8 cups popped popcorn ((about 1 microwaveable bag, or 1/4 cup kernels))
6 Tablespoons butter
1 1/2 cups light brown sugar
6 Tablespoons light karo syrup
1/4 teaspoon salt
1/4 teaspoon baking soda ((heaping))
3/4 teaspoon vanilla extract

Steps:

  • Preheat the oven to 200 degrees F.
  • Line a jelly roll pan with parchment paper. Add popcorn to a large pan, spread out in an even layer.
  • Melt butter in a large non-stick skillet over medium heat. Once melted, stir in brown sugar, corn syrup, and salt until smooth.
  • Bring to a boil over medium heat, stirring occasionally. As soon as the caramel starts to gently boil, boil for 2 minutes, stirring constantly.
  • Remove from the heat and stir in baking soda and vanilla.
  • Immediately drizzle caramel over popcorn. Toss gently with a spatula until the popcorn is evenly coated.
  • Bake at 200 degrees F for 45 minutes, stirring the popcorn every 15 minutes.

This recipe comes from an Amish family who package this treat for gifts to friends and neighbors every Christmas. It is truly the tastiest, easiest, and most foolproof caramel corn recipe you'll ever find!

7 quarts plain popped popcorn
2 cups dry roasted peanuts
2 cups brown sugar
½ cup light corn syrup
1 teaspoon salt
1 cup margarine
½ teaspoon baking soda
1 teaspoon vanilla extract

Steps:

  • Place the popped popcorn into two shallow greased baking pans. You may use roasting pans, jelly roll pans, or disposable roasting pans. Add the peanuts to the popped corn if using. Set aside.
  • Preheat the oven to 250 degrees F (120 degrees C). Combine the brown sugar, corn syrup, margarine and salt in a saucepan. Bring to a boil over medium heat, stirring enough to blend. Once the mixture begins to boil, boil for 5 minutes while stirring constantly.
  • Remove from the heat, and stir in the baking soda and vanilla. The mixture will be light and foamy. Immediately pour over the popcorn in the pans, and stir to coat. Don't worry too much at this point about getting all of the corn coated.
  • Bake for 1 hour, removing the pans, and giving them each a good stir every 15 minutes. Line the counter top with waxed paper. Dump the corn out onto the waxed paper and separate the pieces. Allow to cool completely, then store in airtight containers or resealable bags.

OLD DUTCH POPCORN TWISTS

I found this recipe on an Old Dutch bag of popcorn twists. I enjoy them as they are, but this is a nice change. Enjoy!

Number Of Ingredients 5

1 (175 g) bag popcorn, twists (like Old Dutch)
1/2 lb butter (not margarine)
1 cup brown sugar
1/2 cup light corn syrup
1 teaspoon baking soda

Steps:

  • Pour the popcorn twists into a large roaster pan.
  • In a 2 quart saucepan, cook tog butter, brown sugar and corn syrup for about 2 minutes. Add the baking soda, which will foam, so this is the reason for the larger saucepan. Allow the foam to cook down slightly, then pour over the popcorn twists, stirring well.
  • Place into a 250 degF oven for 45 minutes, stirring every 10-15 minutes. Remove from oven and pour onto wax paper, allowing to cool slightly, then break apart.

This is the most unique caramel corn I have ever had. The use of Puff corn rather than pop corn makes it light and the lack of kernels is a real plus. WARNING: This stuff is addictive :) Our family joke is this stuff is Christmas "Crack" because it's so addictive.

1 c brown sugar
1/2 c butter
1/4 c light corn syrup
1/2 tsp salt
15 c puffed corn (not popcorn)
1/2 tsp baking soda

Steps:

  • 1. Place puff corn in a deep roasting pan lightly sprayed with Canola oil (or PAM), set aside. Pre-heat oven to 200 F.
  • 2. In a deep heavy sauce pan, melt butter, corn syrup, brown sugar and salt. Bring to a rolling boil and stabilize heat to sustain boil for 5 more minutes, stirring constantly. Remove from heat and add baking soda, mixing well.
  • 3. Immediately pour over the corn, mixing well to coat evenly. Place the roasting pan in the pre-heated oven on top rack for one hour, stirring every 15 minutes. Remove from oven, let cool slightly, then break apart by hand. Store air tight. Enjoy and share!

1 cup brown sugar
½ cup Karo® Light OR Dark Corn Syrup
½ cup butter OR margarine

½ teaspoon baking soda
1 teaspoon Spice Islands® Pure Vanilla Extract

Steps:

  • Spray large shallow roasting pan with cooking spray. Add popcorn and place in preheated 250 degrees F oven while preparing caramel.
  • Mix brown sugar, corn syrup, butter and salt in a heavy 2-quart saucepan. Stirring constantly, bring to a boil over medium heat.
  • Boil 5 minutes without stirring. Remove from heat. Stir in baking soda and vanilla; mix well.
  • Pour syrup over warm popcorn, stirring to coat evenly.
  • Bake for 45 minutes, stirring occasionally. Remove from oven and spread on foil that has been sprayed with cooking spray.
  • Cool; break apart. Store in tightly covered container.

½ cup corn syrup
1 teaspoon salt
½ teaspoon baking soda

Steps:

  • Preheat oven to 250 degrees F (95 degrees C). Place popcorn in a very large bowl.
  • In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour in a thin stream over popcorn, stirring to coat.
