6 -8 large potatoes (russet)
1/2 lb bacon
8 hard-boiled eggs

Steps:

  • Preheat the oven to 350°F Peel and slice the potatoes about 1/2 inch thick, then cook in salted water just until tender (do not overcook). Drain and run under cold water to stop the cooking.
  • Cut half a pound of your favorite bacon cut into 2 inch pieces setting aside about 3 uncooked slices for top. In a frying pan, cook the balance of the bacon pieces until it just starts to crisp.
  • Slice the boiled eggs width wise about 1/4 inch thick.
  • Using a deep casserole dish, layer 1/3 of the potatoes, 1/3 of the egg slices, and 1/2 of the cooked bacon. Repeat the layer. For the final layer, add the remaining potatoes, eggs and the raw pieces of bacon on top. I like to pour the bacon fat remaining in the frying pan over the whole dish.
  • Bake uncovered in the oven for approximately 35 minutes, or until the bacon on the top is crisp. Enjoy.

4 cups frozen shredded hash brown potatoes
1/2 cup finely chopped onion
8 ounces turkey bacon or 8 ounces bacon, cooked and chopped
1 cup shredded cheddar cheese
1 (12 ounce) can nestle carnation evaporated low-fat milk
1 large eggs, lightly beaten or 1/4 cup egg substitute
1 1/2 teaspoons season salt

Steps:

  • Pre heat oven to 350.
  • Grease 8 inch square dish.
  • Layer 1/2 potatoes,1/2 onion,1/2 bacon and 1/2 cheese in prepared dish;repeat layers.
  • Combine evaporated milk, egg and season salt in small bowl.
  • Pour evenly over potato mixture; cover.
  • Bake for 55-60 min.
  • Uncover and bake for an additional 5 min.
  • Let stand for 10-15 min before serving.

This is a recipe that my mom made when we were growing up! It really is one of my families favorite quick meals! It is called Poor Man's Casserole because almost everyone should have the ingredients in their kitchen! This is a very versatile dish because you can add as little or as much of the ingredients to suit your family.

1 lb hamburger meat
1 small onion, chopped
1 garlic clove
salt and pepper, to taste
1 (8 ounce) can tomato sauce
1 1/2 cups cooked rice
1 (4 ounce) can corn
1 1/2 cups cheddar cheese

Steps:

  • Brown the hamburger meat with the onion, garlic, salt and pepper.
  • Drain the fat.
  • Then add the rice, corn, and tomato sauce and mix together.
  • Top with the cheese.
  • If you have a cast-iron pan put the casserole in the oven for about 5 minutes to melt the cheese. If you do not have a cast-iron pan, just cover the casserole until the cheese melts.

7 large russet potatoes
9 eggs
12 slices American cheese
4 ounces sliced turkey
1 (24 ounce) container sour cream
1 (6 ounce) can French's French fried onions (optional)

Steps:

  • Boil potatoes with the skin on.
  • Boil eggs until hard boiled.
  • Drain and remove potatoes when soft through the center. Remove skin and let cool.
  • Drain and remove eggs when hard boiled. let cool and remove shell.
  • Cut potatoes into 1/2" slices.
  • Cut eggs into 1/4" slices.
  • Cut lunchmeat into 1-2" strips.
  • In a large casserole dish, put a layer of potatoes at the bottom. Use a spatula to add a layer of sour cream on top of the potatoes and fill in the cracks between the potatoes.
  • Add a layer of eggs, then lunchmeat, followed by a layer of American cheese.
  • Repeat as needed until the casserole is full and the top layer is cheese.
  • If using French's Fried Onions, make the top layer sour cream and add the onions on top of the sour cream.
  • Preheat oven to 325 degrees and heat casserole for 15-20 minutes.
  • Remove from heat and let cool for 15 minutes. Serve and enjoy!

As time goes by, I'll edit the recipe to correct some of the errors that are almost certainly here. Feel free to post your own thoughts and concerning and personal modifications to this very basic recipe.

1/4 cup vegetable oil
7 -8 potatoes, grated and squeezed of excess liquid
12 eggs
1/4 cup milk
1/4 teaspoon salt
1/8 teaspoon pepper
16 ounces colby-monterey jack cheese (tasty possibilities) or 16 ounces mozzarella cheese (tasty possibilities)
sliced black olives (optional)
bacon (crumbled) (optional)
diced ham (optional)
sliced smoked sausage (optional)
bulk pork sausage (optional)
bell pepper (optional)
sliced mushrooms (optional)
white onions, optional (optional) or red onion (optional)

Steps:

  • Heat the vegetable oil in a large skillet at medium-high heat.
  • Add the potatoes and use your spatula to make sure the potatoes are fairly evenly coated with oil.
  • Lightly grease a 13 X 9 baking pan.
  • Let the potatoes cook about 5-7 minutes. Check the bottom. If the bottom of the potatoes is brown, turn the potatoes. Leave the potatoes to cook another 5-7 minutes, and then recheck them. Make sure you keep the turning to a minimum.
  • Beat the 12 eggs in a large bowl. Add the milk, salt, and pepper and beat together.
  • When the potatoes have been thoroughly cooked, remove them from the pan and arrange them evenly on the bottom of the 13 X 9 baking pan.
  • Pour the egg mixture over the top.
  • Add any of the optional ingredients.
  • Cover with the cheese.
  • Bake at 350 degrees F for 40 minutes or until a knife inserted in the center comes out clean.

My husband's Great Grandma made this for him and his sibilings when they came to visit. Only five ingredients, simple and easy to make. Ground beef, corn, cream style corn, peas, and mac & cheese. A real kid pleaser and one of my husband's favorites. I couldn't find anything else like it on the Zaar.

2 lbs ground beef
2 (14 ounce) cans cream-style corn
1 (14 ounce) can whole corn
1 (15 ounce) can peas
2 (7 1/4 ounce) Kraft macaroni and cheese

Steps:

  • Brown ground beef and set aside and keep warm. Or brown while cooking mac & cheese.
  • Cook macaroni & cheese (I prefer Kraft brand)according to directions on box.
  • Add ground beef, cream style corn, drained whole corn, and drained peas to macaroni and cheese. And you're done!
  • If it's to dry for your taste just add some more milk.
  • Frozen corn and peas can be used if you prefer.
