RICE PORCUPINE MEATBALLS
Steps:
- 1. Soak brown rice in water overnight. 2. Drain rice & combine w/ ground beef & all other ingredients except tomato juice in a large bowl. 3. Preheat oven to 350 degrees F 4. Form ground beef mixture into 24 meatballs 5. Arrange meatballs in oven-proof baking dish 6. Pour tomato juice over meatballs & bake for 90 minutes or until knife inserted into the center of a meatball comes out clean.
