This recipe if from the l930's. My Grandmother gave it to my Mother and she gave it to me. Now I am a grandmother and passed it down to my kids. It's really good. You don't have to dirty your mixer for this one, just a big bowl.

1 cup packed brown sugar
2 cups raisins
2 cups water
¾ cup shortening
2 teaspoons baking soda
1 teaspoon salt
4 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground cloves
3 cups all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C) grease and flour a 9x13 inch pan.
  • In a saucepan mix brown sugar, raisins, water and shortening. Bring to a boil and boil 3 minutes. Remove from heat and let cool.
  • In a large bowl, combine flour, baking soda, salt, cinnamon, nutmeg and cloves. When raisin mixture is cool, add to dry ingredients and mix well to combine.
  • Bake at 350 degrees F (175 degrees C) for 30 or 40 minutes. Do not over bake or it will be too dry. Test after 30 minutes. A toothpick inserted into the center of cake should come out clean.

1 1/2 cups sugar
1/4 cup unsalted butter
2 large eggs
1 cup milk
3 cups all-purpose flour
1 teaspoon baking powder
1 lemon rind, grated
confectioners' sugar (optional)

Steps:

  • Place the sugar and the butter together in a food processor with the steel blade and process until creamed.
  • Add the eggs and the milk, pulsing after each addition. Then add the flour, baking powder, and the lemon rind, pulsing until a smooth mass is formed.
  • Place the dough in a greased and floured 9- by 9-inch square baking pan. Pat down and bake in a preheated 350°F oven for 30 minutes. When cool enough to handle, turn out on a rack.
  • Sprinkle with confectioners' sugar, slice, and serve.

1 cup sugar
1 cup cold black coffee
1/2 cup shortening
1 pinch salt
1 teaspoon baking soda
1 teaspoon baking powder
2 cups flour
1 teaspoon brandy extract (your choice) or 1 teaspoon cherry extract (your choice)
cranberries or diced apple

Steps:

  • Bring to a boil the fruit, nuts, extract, salt, sugar, shortening and coffee.
  • Continue to cook until raisins swell and liquid becomes syrupy; cool completely.
  • Stir together the flour, baking soda and baking powder.
  • Add to fruit mixture and combine thoroughly.
  • Pour into a greased 10-inch tube pan and bake at 325° about an hour (if heavy with fruit). Check with tester to be sure cake is done.
  • Remove from pan and cool completely on wire rack.
  • At this point I soak a clean piece of cheesecloth in liquor; brandy, rum, even wine.
  • Wrap the cake with the cloth and in foil--store in COLD place--check often, resoak as needed.
  • There are no exact measurements for the fruit in this recipe--the original recipe stated "fruits, nuts & peels-whatever you have on hand".
  • This was done because it was wartime and things for fancy baking were not always available.

This cake is something my Grandma made during the depression. I always thought it sounded odd, but it is actually pretty good. My Dad said that as kids (he was one of 9) it was one thing that was always a treat.

1 c brown sugar
1 c raisins
1 tsp cinnamon
1/2 tsp allspice
1/4 tsp cloves, ground
1/3 c shortening (crisco)
1 c water
2 c flour
1 tsp baking soda
1 tsp salt

Steps:

  • 1. In a large sauce pan boil 1 cup water, add first 6 ingredients, boil together until luke warm, stir. Remove from burner
  • 2. In large mixing bowl add all dry ingredients, mix together with fork. Sift into the sauce pan. Mix well.
  • 3. Grease or spray a 9x9 baking dish. Pour mixture in dish, and spread evenly.
  • 4. Bake at 350 for 30-35 minutes. Watch it towards end so it doesn't get too dark. Enjoy! (You might be able to make this gluten free by using a gluten free flour, haven't tried it, but it might work.)

1 cup sugar
2 cups raisins
1 cup lard (original recipe calls for lard, don't know if shortening will work)
1/4 teaspoon allspice
1/4 teaspoon clove
1 pinch salt
1 teaspoon cinnamon (or to taste)

Steps:

  • Boil together all ingredients.
  • Add water just enough water to cover raisins.
  • Boil until raisins are tender.
  • Cool.
  • Add 1 t baking soda and enough Unbleached flour to make a stiff batter.
  • Pour batter into 9-inch round cake pan.
  • Bake in moderate oven until cake springs back when touched lightly (about 1 hour at 350 degrees F).
  • Serve warm or cold with cream, custard sauce or powdered sugar frosting.
  • Walnuts may be added to batter just before baking.
